We
consume
twice
as
much
protein
as
we
need
when
we
eat
a
meat-‐based
diet,
and
this
leads
to
osteoporosis
and
kidney
stones.8
Animal
protein
raises
the
acid
level
in
human
blood,
causing
calcium
to
be
excreted
from
the
bones
to
restore
the
blood's
natural
pH
balance.
This
calcium
deple2on
leads
to
osteoporosis,
and
the
excreted
calcium
ends
up
in
the
kidneys,
where
it
can
form
kidney
stones.
The
strain
of
processing
all
the
excess
animal
protein
from
meat
can
also
trigger
kidney
disease
in
meat-‐eaters.

cancer

the
colon,
breast,
prostate,
and
pancreas.

fact,
according
to
Dr.
T.
Colin
Campbell,
the
director
of
the
Cornell-‐China-‐ Oxford
Project

Nutri2on,
Health,
and
the
Environment,
"In
the
next
ten
years,
one
of
the
things
you're
bound
to
hear
is
that
animal
protein
…
is
one
of
the
most
toxic
nutrients
of
all
that
can
be
considered."

can
also
have
nega2ve
consequences
for
stamina
and
sexual
potency.
One
Danish
study
indicated
that
"Men
peddling
on
a
sta2onary
bicycle
un2l
muscle
failure
lasted
an
average
of
114
minutes
on
a
mixed
meat
and
vegetable
diet,
57
minutes
on
a
high-‐meat
diet,
and
a
whopping
167
minutes
on
a
strict
vegetarian
diet."9
Besides
having
increased
physical
endurance,
vegans
are
also
less
likely
to
suffer
from
impotence.

According
to
the
USDA,
meat
is
the
cause
of
70
percent
of
food
borne
illnesses
in
the
United
States
because
it's
o?en
contaminated
with
dangerous
bacteria
like
E.
coli,
listeria,
and
campylobacter.10
Every
year
in
the
United
States
alone,
food
poisoning
sickens
over
75
million
people
and
kills
more
than
5,000.11
While
carnivores
can
process
all
the
saturated
fat,
protein,
and
bacteria
in
animal
flesh,
a
meat-‐based
diet
can
send
humans
to
an
early
grave.

consump2on
of
meat,
eggs,
and
dairy
products
has
also
been
strongly
linked
to
osteoporosis,
Alzheimer's,
asthma,
and
male
impotence.
Scien2sts
have
also
found
that
vegetarians
have
stronger
immune
systems
than
their
meat-‐ea2ng
friends;
this
means
that
they
are
less
suscep2ble
to
everyday
illnesses
like
the
flu.7
Vegetarians
and
vegans
live,
on
average,
six
to
10
years
longer
than
meat-‐eaters.8

Sugar
In
1957,
Dr.
William
Coda
Mar2n
tried
to
answer
the
ques2on:
When
is
a
food
a
food
and
when
is
it
a
poison?
His
working
defini2on
of
"poison"
was:
Medically:
Any
substance
applied
to
the
body,
ingested
or
developed
within
the
body,
which
causes
or
may
cause
disease.
The
dic2onary
gives
an
even
broader
defini2on
for
poison:
"to
exert
a
harmful
influence
on,
or
to
pervert.”

sugar
is
lethal
when
ingested
by
humans
because
it
provides
only
what
nutri2onists
describe
as
"empty"
or
"naked"
calories.
It
lacks
the
natural
minerals
which
are
present
in
the
sugar
beet
or
cane.

worse

nothing
because
it
drains
and
leaches
the
body
of
precious
vitamins
and
minerals
through
the
demand
its
diges2on,
detoxifica2on
and
elimina2on

Salt
• Most
important
func2on
of
salt
is
to
balance
the
amount
of
water
that
exists
within
and
outside
our
cells.
• The
body
requires
about
500
milligrams
of
sodium.
Many
people
consume
much
more
sodium
than
their
body
needs.
The
human
body
is
capable
of
handling
up
to
3000
milligrams
of
sodium.
Excess
salt
is
generally
excreted
through
the
urine.
Salt
• High
sodium
intake
has
been
linked
with
other
serious
condi2ons
as
well.
Excessive
sodium
intake
increases
risk
for:
– conges2ve
heart
failure
(inadequate
pumping
ac2on
of
the
heart)
– kidney
disease
– arteriosclerosis
(hardening
of
the
arteries)
– stroke.
• Linked
to
osteoporosis.
High
sodium
intake
may
increase
the
excre2on
of
calcium,
which
over
2me
reduces
calcium
in
the
bones,
leading
to
a
deficiency
that
o?en
results
in
osteoporosis.

A
high-‐sodium
diet
could
trigger
an
ulcer
or
even
increase
the
risk
of
cancer.
In
a
lab
study
reported
at
the
May
2007
mee2ng
of
the
American
Society
for
Microbiology
in
Toronto,
researchers
found
that
salt
increased
the
virulence
of
the
Helicobacter
pylori
bacterium.
This
bacterium
causes
the
vast
majority
of
ulcers
and
greatly
increases
a
person's
risk
of
gastric
cancer
and
a
certain
form
of
lymphoma.

The
US
Department
of
Agriculture
(USDA)
recommends
that
adults
consume
no
more
than
2,400
milligrams
(mg)
of
sodium
a
day.
That's
the
amount
of
sodium
found
in
approximately
one
level
teaspoon
of
salt.
On
average,
according
to
the
Center
for
Science
in
the
Public
Interest,
Americans
consume
about
4,000
mg
of
sodium
daily.

we
get
older,
especially
a?er
we
pass
45
years
of
age,
our
risk
for
high
blood
pressure
rises.
The
USDA
recommends
that
people
middle-‐aged
and
older
consume
no
more
than
1,500
mg
of
sodium
a
day.
• Others
who
should
be
extra
careful
are
African
Americans,
who,
as
a
group,
are
more
prone
to
high
blood
pressure,
as
well
as
people
with
a
gene2c
predisposi2on
to
the
condi2on
(usually
indicated
by
having
a
close
family
member,
such
as
a
parent
or
sibling,
who
has
high
blood
pressure).
• More
than
75%
of
the
typical
American's
daily
sodium
comes
from
processed
foods,
to
which
salt
is
added
as
an
inexpensive
flavor
enhancer
and
preserva2ve.

Chloride,
a.k.a.
table
salt
is
the
salt
we
have
been
referring
to
here.
We
recommend
switching
to
Himalayan
or
Cel2c
Sea
Salt
which
have
over
70
minerals
and
are
much
more
valuable

the
body.
