Cheese Potato Rosti

Time: 35 minutes
Serves: 4-6

Ingredients:
4 large potatoes, grated
1 cup grated Swiss cheese
Salt and pepper to taste
1 egg
½ cup vegetable oil for frying

Directions:
1. In a bowl, mix the grated potatoes with the cheese and egg then add salt and pepper to
taste.
2. Heat the oil in a skillet then drop spoonfuls of the potato mixture in the hot oil.
3. Fry the rosti on both sides until golden brown, not more than 2-3 minutes, and serve
them warm.
Marinated Feta Cheese

Time: 20 minutes
Serves: 4-6

Ingredients:
8 oz. feta cheese, cubed
4 sprigs fresh thyme
1 sprig rosemary
1 bay leaf
1 ½ cups extra olive oil

Directions:
1. Place the cheese, thyme, rosemary and bay leaf in a jar.
2. Pour the oil in the jar and seal with a lid.
3. Marinate the cheese at least 2 days before serving.
Restaurant Style Mac and Cheese

Time: 35 minutes
Serves: 4-6

Ingredients:
2 cups macaroni
8 oz. grated Cheddar
½ cup grated mozzarella
¼ cup heavy cream
1 pinch black pepper

Directions:
1. Pour a few cups of water in a large pot and bring it to a boil with a pinch of salt.
2. Add the pasta and cook until al dente, not more than 10 minutes.
3. In the meantime, bring the heavy cream to the boiling point in a saucepan then stir in
the cheese.
4. Mix until melted then add a pinch of black pepper.
5. Drain the pasta well and mix it with the cheese.
6. Serve the pasta immediately.
Italian Grilled Cheese Sandwiches

Time: 25 minutes
Serves: 4

Ingredients:
8 slices Italian bread
2 tablespoons butter, softened
1 teaspoon dried oregano
4 slices mozzarella cheese
4 slices prosciutto

Directions:
1. Spread the butter on each slice of bread.
2. Sprinkle with oregano then place the mozzarella slices and prosciutto between 2 slices
of bread.
3. Place the sandwiches in a sandwich maker and cook until golden brown.
4. Serve immediately.
Cheese and Bacon Potato Fritters

Time: 35 minutes
Serves: 4-6

Ingredients:
4 potatoes, peeled and grated
6 slices bacon, chopped
½ cup grated Cheddar
1 pinch chili powder
1 green onion, chopped
¼ cup vegetable oil

Directions:
1. Combine the potatoes, bacon, cheese, chili powder and green onion in a bowl. Add the
egg and mix well.
2. Heat the oil in a skillet then drop spoonfuls of the mixture into the hot oil.
3. Fry on one side until golden brown then flip over and finish frying on the other side just
until golden brown.
4. Serve the fritters warm.
Broccoli and Cheese Casserole

Time: 45 minutes
Serves: 4-6

Ingredients:
1 head broccoli, cut into florets
1 head cauliflower, but into florets
2 tablespoons butter
1 cup grated Cheddar
1 cup shredded mozzarella
1 pinch nutmeg
1 pinch black pepper

Directions:
1. Place the broccoli and cauliflower in a steamer for 10 minutes.
2. Remove from the steamer into a deep baking pan and top with butter pieces, cheese,
nutmeg and a sprinkle of black pepper.
3. Bake in the preheated oven at 350F for 30 minutes.
4. Serve the casserole warm.
Sausage Soup with Cheese Topping

Time: 50 minutes
Serves: 6-8

Ingredients:
1/2 pound spicy sausages, cubed
1 large carrot, grated
1 onion, chopped
1 can white beans, drained
1 can diced tomatoes
2 tablespoons chopped cilantro
1 cup grated Cheddar cheese
4 cups water
Salt and pepper to taste

Directions:
1. Heat a soup pot over medium flame and add the sausages. Sauté for 5 minutes then add
the onion and carrot.
2. Sauté for 5 more minutes then stir in the beans and tomatoes.
3. Add the water then season with salt and pepper.
4. Cook the soup for 30-40 minutes.
5. When done, remove from heat and stir in the cilantro.
6. To serve, pour the soup in bowls and top with grated cheese.
Cheese Fondue

Time: 30 minutes
Serves: 2-4

Ingredients:
1 cup dry white wine
1 cup grated Swiss cheese
1 cup shredded Gruyere
1 tablespoon all-purpose flour
1 pinch salt
1 pinch nutmeg
1 French loaf, finely sliced then toasted

Directions:
1. Bring the wine to a boil in a heavy saucepan.
2. Stir in the cheese and mix until melted then add the flour, salt and nutmeg and cook a
few more minutes on low heat.
3. Serve the fondue warm with toasted bread.
Crispy Cheese Twists

Time: 40 minutes
Serves: 6-8

Ingredients:
2 sheets frozen puff pastry
½ cup grated Parmesan
½ cup grated Cheddar
¼ teaspoon garlic powder
1 egg, beaten

Directions:
1. Roll one sheet of puff pastry dough on your working surface and sprinkle it with cheese
and garlic powder.
2. Cover with the second sheet of dough and press gently to seal the cheese between the
two sheets.
3. Cut thin strips with a sharp knife then grab both ends of each strip with your fingers and
twist the ends to opposite directions to create a twist of dough.
4. Place the twisted strips on a baking tray and brush with egg.
5. Bake in the preheated oven at 400F for 10 minutes then lower the heat to 350F for 5
more minutes.
6. Serve the twists chilled.
Olive Cheese Melts

Time: 30 minutes
Serves: 6

Ingredients:
6 English muffins, cut in half lengthwise
½ cup black olives, chopped
1 green onion, chopped
1 cup grated Cheddar
¼ teaspoon curry powder
1 pinch nutmeg

Directions:
1. In a bowl, mix the olives, green onion, Cheddar, curry powder and nutmeg.
2. Fill each muffin with the cheese mixture and place them all on a baking tray.
3. Bake in the preheated oven at 350F for 15-20 minutes.
4. Serve immediately.
Feta Cheese Hand Pies

Time: 45 minutes
Serves: 4-6

Ingredients:
8 oz. feta cheese
1 green onion, chopped
1 tablespoon chopped dill
1 egg
2 sheets puff pastry
1 egg, beaten

Directions:
1. In a bowl, crumble the feta cheese and stir in the green onion, egg and dill.
2. Roll the puff pastry on your working place and cut rounds with a cookie cutter.
3. Place 1-2 tablespoons of filling on each circle then fold the dough and seal the edges
well.
4. Place the pies on a baking tray and brush them with egg wash. Bake in the preheated
oven at 375F for 20-25 minutes until well risen and golden brown.
5. Let them cool down before serving.
Bacon and Cheese Quiche

Time: 50 minutes
Serves: 6-8

Ingredients:
1 9-inch pie crust
4 bacon slices, chopped
1 shallot, chopped
6 eggs
1 cup heavy cream
½ cup grated Parmesan
1 cup shredded Swiss cheese
1 pinch nutmeg
Salt and pepper to taste

Directions:
1. Heat a skillet over medium flame and stir in the bacon. Sauté for 2 minutes then add the
shallot and cook for 5 minutes.
2. Remove from heat and let it cool down then stir in the eggs, heavy cream and cheese.
3. Season with salt and pepper and pour the mixture into the crust.
4. Bake in the preheated oven at 350F for 40 minutes until golden brown.
5. Remove from heat and let it cool down before slicing and serving.
Cheese Crispies

Time: 30 minutes

Ingredients:
1 pound grated Cheddar
1 cup butter, melted
1 cup all-purpose flour
2 cups crispy rice cereal
1 pinch salt
1 pinch black pepper
¼ teaspoon garlic powder
1 pinch cayenne pepper

Directions:
1. In a bowl, combine all the ingredients and mix well.
2. Form small balls of dough and place them all on a baking tray.
3. Bake in the preheated oven at 350F for 15 minutes until slightly golden brown.
4. Let them cool down before serving.
Cheese Enchiladas

Time: 1 hour
Serves: 8

Ingredients:
3 cups tomato sauce
4 oz. tomato paste
1 tablespoon Creole seasoning
8 corn tortillas
2 cups grated Cheddar
1 onion, chopped
2 garlic cloves, chopped
10 oz. ground chicken
½ cup green olives, chopped
1 cup diced mushrooms
Salt and pepper to taste
1 pinch chili flakes

Directions:
1. Heat a skillet and add the ground chicken. Sauté for 5 minutes then add the onion and
garlic and sauté 2 additional minutes.
2. Stir in the mushrooms, green olives and chili flakes and cook 10 minutes.
3. Add the tomato paste and remove from heat. Season with salt and pepper.
4. To finish the enchiladas, take each tortilla and fill it with chicken mixture. Wrap tightly
and place all the tortillas in a deep baking pan.
5. Pour the tomato sauce over the enchiladas then top with grated cheese.
6. Bake in the preheated oven at 350F for 40 minutes.
7. Serve the enchiladas warm.
Smoked Cheese Ravioli

Time: 40 minutes
Serves: 4

Ingredients:
16 oz. cheese ravioli
1 cup heavy cream
1 cup grated smoked Gouda
1 tablespoon chopped chives
1 pinch black pepper
1 pinch nutmeg

Directions:
1. Cook the cheese ravioli in a pot of water just for a few minutes then drain well.
2. Heat the cream in a heavy saucepan and stir in the Gouda. Keep on heat until melted
then stir in the ravioli, black pepper, nutmeg and chives.
3. Serve the ravioli warm.
Goat Cheese and Arugula Pasta

Time: 30 minutes
Serves: 4-6

Ingredients:
2 cups arugula, coarsely chopped
6 oz. goat cheese, crumbled
1 cup cherry tomatoes, halved
2 tablespoons olive oil
2 garlic cloves, chopped
8oz penne pasta
Salt and pepper to taste

Directions:
1. Pour a few cups of water in a pot and bring to a boil with a pinch of salt.
2. Add the pasta and cook 8-10 minutes until al dente. Drain and set aside.
3. Heat the oil in a skillet and stir in the garlic. Sauté 30 seconds then add the arugula and
tomatoes.
4. Sauté for 10 minutes then stir in the pasta.
5. Season with salt and pepper then add the goat cheese and serve the pasta warm.
Pepperoni and Cheese Crescents

Time: 40 minutes
Serves: 8

Ingredients:
10 oz. refrigerated crescent dinner rolls
24 slices pepperoni
1 cup tomato sauce
1 cup shredded mozzarella cheese

Directions:
1. Place the dough on your working surface and cut 8 triangles.
2. Brush each triangle with tomato sauce and top each of them with pepperoni and
mozzarella.
3. Place the triangles on a baking tray and bake in the preheated oven at 350F for 15-20
minutes until golden brown.
4. Serve them only when chilled.
Romano Cheese Crisp

Time: 25 minutes
Serves: 10

Ingredients:
1 cup grated Romano cheese
2 garlic cloves, minced
1 cup cream cheese
1 French bread, slice in half lengthwise

Directions:
1. Spread the minced garlic over half of the bread and top with cream cheese then sprinkle
with grated Romano cheese.
2. Place top of the bread over the cheese and place on a baking tray.
3. Bake in the preheated oven at 350F for 20 minutes until the cheese begins to melt.
4. Serve the bread warm.
Bacon Cheese Dip

Time: 20 minutes
Serves: 2-4

Ingredients:
4 bacon slices, chopped
1 cup cream cheese
½ cup light mayonnaise
½ cup grated Swiss cheese
1 green onion, finely chopped
Crackers for serving

Directions:
1. Mix the bacon, cream cheese, mayonnaise, Swiss cheese and onion in a bowl.
2. Serve the dip with crackers.
Cheese Grits

Time: 30 minutes
Serves: 4-6

Ingredients:
1 cup hominy grits
3 cups water
3 eggs
¼ cup butter
Salt and pepper to taste
10 oz. grated Cheddar cheese

Directions:
1. In a heavy saucepan combine the frits with water and cook until tender.
2. When the mixture is thick, stir in the eggs, then add the butter, salt and pepper and mix
firmly until thick and creamy.
3. Pour the mixture in a deep baking pan and top with grated cheese.
4. Bake in the preheated oven at 350F for 30 minutes.
5. Serve the frits warm.
Cheese and Onion Pie

Time: 50 minutes
Serves: 6-8

Ingredients:
1 9-inch pastry pie crust
4 onions, finely sliced
2 tablespoons butter
¼ cup white wine
4 eggs
Salt and pepper to taste

Directions:
1. Heat the butter in a skillet and stir in the onions. Sauté for 10 minutes, stirring often.
2. Add the wine and cook until it evaporates.
3. Remove from heat and let cool down then stir in the eggs. Add salt and pepper to taste
then pour the onion mixture into the pie crust.
4. Bake in the preheated oven at 350F for 40 minutes.
5. Serve the pie warm.
Potato and Cheese Frittata

Time: 30 minutes

Ingredients:
6 eggs, beaten
1 sweet potato, peeled and diced
Salt and pepper to taste
½ teaspoon dried thyme
1 cup grated Cheddar cheese
2 tablespoons vegetable oil

Directions:
1. Heat the oil in a skillet and add the potato. Sauté for 5 minutes.
2. In a bowl, mix the eggs with salt, pepper and thyme then add the grated cheese.
3. Pour this mixture over the potato and cook on low heat for 10 minutes.
4. Carefully flip the frittata and finish cooking 5 additional minutes.
5. Serve the frittata warm.
Sour Cream Cheesecake

Time: 1 ¼ hours
Serves: 8-10

Ingredients:
1 ½ cups graham crackers, crushed
½ cup melted butter
2 cups cream cheese
2 cups sour cream
1 cup sugar
1 tablespoon vanilla extract
4 eggs
1 pinch salt

Directions:
1. Mix the crushed crackers with the melted butter then transfer the mixture into a round
cake pan lined with parchment paper. Press the crackers well on the bottom of the pan
and set aside.
2. In a bowl, mix the cream cheese, sour cream, sugar, eggs, vanilla and salt. Pour the
mixture over the crust and bake in the preheated oven at 330F for 1 hour.
3. Let the mixture cool down completely before slicing and serving.
Fried Mozzarella Cheese Sticks

Time: 30 minutes

Ingredients:
12 mozzarella sticks
4 eggs, beaten
1 cup breadcrumbs
¼ cup all-purpose flour
2 cups vegetable oil

Directions:
1. Heat the oil in a deep frying pan.
2. Mix the breadcrumbs and flour in a bowl.
3. Dip the mozzarella sticks into eggs first then roll them through the breadcrumb mixture.
4. Drop the mozzarella into the hot oil and fry until golden brown on both sides.
5. Remove the sticks from the hot oil and place them on paper towels.

Spam and Cheese Casserole

Ingredients:
10 oz. Spam meat, diced
4 eggs
20 soda crackers, crushed
2 cups milk
1 cup grated Cheddar cheese

Directions:
1. In a deep pan, mix the crackers with the meat.
2. In a bowl, combine the eggs with milk then pour the mixture over the crackers.
3. Top with grated cheese and bake in the preheated oven at 350F for 35 minutes.
4. Serve the casserole warm.
