Some craft beers are so distinct that the food that they can pair with is very limited.
The opposite is true of Matilda, our Belgian-style Pale Ale. Named after the historic
noblewoman Matilda of Verona, this spicy and earthy beer pairs as well with
shellfish as it does earthy sausages and even works with pickles.

CZECH OR GERMAN?

The style of beer known as Pilsner originated


in the town of Pilzen in what is now the Czech
Republic and was influenced by pioneering
German lagering methods, new English methods
of producing pale malt, Pilzens wonderful soft
water source and local Saaz noble hops. Our
Four Star Pils uses German andAmerican hops
to give our version aunique Goose Island spin.

THE BITE IN BEER

In addition to adding aromatics and dryness, hops are the ingredient in beer that
provides the bitterness. They are the female flowering cones of the hop plant and
look like delicate, tiny green pine cones. Goose Island uses hops from Elk Mountain
Farms, our hop farm in Idaho, just minutes from the Canadian border.

BEER VS. WINE

Beer is actually more food friendly than wine.


Winemakers only have one ingredient to play
with: grapes. Two, if you count wood barrelaging.
Beermakers, on the other hand, can experiment
with barley (which adds sweetness), hops (which
provide bitterness), yeast (which lend that
characteristic bready flavor), as well as spices,
nuts, chocolate and fruits.

THE SPICE OF LIFE

When we think of beer pairings we not only


consider how the beer will harmonize with
the food but how will the food effect the flavors
in the beer. Is the beer providing spicy notes
that enhance the dish? Does the side dish have
intense flavors that effect the pairing? One
must consider all of the elements of the meal.

Thanks to a hearty mixture of hops,


barley and other grains, beer isnt only
naturally probiotic (like any fermented
