I will continue for part challenges. During our making process, there are few issues.

First, the amount of sugar used. Sugar provide 4 calories per gram. During the process,
insufficient sugar unable to make the candy harden however too much sugar will lead to
unhealthy level to be consumed.

Next, colour. As sugar heated will undergo Maillard reaction, brown colour formed. This make the
candy difficult to be colour. In market, candy mostly in variety of colour that attract attention from
public especially children.

Ginger & lemon grass. Nowadays ginger is widely used in food industry such as ginger tea, ginger
powder. However, strong smell and taste of ginger not widely accepted. Especially for children
who cannot tolerate the spiciness of ginger.

On the other hand, lemon grass food product hardly can be found in market. This is because
traditionally lemon grass usually used in Thai&South East Asian cooking such as tomyam n
rendang because of its smell. Also lemon grass also known as serai that used to get rid of insect.

Texture of the candy also take into consideration. The candy will be too hard if the sugar level is
high n is difficult to penetrate elderly market as it is too hard to be consumed. However, the
texture will become soft when amount of sugar is too little to harden the candy. Also difficult to
maintain its shape.

While conducting the process, need much attention & quick response. This is because melted the
sugar n maltose required controlled temperature. Too high temperature will make the sugar
solution get burnt easily. Quick response need to keep stirring the solution to prevent the solution
burnt and heated evenly. When peanuts added, this also required quick stirring to ensure there is
evenly distribution of peanuts. Lastly, cutting the candy into small pieces need done while hot as
hardening occur fast.

One package consists of 40 servings.One serving size is 3.5g which provide 26.2 kcal. It clearly
state the macronutrients per servings. The product high in unsaturated fat. Carbohydrate as
energy provider and protein.

For sample preferences, we conduct sensory test comprises colour, aroma, texture, taste also for
overall acceptance. 30 participants were randomly choose. 27 out of 30 persons like the products
while the rest in neutral stand.

For colour, 1 person dislike may be due to the colour only in brown that is not attractive, 22
persons like the colour which is 73 percent.

For aroma, 28 out of 30 like the smell as the candy has smell of peanuts also sweet smell from
sugar which cover the smell fof ginger and lemon grass.

For texture, 20 persond prefer the crunchy texture while 3 pesons dislike as the texture is too
hard for them.

For taste, overall most of participants like the taste as this is their first try consume candy with
combination of ginger and lemon grass with peanuts. This product also not considered too sweet
for them.
