Introduction
The Fast-Moving Consumer Goods (FMCG) Sector primarily deals with the
production, distribution and marketing of consumer-packaged goods, i.e. those
categories of products that are consumed at regular intervals. Examples include food
& beverage, personal care, pharmaceuticals, plastic goods, paper & stationery and
household products etc.
In India, the FMCG industry is the fourth largest sector with a total (organized) market
size of over US$15 billion in 2007, as per ASSOCHAM, and can be classified under
the premium and popular segments. The market growth over the past 5 years has been
phenomenal.
FMCG sector in India play a very important role in economy. It is the fourth largest
sector in our economy with a market size of more than US$ 13.1 billion. It has a
strong MNC presence and is characterized by a well-established distribution network,
intense competition between the organized and unorganized segments and low
operational cost. There is more comparative advantage to FMCG companies in India
as raw material availability, cheaper labour cost, and presence across the entire value
chain. FMCG companies are among the top contenders that pursue the brand
positioning process to establish their products in the market. Despite recent
inflationary pressures and price hikes, various FMCG companies continued their
growth momentum through product diversification and introducing new variants of
the existing products. Moreover, the FMCG companies are also successful in passing
on the increasing cost to consumers through a well-thought-out blend of price hikes,
reduction in packaged size and alternative product mix. The FMCG market is set to
treble from US$ 11.6 billion in 2003 to US$ 33.4 billion in 2015.

Anmol begins its journey in 1994, a small unit in Kolkata, under the leadership of Shri
Baynath Choudhary. Starting with two varieties. Now it manufactures over 45 variants
of Biscuits, Cakes, and Cookies from its 7 state of the art units in the following places:
Greater Noida and Ghaziabad in Uttar Pradesh, Dankuni and Chanditala in West
Bengal and Hajipur in Bihar. Under his leadership, the company has grown multifold
and has even gone beyond the territory of the nation to secure a berth in the global
marketplace facilitating exports. Anmol also exports Biscuits, cookies, and cakes.
They have always embraced technology and change. All its manufacturing units and
processes, from raw materials to manufacturing and packaging are high on hygiene
manner and quality with least manual handling as possible with minimum wastages
and costs.

Packing Cooling Baking Moulding

MIXING
In this process all ingredients like flour, fat, sugar etc., are put together in the right
proportion for dough formation. The ingredients are fed into the mixers, where they are
mixed properly to prepare the dough. Here the dough temperature and mixing time play
an important role in the manufacturing of biscuits. Normally mixing time is between
10- 15 min, but it usually depends upon flour characteristics. It is performed in two or
three stages with different mixing speed.

MOULDING
Mixing is followed by moulding, in which the dough is laminated into sheets and is
passed down to gauge rollers and appropriate sheet thickness is achieved for cutting. It
is here that biscuits are given a variety of shapes and sizes using cutter or moulder. The
speed of the moulder or the cutter depends on the variety of the biscuit. Use of moulder
or cutter depends on the type of the dough where moulder is used for short dough type
of biscuit and cutters are used for sheet variety or hard dough.

BAKING
It is the third stage in biscuit making process, where the moulded biscuits are put into
the baking oven on required temperatures. There are various baking options with
different kinds of ovens available like direct fired, indirect fired and hybrid ovens,
which can be used keeping in mind the desired temperatures, the convenience and cost.
Various methods of heating like conduction, convection and radiation are used in the
ovens. These ovens also have dampers to control moisture inside the oven section.
Generally, the ovens are classified as 4 zones, 5 zones or 6zone ovens where length
varies from 40 mtr to 80 mtrs. Biscuits are carried on wire mesh band in oven.

COOLING
After baking biscuits, they are passed on to cooling conveyors for natural cooling prior
to packing. These conveyors are generally 300 - 400 ft. and can be of two or 3 deck type
as per space availability. In the conveyors, the temperature is brought down to room
temperature. Natural cooling is preferred to forced cooling as it maintains the texture
quality of biscuit.

PACKING
After cooling, the biscuits are stacked and fed into packing machine. These biscuits can
be availed in different packaging materials in different packs like slug packs, pouch
pack or family packs. These packs are then put into secondary packings like cartons for
transporting to the retailers. Packing material that are used for used for biscuit
packaging are BOPP, Laminates (pearlized or metallised), pouches.

Batter made from wheat flour, fat, eggs, sugar, milk powder, water, flavourings,
preservatives such as sulphur dioxide and raising agents such as sodium carbonate. The
ingredients are combined in either the sugar batter or flour batter methods. In the sugar
batter method, the fat and sugar are creamed together, followed by the liquid then the
flour. In the flour batter method, the fat is blended with the flour before being gradually
mixed with the eggs and sugar. Increasingly, the "all-in-one" method is being used,
which combines all the ingredients except fruit simultaneously.

Mixing the Batter


The batter is mixed in a commercial mixer. Once all the ingredients are combined, the
mixer continues to beat the mixture for a further 10 minutes to trap in air and allow the
cake to rise properly. The air works in conjunction with the added raising ingredient and
the cake will grow during the baking process. Once the mixing is completed, the batter
is turned into a mold for baking.

Filling the Mold


The baking mold is automatically sprayed with a thin layer of oil, which prevents the
batter from sticking to the mold during the baking process. The mold is then filled with
batter via an automatic dosing system, which monitors the shape, weight and level of
the batter.

Baking
Once full, the molds are taken via conveyor belt through an automatic oven. The
temperature and humidity of the oven are carefully regulated to produce the best result
for the cake type so that it cooks evenly and thoroughly. To prevent the surface of the
cake from cracking during the initial rising process, the crust is sprayed with water to
make it more flexible. Once the cake has fully risen, the crust can dry and take on its
baked colouring.

Cooling Down
After baking, the cake must be thoroughly and carefully cooled so that it does not
collapse. As the cake cools, it releases moisture into the air that is removed by powerful
suction pumps in the room so that no condensation forms.

Stripping and Packaging


Once the cake is completely cool, it is released from its mold and packaged so that it
will be ready for transportation. The cake must be completely cool before packaging, or
condensation will form and damage the product. Commercial cakes are normally
wrapped in plastic packaging, possibly with the additional of a cardboard tray.

 Each packets of Anmol Biscuits are checked by workers and all Damage
biscuits are take out before packaging.

OBSERVATIONS

 I have observed that Anmol have a structured format starting from


manufacturing to dispatch of the product.
 They have a very well-maintained factory, they take proper care on hygiene of
the factory, they are very much concerned about their quality of the product
manufactured.
 Quality of production is the main objective of the factory. Each packets of
Anmol Biscuits checked by workers and all damage are removed just before
packing.
 Anmol industry care about their workers, they do have medical practitioners
and ambulance facilities available in factory.
 Proper toilets and restrooms for the employees, fire safety is also there.
 They do give proper training to every employee on grooming part.
 The workers have 8-hour shift and the factory works 24 hours a day.6 day in
week.
