CHAPTER I

INTRODUCTION

BACKGROUND OF THE STUDY

Suman is the country’s quintessential rice cake. It is a

named shared by many different variants that are all made

from glutinous rice cooked in coconut milk, wrapped tightly

in palm leaves, and then steamed. It is quite delicious on

its own, but those who like to up that and enjoy it with

sprinkling of sugar.

Others even fry it on an even richer version. It has

been believed by the Filipino rice farming ancestors that

there is nothing better to fill stomach than rice, grown by

farmers with much perseverance and hard work. Filipino women

telling stories while wrapping suman in the Philippines, and

is considered part of the very colorful and vibrant culture

of the country.

Suman is a popular snack among the Filipinos. It is a

rice delicacy made of steamed glutinous rice cooked with

salt, wrapped with the leaves buri palm, or others types of

leaves like banana, and then cooked in coconut milk. The rice

used may be sweetened.

Suman traditionally served with sugar for the customer

to dip the rice cake in it. Sometimes, it is also served with

fresh ripe mangoes for added flavor. Suman easily fulfills

2

hunger and more often than not, it is heavy in the stomach,

making customer full in just a few bites of the delectable

rice cake

Also, suman has long been part of Filipino Christmas

celebrations and other celebrations, along with other kakanin

variations. Most Filipino homes makes it point to have suman

on their tables during various occasions.

Moreover, suman not only gathers Filipino together, but

also symbolizes the gratitude of the people to the blessings

of god manifested in nature. Filipinos have been making the

suman since pre-colonial times. We offer it to the gods and

as presents to visitors. Antonio pigafetta, according to Sta.

Maria, provides the first description of the cakes, which the

observed, was wrapped in leaves and were made in somewhat

longish pieces. http://juankakanin.wordpress.com

HISTORY

Suman history traces all the way before arrival of

colonizers. Although the Philippines is much influenced by

Hispanic and American culture many fields including cuisine,

the fundamentals of suman remain the same.

Suman, also, has always been present in most Filipino’s

homes during Christmas celebrations. Although our culture has

gone through a long process of intermixture with other

3

cultures. The tradition of suman and other kakanin remains

and is best manifested during Christmas season and other

Filipino celebrations.

Suman is a Filipino delicacy primarily made of sticky

rice and coconut milk, and is usually called “Rice cake” in

English. It is seen as the equivalent of the Mexican tamale,

thought the latter is often made with “masa” a type of flour,

and has some fillings, which suman does not. The rice cake

usually has a long, cylindrical or rectangular appearance,

though sometimes it takes the shape of a pyramid. It is often

wrapped in either palm or banana leaves, both of which impart

an aroma to the rice when the wrapping is opened. Suman has

been a long established part of Filipino cuisine and can be

eaten as a breakfast meal, snack, or even during fiestas and

Christmas celebrations.

It is uncertain how the suman was invented, but it is

not surprising that such a food is created, given that rice

is one of the most important foods and crops in the

Philippines. It is said that rice cakes can be traced back to

Filipino’s pagan era, before the Spanish and American

colonization and their Christian influences. During harvest

time, the people would utilize and collected rice and turn

into rice dishes called “kakanin” which include the rice

cakes. The cakes would also often be a part of the food

offering presented to the spirits and gods, and probably t

deceased love ones as well. http://juankakanin.wordpress.com

LEGAL FORMS OF BUSINESS ORGANIZATION

The legal forms of the business organization of the

study is partnership.

Partnership

A partnership is commonly formed of two or more

people wish to come together to form a business. Perhaps they

have a common business idea that they wish to put to the test

or to realize that their skills and talents compliment to

each other in such a way that they might make a good business

team.

Advantage of Partnership

Capital- Due to the nature of the business the partners

will fund the business with start-up capital. This means that

the more there are, the more money they can put into the

business, which will allow better flexibility and more

potential for growth.

Flexibility- A partnership is generally easier to form,

manage and run. They are less strictly regulated than

companies, in terms of the laws governing the formation and

because partners have the only say in the way the business is

run.

Shared Responsibility- Partners can share the

responsibility of the running of the business. This will

allow them to make the most of their abilities. Rather than

10

splitting the management and taking an equal share of each

business task, they might will split the work according to

their skills.

Decision Making- Partners share the decision making and

can help each other out when they need. More partners means

more brains that can be picked for business ideas and for

solving of problems that the business encounters.

Disadvantages of Partnership

Disagreements- One of the most obvious disadvantages of

partnership is the danger of disagreements between the

partners. Obviously people are likely to have different ideas

on how the business should be run, who should be doing what

and what the best interest of the business are.

Agreements- Because the partnership is jointly run, it

is necessary that all the partners agree with things that are

being done. This means that in some circumstance there are

fewer freedoms with regards to the management of the

business.

Liability- Ordinary partnership are subject to unlimited

liability, which means that each of the partners shares the

liability and financial risk of the business. This can be off

putting for some people.

11

Taxation- One of the major disadvantages of partnership,

taxation laws mean that partners must pay tax in the same way

as sole traders, each submitting a self-assessment tax return

each year. They are also required to register as self-

employed with HM revenue & customs

Profit Sharing- Partners share the profits equally. This

can lead to inconsistency where one or more partners aren't

putting a fair share of effort into the running or management

of the business, but still reaping the rewards.

Company policies and procedures establish the rules of

conduct. Within an organization, outlining the

responsibilities of both employees and employers. Company

policies and procedures are in place to protect the rights of

workers as well as the business interest of employers.

Depending on the needs of the organization, various policies

and procedures establish rules regarding employee conduct,

attendance, dress code, privacy and other areas related to

the terms and conditions of employment.

Employee Conduct

An employee conduct policy establishes the duties and

responsibilities each employee must adhere to as a condition

of employment.

Conduct policies are in place as a guideline for

appropriate employee behavior, and they outline things such

as proper dress code, workplace, safety procedures,

harassment policies and policies regarding computer and

internet usage. Such policies also outline the procedures

employers may utilize to discipline inappropriate behavior,

including warnings or employee termination.

Equal Opportunity

Equal opportunity laws are rules that promote fair

treatment in the workplace. Most organizations implement

15

equal opportunity policies anti-discrimination and

affirmative action policies, for example to encourage

unprejudiced behavior within the workplace.

These policies discourage inappropriate behavior from

employees, supervisors and independent contractors in regard

to the race, gender, sexual orientation or religious and

cultural beliefs of another person within the organization.

Attendance and Time Off

Attendance policies set rules and guidelines surrounding

employee adherence to work schedules. Attendance policies

define how employees may schedule time off or notify

superiors of an absence or late arrival.

This policy also sets forth the consequences for failing

to adhere to a schedule. For example, employers may allow

only a certain number of absences within specified time

frame. The attendance policy discusses the disciplinary

action employees face if they miss more days than the company

allows.

Substance Abuse

Many companies have substance abuse policies that

prohibit the use of Drugs, alcohol and tobacco product during

work hours, on company property or during company functions.

These policies often outline.

16

Smoking procedures employees must follow if allowed

smoke on business premises. Substance abuse policies also

discuss the testing procedures for suspected drug and alcohol

abuse.

EMPLOYEE BENEFITS

employees in the 21st century and a requirement for employer

who wish to be competitive in terms of attracting a wide

range of benefits-monetary and non-employee that take steps

to learn what is most important to their employees can ensure

that their benefits mix is valued.

Health Care Benefits

Health care coverage has become a major expectation for

employees and a primary driver for them in choosing

employees. According to salary there are a number of health

care benefit option available to employers. These include

indemnity or fee-for-service coverage plans, managed care

plans, health maintenance organization (HMOs) and point of

service plans.

Each of these plans vary widely and offer different

benefits in terms of coverage and cost. Cost is a significant

factor for employers in choosing coverage

option as they attempt to balance value for employee’s and

overall benefit cost to the business.

17

Non-Monetary Benefits

While most employee benefits represent a cost to the

Organization, there are many benefits that employees value

that can be provided at very low or no cost, says Lin
