Chicken Fajitas
Time 20mins

Ingredients

• Asda Fajita Kit


• 1 Chicken breast
• ½ Pepper
• onions

Extras
• Sour cream
• Lettuce
• Salsa
• Cheddar cheese
• salsa

Method

1) (If you want toasted Tortillas pre heat oven to 200 for stage 6)
2) Cut chicken into strips
3) Add oil to pan and stir fry chicken for 5-8 minutes
4) While chicken is cooking chop pepper and onions into long strips
5) Add pepper and onions- cook until chicken is cooked through
6) (Place Tortillas in oven to toast- 2 mins)
7) Add seasoning and stir fry for 2 mins
8) Serve with option of extras- Salsa, Lettuce, Sour cream, cheese

Thai Green Curry


Time- 25mins

Basmati Rice

Method

1) Cut chicken breast into cubes and add to a frying with 1 Tbsp of oil on a medium heat.
2) Fry 4-5 minutes until evenly browned.
3) Add 1-2 Tbsp of curry paste and fry for 1 minute.
4) Add 100ml (Half can) coconut milk.
5) Bring to boil, cover with lid and simmer for 15-20 minutes until sauce has thickened.

Guide to cooking rice..


Top Tip: Learning to cook rice will save money, compared to buying microwave packs which
are 7X more expensive
1) 60g of basmati rice per person (Approx. 1/3 of a Mug)
2) wash the rice in cold water until it runs clear. Drain the rice and put into a medium
saucepan.
3) Pour in 120 ml water (2x rice).
4) Add a generous pinch of salt.
5) Bring to the boil and then reduce the heat so that the water is simmering. Cover
with a tight-fitting lid and do not stir.

Chicken Noodle Soup


Time- 15 mins

Ingredients

Noodles,
Frozen Stir fry veg
2 x Chicken stock cube
Chicken breast
½ Onion
Garlic
noddle’s

Extra
Sesame seed oil

Method

1) Dice onion and Chicken


2) Hob on medium heat, add 1 Tbsp of olive oil, Pressed or chop garlic in to fine slices
and onions
3) Cook until onions are soft
4) Add 450 ml of water, 2 chicken stock cubes and stir and check stock cubes have
dissolved
5) Add chicken
6) 3 minutes later add Stir fry veg
7) 3 minutes later add noodle’s
8) 3 minutes later check chicken has cooked through
9) Add 2 tsp of seamseed oil

Chicken, Bacon and leek pasta


Time 25mins

Ingredients

1 tsp olive oil


25 g bacon lardons
1 chicken breast
1 medium leek
85 g Spaghetti
¼ of a 350 g tub ready-made cheese sauce

Parmesan

Method

1. Preheat the grill (medium heat)


2. Heat oil in a large frying pan. Add lardons and chicken and cook for 7-8min. Add the
leeks and continue cooking for 4-5min.
3. Meanwhile, cook the pasta according to the packet instructions. Drain well.
4. Add the cheese sauce, Lardons, chicken, leek to the pasta and mix. Tip into a dish and
sprinkle with Parmesan. Grill for 5-10min until golden.

Chicken, Bacon and leek pie with Chips


Time 1 hours plus

Ingredients

• 25 g unsalted butter
• 1/2 large leek, finely sliced
1 tsp plain flour
• chicken stock
• 1 tbsp double cream
• 100 g chicken cut into chunks
• 25g of bacon lardons
• Puff pastry (to cover top of dish)
• Tin foil tray
• Chips

Method

1. Preheat the oven to 190 degrees


2. Heat the olive oil in a large heavy bottomed saucepan
3. Cook chicken until cooked through and then add leeks
4. Stir until the chicken is white and the leeks are soft
5. Add the bacon lardons
6. Stir and cook for a further 5 minutes
7. Stir in the tablespoon of flour and coat the meat and vegetables
8. Add the cream stirring all the time until the sauce thickens
9. Add a little more cream if more liquid is required and stir in well
10. Allow to simmer for 5-10 minutes
11. Spoon the mixture into a tin foil tray
12. Cover with the puff pastry sheet, cutting off any excess with a knife
13. Bake in the oven for about 45 minutes or until the pastry is risen and golden

Spaghetti Carbonara
Time 20 mins

Ingredients

• 25g bacon lardons


• 50g parmesan
• 1 large egg
• 85g spaghetti
• ½ garlic clove, peeled and left
whole
• 15g unsalted butter
• salt and black pepper

Method

1. Boil water and add salt


2. Finely grate the parmasan. Beat the egg in a medium bowl and season with a little
black pepper.
3. Add the spaghetti, bring to boil and then cook at a constant simmer, covered, for 10
minutes or until al dente (just cooked).
4. While the spaghetti is cooking, Squash the garlic with the side of a knife, just to bruise
it. Drop the butter into a large frying pan, as soon as the butter has melted, tip in the
lardons and garlic. Leave to cook on a medium heat for about 5 minutes, stirring
often, until the lardons are golden and crisp. Then remove garlic and discard.
5. Keep the heat under the lardons on low. When the pasta is ready, lift it from the water
with a pasta fork or tongs and put it in the frying pan with the pancetta. Don’t worry if
a little water drops in the pan as well (you want this to happen) and don’t throw the
pasta water away yet.
6. Mix most of the cheese in with the eggs. Take the pan of spaghetti off the heat. Now
quickly pour in the egg and cheese. Using a long fork, lift up the spaghetti and mix.
(which thickens but doesn’t scramble) Add extra pasta cooking water to keep it saucy
(one tablespoon should do it). You don’t want it wet, just moist. Season with a little
salt, if needed.

Chicken Stir-Fry
Time 10 mins

Ingredients

Onion
• 1 tbsp olive oil
• 1 garlic clove, chopped
• 1 Chicken Breast
• Frozen stir fry veg
• 1-2 nest of egg noodles, cooked according to the
packet instructions

Method

1. Medium Heat, added the oil and galic in frying pan or wok.
2. Add the chicken and cook until all white (3-5 mins) and then add stir fry veg cook for
another 7 mins.
3. Meanwhile Boil water, add salt and cook noodles (2-3 mins).
4. Check chicken is cooked and then add noodle and sauce to the pan and fry for 2
minuets.

Katsu Curry
Time- 30 mins

Ingredients

Katsu sauce
Rice
1 chicken breast
1 egg
bread crumbs
flour
Sitr fry veg

Method

1) Cook rice
2) For the chicken: cut into an inch thick slice Season both sides of chicken breasts with
salt and pepper.
3) Place flour, egg and breadcrumbs in separate bowls and arrange in a row. Coat the
chicken breasts in flour, then dip them into the egg, then coat in breadcrumbs, making
sure you cover both sides.
4) Heat oil in large frying pan over medium-high heat.
5) Place chicken into hot oil and cook until golden brown, about 5 minutes on one side.
Add stir fry veg and turn chicken and cook other side for 5 minuets Once chicken is
cooked, (cut in half and check its cooked) put on chopping board and slice.
6) Add curry sauce to the veg and cook for 1-2 mins.
7) serve

7) When ready to serve, fluff the rice with a fork to separate the grains.

Spaghetti Bolognese

Method
1.Heat a saucepan over a medium heat with a tablespoon of oil and add the onion and garlic.
Cook without colouring for a few minutes, then add the beef mince and season with salt and
pepper

2.Cook the beef until browned all over then stir in the tomato purée followed by the tinned
tomatoes. Bring to a boil then let simmer for around 30 minutes – add a splash of water if it
is looking a bit dry

3.Meanwhile, bring a large pan of seasoned water to the boil and add the pasta. Stir to stop
the pasta from sticking and cook for 7–10 minutes

4.When it is fully cooked, drain in a colander and drizzle with a little olive oil to prevent the
spaghetti from sticking together

Method

1. Tip the beef into a bowl with the onion and egg, then mix.
2. Lightly wet your hands. Carefully roll the mixture into a ball the size of a tennis ball.
3. Set in the palm of your hand and gently squeeze down to flatten into patties about 3cm
thick. (For best results Put on a plate, cover with cling film and leave in the fridge to firm up
for at least 30 mins.)
4. Lightly brush 1 side of each burger with oil. Cook for 5 mins until the meat is lightly coloured
turn
5. Cook for 5 mins more for medium and add cheese. If you like your burgers pink in the
middle, cook 1 min less each side. For well done, cook 1 min more.
6. Slice each bun in half toast. Serve with the extras you wish
