Introduction

1 Introduction
1.1 About this manual
This manual contains information that the service technicians need
for the professional maintenance of the unit. The service technician
must also heed the contents of the service instructions, installation
instructions, and operating instructions.
Target group The target group for this manual is trained qualified personnel
entrusted with the technical functioning and operation of the unit.
Figures All figures in this manual are intended as examples. Discrepancies
can arise between this and the actual unit.

1.2 General information


The purpose of maintenance is to prevent a later unit defect due to
unfavorable preconditions. The most frequent cases generally occur
due to heavy soiling or penetrating moisture.

1.3 Maintenance interval


We recommend performing maintenance every 12 months in order to
guarantee a long life span. With a heavier use, a maintenance
interval of 6 months is recommended.

Safety instructions

2 Safety instructions
For servicing tasks, the service technician must be familiar with and
observe regional regulations.
In addition, the notes in the service manual must be observed.

DANGER
Risk of personal injury and property damage from electric shock
• Inspection and adjustment work that can be carried out only
with the housing open and the unit under power must be
performed only by electrically trained qualified personnel.

DANGER
Risk of explosion and fire from leaking, gas-conducting parts
• Check the gas connection line and all gas-conducting parts
for leakage tightness at the operating pressure.
• Use only bubble-forming agents and gas leak detectors
approved for use with gas.

DANGER
Risk of fatal injury from gas
ü Disconnect the unit from gas supply prior to performing gas
installation tasks.
• Lock site gas supply and secure it against restart.

Determine building-side water hardness and compare to filter setting.
If the water filter supplies only the combi steamer, the water capacity can be stored in the
unit software.

essary. Heed installation specifications!

3.5 Chassis and cooking chamber

1 Is the unit levelled?
2 Check door seal for damage and to ensure it does not leak. If necessary, replace door seal
and adjust cooking chamber door.
3 Only for 20.x pedestal units: check profile seal on the cooking chamber door for damage
and to ensure that it does not leak. Replace if necessary.
4 Check cooking chamber, fan, heating element, and water supply pipe for calcification and
remove calcium deposits if necessary.
5 Only for 6.x, 10.x tabletop units: check WaveClean cartridge holder. It must be aligned hori-
zontally.
6 Check hand shower and hose for leaks and function.
7 Unlock and open control panel. Check control panel for leaks and close. The control panel
locks noticeably at multiple points.
8 Check operating foil on the on/off switch for damage.
9 Check core temperature sensor for damage.
10 Check cooking chamber sensor and protective basket for damage and deposits.
11 Check air intake area for soiling and clean if necessary.
12 Check cover of USB interface for damage.
13 Check the steam outlet nozzle and connected piping for deposits. If necessary, clean ac-
cording to instructions.

4 Information about the maintenance schedule


4.1 Water connection
Step Description
1 Check remaining capacity of water filter. If necessary, perform maintenance.
2 The capacity of the water filter can be stored on the Service menu. When the capacity set has been reached,
a note appears.
4 The sieves are on the connections for raw water and soft water. Clean or replace sieves. Do not operate unit
without sieves.

4.2 Chassis and cooking chamber


Step Description
1 Align tabletop units with the unit feet. Align pedestal units without EasyIn move-in system according to the
tray trolley. Align pedestal units with EasyIn according to installation instructions. In addition, check roller
bearing on tray trolley.
2 Replace defective door seals. Escaping steam and heat can cause damage.
3 The profile seal can be damaged due to incorrect unit alignment or lacking care. Always move the tray trolley
in completely before closing the cooking chamber door.
4 Unlock air diverter and unfold. Remove calcium deposits according to operating instructions. Dismount the
water intake pipe and also remove the calcium deposits
5 Bent cartridge holders affect the cleaning behavior of the WaveClean automatic cleaning.
8 Replace damaged foil immediately. Danger due to penetrating moisture.
10 Deposits on the protective basket affect the temperature measurement and change the cooking results.
11 Deposits in the air intake area under the unit must be removed with a brush and cleaning agent. A clogged
air intake area causes an overheating of the control.
12 Replace damaged cover immediately. Danger due to penetrating moisture.
13 Examine steam outlet nozzles (exhaust pipe) for deposits with a flashlight. If necessary, clean cold unit with
spray bottle and liquid cleaner. Use a liquid cleaner containing at most 20% sodium or potassium hydroxide.
Spray the steam outlet nozzles completely with the spray bottle and allow to work. Rinsing with water is not
necessary.

4.3 Component check


Step Description
1 Ensure function of the cooking chamber light. Replace defective light bulbs.
2 Start unit in any cooking mode. All cooling fans must be active.
3 Activate relay K8 via the relay test on the service menu. The solenoid is activated. Remove lower clamp from
the silicone hose and push hose upward. Check seal of solenoid for damage and soiling. If necessary, re-
place seal.
4 Check DynaSteam steaming unit using the DynaSteam test on the service menu. -> See also service instruc-
tions.

5 Activate relay K4 via the relay test on the service menu. The magnetic valve water vapor elimination is ac-
tive.
6 Check both pumps using the WaveClean test on the service menu. -> See also service instructions.

Step Description
10 Start unit in the steaming cooking mode. Check unit from the left and right side for leaks.

4.4 Software
Locate installed software version using the unit information on the service menu. If necessary, perform the software up-
date using the service menu. New versions can include function expansions and eliminate errors.

4.5 Expected maintenance on gas units


Step Description
7 Check CO22 exhaust values via the CO2 settings on the service menu. If necessary, perform CO2 calibration
with help of the document "Gas orifices & fan speeds". -> See also installation instructions.

The specified CO2 exhaust values must be adhered to according to applicable safety regulations. Exhaust
values that are outside the specifications can cause a non-optimal burning process and reduce the life span
of the gas heat exchanger.
