Animal  Products  
       Studies  have  shown  that  even  when  fed  200  
2mes  the  amount  of  animal  fat  and  cholesterol  
that  the  average  human  consumes  each  day,  
carnivores  do  not  develop  the  hardening  of  the  
arteries  that  leads  to  heart  disease  and  strokes  
in  humans.4

 A  recent  study  showed  that  a?er  following  almost  
200,000  Americans  for  seven  years,  those  who  
regularly  consumed  red  meat  had  a  double  the  
occurrence  of  pancrea2c  cancer.  (Nothlings  U

 We  consume  twice  as  much  protein  as  we  need  when  
we  eat  a  meat-­‐based  diet,  and  this  leads  to  
osteoporosis  and  kidney  stones.8  Animal  protein  raises  
the  acid  level  in  human  blood,  causing  calcium  to  be  
excreted  from  the  bones  to  restore  the  blood's  natural  
pH  balance.  This  calcium  deple2on  leads  to  
osteoporosis,  and  the  excreted  calcium  ends  up  in  the  
kidneys,  where  it  can  form  kidney  stones.  The  strain  of  
processing  all  the  excess  animal  protein  from  meat  can  
also  trigger  kidney  disease  in  meat-­‐eaters.

       The  consump2on  of  animal  protein  has  also  been  
linked  to  cancer  of  the  colon,  breast,  prostate,  
and  pancreas.  In  fact,  according  to  Dr.  T.  Colin  
Campbell,  the  director  of  the  Cornell-­‐China-­‐
Oxford  Project  on  Nutri2on,  Health,  and  the  
Environment,  "In  the  next  ten  years,  one  of  the  
things  you're  bound  to  hear  is  that  animal  protein  
…  is  one  of  the  most  toxic  nutrients  of  all  that  can  
be  considered."

       Ea2ng  meat  can  also  have  nega2ve  consequences  
for  stamina  and  sexual  potency.  One  Danish  study  
indicated  that  "Men  peddling  on  a  sta2onary  
bicycle  un2l  muscle  failure  lasted  an  average  of  
114  minutes  on  a  mixed  meat  and  vegetable  diet,  
57  minutes  on  a  high-­‐meat  diet,  and  a  whopping  
167  minutes  on  a  strict  vegetarian  diet."9  Besides  
having  increased  physical  endurance,  vegans  are  
also  less  likely  to  suffer  from  impotence.

       According  to  the  USDA,  meat  is  the  cause  of  70  percent  
of  food  borne  illnesses  in  the  United  States  because  it's  
o?en  contaminated  with  dangerous  bacteria  like  E.  
coli,  listeria,  and  campylobacter.10  Every  year  in  the  
United  States  alone,  food  poisoning  sickens  over  75  
million  people  and  kills  more  than  5,000.11  While  
carnivores  can  process  all  the  saturated  fat,  protein,  
and  bacteria  in  animal  flesh,  a  meat-­‐based  diet  can  
send  humans  to  an  early  grave.

       The  consump2on  of  meat,  eggs,  and  dairy  
products  has  also  been  strongly  linked  to  
osteoporosis,  Alzheimer's,  asthma,  and  male  
impotence.  Scien2sts  have  also  found  that  
vegetarians  have  stronger  immune  systems  than  
their  meat-­‐ea2ng  friends;  this  means  that  they  
are  less  suscep2ble  to  everyday  illnesses  like  the  
flu.7  Vegetarians  and  vegans  live,  on  average,  six  
to  10  years  longer  than  meat-­‐eaters.8

Sugar  
 In  1957,  Dr.  William  Coda  Mar2n  tried  to  answer  the  
ques2on:  When  is  a  food  a  food  and  when  is  it  a  
poison?  His  working  defini2on  of  "poison"  was:    
 Medically:  Any  substance  applied  to  the  body,  ingested  
or  developed  within  the  body,  which  causes  or  may  
cause  disease.    
 The  dic2onary  gives  an  even  broader  defini2on  for  
poison:  "to  exert  a  harmful  influence  on,  or  to  pervert.”

•  Refined  sugar  is  lethal  when  ingested  by  humans  
because  it  provides  only  what  nutri2onists  describe  
as  "empty"  or  "naked"  calories.  It  lacks  the  natural  
minerals  which  are  present  in  the  sugar  beet  or  cane.  
•  Sugar  is  worse  than  nothing  because  it  drains  and  
leaches  the  body  of  precious  vitamins  and  minerals  
through  the  demand  its  diges2on,  detoxifica2on  and  
elimina2on  makes  upon  one's  en2re  system.

•  Minerals  such  as  sodium  (from  salt),  potassium  and  
magnesium  (from  vegetables),  and  calcium  (from  the  
bones)  are  mobilized  and  used  in  chemical  
transmuta2on;  neutral  acids  are  produced  which  
aiempt  to  return  the  acid-­‐alkaline  balance  factor  of  
the  blood  to  a  more  normal  state.  
•  One  of  sugar's  major  drawbacks  is  that  it  raises  the  
insulin  level,  which  inhibits  the  release  of  growth  
hormones,  which  in  turn  depresses  the  immune  
system.

 Sugar  consumed  daily  produces  a  con2nuously  
over  acid  condi2on,  and  more  and  more  
minerals  are  required  from  deep  in  the  body  
to  aiempt  to  rec2fy  the  imbalance.  Finally.  So  
much  calcium  is  taken  from  the  bones  and  
teeth  that  decay  begins.

White  Flour  
•  White  flour  breaks  down  into  sugar  –  it  can  
lead  to  blood  sugar  issues  
•  Laboratory  rats  usually  die  in  a  week  to  ten  
days  when  placed  on  a  diet  of  white  flour  
White  Flour  –  The  Process  
•  Remove  the  wheat  seed’s  bran  –  it’s  six  outer  layers  
–  76%  of  vitamins  and  minerals  
–  97%  of  dietary  fiber  
•  Bleached,  preserved  and  aged  with  Chlorine  Dioxide  
•  Further  whitened  by  adding  chalk    
•  Alum  and  ammonium  carbonate  improves  look  and  
feel  for  consumers  
•  Emulsifiers  –  makes  the  bread  appear  so?er  and  hides  
the  real  age  of  the  bread.  These  emulsifiers  don't  
prevent  bread  from  roong,  just  hides  the  signs  so  you  
do  not  know  whether  or  not  you  are  in  fact  ea2ng  
bread  that  is  s2ll  "good.”  
White  Flour  –  The  Process,  Con2nued  
•  Alloxen  added  to  make  it  look  clean  to  the  consumer  
– Destroys  beta  cells  that  are  located  in  the  
pancreas.    
– O?en  given  to  laboratory  rats  to  induce  diabetes.  
•  Sorbitan  mono-­‐saturate,  an  an2-­‐sal2ng  agent,  is  
added  in  the  final  stages  
•  A  few  synthe2c  nutrients  are  added  back  into  the  
white  flour  and  it  is  then  called  “Enriched.”  
Whole  Wheat  and  Whole  Grain  Flour  
•  Retains  their  bran,  germ  and  nutrients  
•  Vitamin  E  is  retained  and  acts  as  a  natural  preserva2ve    
•  Don’t  be  deceived!  Some  products  say  whole  grain  but  
really  aren’t    
–  They  may  have  some  whole  grains  but  they  also  
contain  unhealthy  ingredients  
–  Example  –  if  bread  is  so?,  it  is  not  primarily  whole  
grain.  It  should  be  firm,  heavy  and  “grainy”  not  
spongy.  READ  THE  INGREDIENTS  carefully!

Salt  
•  Most  important  func2on  of  salt  is  to  balance  the  
amount  of  water  that  exists  within  and  outside  our  
cells.  
•  The  body  requires  about  500  milligrams  of  
sodium.  Many  people  consume  much  more  
sodium  than  their  body  needs.  The  human  body  is  
capable  of  handling  up  to  3000  milligrams  of  
sodium.  Excess  salt  is  generally  excreted  through  
the  urine.  
Salt  
•  High  sodium  intake  has  been  linked  with  other  serious  
condi2ons  as  well.  Excessive  sodium  intake  increases  
risk  for:    
–  conges2ve  heart  failure  (inadequate  pumping  ac2on  of  the  
heart)  
–  kidney  disease    
–  arteriosclerosis  (hardening  of  the  arteries)    
–  stroke.    
•  Linked  to  osteoporosis.  High  sodium  intake  may  
increase  the  excre2on  of  calcium,  which  over  2me  
reduces  calcium  in  the  bones,  leading  to  a  deficiency  
that  o?en  results  in  osteoporosis.    
 
Salt,  Con2nued  
 A  high-­‐sodium  diet  could  trigger  an  ulcer  or  even  
increase  the  risk  of  cancer.  In  a  lab  study  reported  
at  the  May  2007  mee2ng  of  the  American  Society  
for  Microbiology  in  Toronto,  researchers  found  
that  salt  increased  the  virulence  of  the  
Helicobacter  pylori  bacterium.  This  bacterium  
causes  the  vast  majority  of  ulcers  and  greatly  
increases  a  person's  risk  of  gastric  cancer  and  a  
certain  form  of  lymphoma.

 The  US  Department  of  Agriculture  (USDA)  
recommends  that  adults  consume  no  more  
than  2,400  milligrams  (mg)  of  sodium  a  day.  
That's  the  amount  of  sodium  found  in  
approximately  one  level  teaspoon  of  salt.  On  
average,  according  to  the  Center  for  Science  in  
the  Public  Interest,  Americans  consume  about  
4,000  mg  of  sodium  daily.

•  As  we  get  older,  especially  a?er  we  pass  45  years  of  age,  our  risk  for  high  
blood  pressure  rises.  The  USDA  recommends  that  people  middle-­‐aged  and  
older  consume  no  more  than  1,500  mg  of  sodium  a  day.  
•  Others  who  should  be  extra  careful  are  African  Americans,  who,  as  a  group,  
are  more  prone  to  high  blood  pressure,  as  well  as  people  with  a  gene2c  
predisposi2on  to  the  condi2on  (usually  indicated  by  having  a  close  family  
member,  such  as  a  parent  or  sibling,  who  has  high  blood  pressure).    
•  More  than  75%  of  the  typical  American's  daily  sodium  comes  from  
processed  foods,  to  which  salt  is  added  as  an  inexpensive  flavor  enhancer  
and  preserva2ve.  
•  Sodium  Chloride,  a.k.a.  table  salt  is  the  salt  we  have  been  referring  to  here.    
We  recommend  switching  to  Himalayan  or  Cel2c  Sea  Salt  which  have  over  
70  minerals  and  are  much  more  valuable  to  the  body.  We’ll  discuss  this  
further  in  a  later  lesson.  
 
THE  FIVE  TOXIC  FOODS  
Caffeine  
•  The  adrenal  glands  pump  out  stress  hormones  that  stay  elevated  for  up  
to  18  hours  a?er  consump2on  
•  The  liver  releases  higher  amounts  of  sugar  and  fat  into  the  blood  stream.  
•  The  pancreas  produces  insulin  to  remove  the  excess  blood  sugar  and  
store  it  as  fat.  
•  The  insulin  spikes  create  a  blood  sugar  rollercoaster.  
•  Muscle  tension  is  increased.  
•  The  blood  vessels  constrict,  reducing  the  flow  of  oxygen  to  important  
areas  like  your  brain  (up  to  30%)  and  your  extremi2es.  
•  Diges2on  and  the  immune  system  are  impaired  or  suppressed.  
•  The  produc2on  of  DHEA  and  other  an2-­‐aging  hormones  is  decreased.  
•  Cor2sol  and  other  stress  hormones  are  elevated.  
•  We  lose  Calcium  and  Magnesium  by  drinking  coffee
