Abstract
This project was a group effort based on the group members` learnings in Engineering
Design. Based on the need of the restaurants, an efficient and innovative dumpling maker
has to be designed. The final design meets the requirements with correct
specifications:inexpensive, easy to use, and compact.

Introduction
Dumplings making can be an art, and many restaurants feel that a dumpling maker may
not be necessary. Xinli Wu challenged this class to create a dumpling maker that would
be efficient and innovative, and desirable for a restaurant that often makes dumplings.

Design Task

Problem Statement
The problem is that dumplings are labor-intensive and require a lot time, There is no
cheap, automatic or semi-automatic dumpling maker widely available on the market.

Mission Statement
To design and build a prototype dumpling maker that can create ten dumplings per
minute with minimal work in a semi-automatic or automatic way. It should be suitable in
a restaurant or household setting .

Design specifications
● Can make at least 10 dumplings per minute
● Should be automatic or semi-automatic
● Material cost should not exceed $200
● Safe to use as a food processor, easy to maintain, safe to use, and dishwasher safe

Customer Needs Assessment

The customer needs a way to produce dumplings quickly and efficiently. The product
should be easy to use, cost less than $200, and produce ten dumplings per minute.

Customer 1-Owner of the Chinese restaurant :The Golden Wok

Q:How often do you make dumplings and how many do you make when you do make
dumplings?
A:We make dumplings every other day and make 100 dumplings at one time.

3
Q:What are some of the problems you have had with automatic dumpling makers?

A:Because we are not a dumpling restaurant, so currently we make dumplings manually

instead of using machines.

Q:What do you look for in a dumpling maker?

A:Functions and the quality of the dumplings it produces.

Q:How long does it take you to make normal dumplings?

A:If the dough and fillings are prepared, we can make about 10 dumplings per minute.

Q:How much space would you be willing to let a dumpling maker take up?
A:No more than the space of a chair.

Q:How much would you be willing to spend on automatic or semi-automatic dumpling maker?
A:If there is need in the future and the automatic dumpling maker suits our restaurant, we
will expand the amount of the dumplings we sell and sell it as our specialty. As to the price,
if the function and quality meet our demand, $1000-1500 is acceptable for me.

Customer 2-Owner of a restaurant in China

Q:How often do you make dumplings and how many do you make when you do make
dumplings?
A:We make 120 dumplings every day.

Q:What are some of the problems you have had with automatic dumpling makers?
A:We make dumplings manually instead of using machines but the dough we use is made
by machines.

Q:What do you look for in a dumpling maker?

A:The quality and the speed of making dumplings.

Q:How long does it take you to make normal dumplings?

A:About 10 dumplings per minute.

4
Q:How much space would you be willing to let a dumpling maker take up?
A:No more than 2 square meters.

Q:How much would you be willing to spend on automatic or semi-automatic dumpling maker?
A:If the dumpling maker is totally automatic, I will pay 2000 yuan for it.

Concept Generation

Each member of our group was tasked with creating a drawing for what the dumpling maker
could look like. Everyone discussed what seemed like a strength or weakness of each member’s
designs, and through the design matrix and selection matrix, we decided which design should be
used.

Design Features

The design has two cylinders, one holding the filling and one holding the dough. From
the cylinder holding the filling, there is a small tube where the filling will come out from.
The dough will fall onto a dumpling clamp, which will be closed manually. The design is
simple and efficient, and the premade dough and filling just need to be placed in the
cylinders for the dumplings to be made.

15
Operating Instructions

Place premade dough and filling into their respective cylinders. Turn on the machine and
watch as the dough is cut, dropped into the clamp, and the filling is dropped into the
dumpling. Then just manually clamp the dumpling, take it away and continue this process
until desired amount of dumplings are made. The automatic parts will restart every time
the dumpling clamp is put back in place due to a motion sensor detecting the open clamp.

Engineering Analysis

Working Mechanism

The dough and fillings need to be premixed and placed in their respective cylinders. The
dough machine will automatically slice dough to desired thickness and drop it onto the
dumpling clamp. The filling machine will then automatically drop the filling into the
dough and the dumpling will be manually clamped.

Model Size Selection Basis

● The distance from the clamp to the blade is 4 inches because when the customer do the
clamping, the blade and the hand have to keep a safe distance.
● The dough container is designer to be a cylinder with the diameter that shares the same
size of the dumpling dough because once the cutting is done, the dough is ready to clamp.
● The blade is designed to consist of two parts because once the cutting is done, the blade
can hold the rest of the dough in the container at the same time.
● Considering that customers do not want the machine to take too much space, we control
the size and optimize the structure in order to make the machine more compact.

Cost Analysis

Product Description Amount Cost

1/4 inch thick Stainless Steel Sheet 2’x 5’ $19.93

One inch diameter steel tube 1 foot long $2.54

Dumpling clamp 4 inch clamp $12.99

4” diameter smooth edge blade 1 blade $2.69

18” Steel Rod 2 rods $17.38

½” Stainless Steel Sheet 6” x 12” $38.38

Pressure Sensor 1 sensor $9.95

6-12V Motor 1 motor $12.99

Total Cost: $116.85

Table 3: Cost Table

Summary and Conclusion

● The prominent strength of the dumpling maker we design is that we manage to

design it to be compact and semi-automatic to minimize the cost and space it takes.

● The weakness is that it may be difficult for the blade to cut out a piece of flat dough and
ensure it to fall down onto the right position of the clamp precisely in view of the texture
of the dough. One feasible solution to this is to keep the blade floured and keep the dough
compact. Also, the filling container should be designed to be more wide open like a funnel
instead of a cylinder to make it easier for the user to place the premade fillings into the
container.

● The five of us worked together to design and build a prototype of a dumpling maker to be
used either in a household or restaurant. We worked effectively as a team to reach our
goal of creating an innovative and efficient dumpling maker. This project demonstrated
what real engineers do to create new products. It was like being part of a research and

17
development team, and working to create a new product for a customer. This was a
rewarding experience, as we learned to work as a team, and how the design process
works.

Acknowledgments

We would like to thank our professor, Xinli Wu, for his guidance and helpfulness during
this project. Our teaching assistants Jarod and Ben were especially helpful as well, and
helped us grow our skills in design production. This project taught us the value of
teamwork and problem solving, which will benefit us as future engineers.
