Ethanol fermentation, also referred to as alcoholic fermentation, is a biological process in

which sugars such as glucose, fructose, and sucrose are converted into cellular energy and
thereby produce ethanol and carbon dioxide as metabolic waste products.
Because yeasts perform this process in the absence of oxygen, ethanol fermentation is
classified as anaerobic. Ethanol fermentation occurs in the production of alcoholic
beverages and ethanol fuel, and in the rising of bread dough.

Ingredients:

2kg white sugar

250g yeast
5liters water

Tools:

1. 5.5li plastic water container

2. 6li capacity or more Pressure cooker
3. Copper coil (75mm dia hollow copper tube wound around any medium sized 750ml bottle which
is around 3.5in diameter)
4. Plastic pail
5. Funnel with cotton at the base which serves as a filter
6. Empty 1.5li plastic water container
7. Clear PVC hose (same diameter with the copper tube) 1 meter at each side of the copper coil

Instructions:

Step 1
a. Place the mixture of 2kg sugar and 250g yeast inside the 5.5 li then fill up with water. The
mixture will be a light brown liquid. Close the container with the cap. Keep in room temp.
b. This will undergo fermentation for 1 week. Open the cap everyday to release the gas build up.

Step 2
a. You need to setup the pressure cooker. Remove the whistling cap and try to fit the pvc hose on
the exhaust tip. Make sure that it will grip the exhaust tip tightly, try putting some improvised
vise grips to make sure that this hose will not pop out when the steam finally goes out and when
the heat expands the hose.
b. The wounded copper tube should also be fitted with the pvc hose as shown in the diagram at
both ends.
c. Pour out all the contents of the 5liter mixture inside the pressure cooker then close tightly with
the lid. Heat up under medium flame then once steam builds up, place the hose to divert the
steam through the apparatus.
d. The mixture should be reaching its evaporating state in around 45minutes to 1 hour under the
flame, during this time you can proceed preparing the stuff needed for the following steps.

Step 3
a. Submerge the copper coil under ice cold water, when the steam passes through the cold air
inside the copper wound coil it will force the steam to condensate. Attached to the copper coil is
another pvc hose and the other end of the pvc hose should already be resting inside the funnel
with cotton at the base to act as a filter for the condensate.
b. Make sure that you have enough cold water or recyclable ice inside containers because the
condensation taking place in the copper coil will heat up the water inside the pail. The cold
water helps with the condensation part, when the water is hot, steam will just pass through the
copper coil and through the pvc hose at the other end. It is preferable to prepare another pail
with cold water on standby so that you can just transfer the copper coil to another pail with cold
water. After transferring the coil to the other pail, just replace the warm water in the other pail
with ice cold water while getting ready for the next transfer.

Step 4
a. Test the first few drops of the condensate by gathering a spoonful then lighting it up with the
flame from the stove, this will yield a blue flame and this is the quality of the alcohol which
should be derived. This whole process will take you around 1-1.5hours to fill the whole bottle,
at any rate faster than that then you are compromising the purity of the alcohol.
b. This mixture is good enough to fill the 1.5li of empty water bottle. ¾ along the way, test the
quality of the alcohol by taking another spoonful of the condensate, this will show a yellow
flame and will still light up for a considerable time. If the flame burns out in less than 10
seconds, discard the rest of the mixture. By now you should have gathered enough pure alcohol
which is free from condensate which is just liquid.
c. Using another 1.5liter empty water bottle, transfer the funnel and replace the cotton with a
fresh ball to allow for further filtration.
d. To test for the purity of this alcohol, place the bottle inside the freezer for 3-4hours, if it is
partially frozen, then the mixture is impure and may cause uncalled headaches. If the mixture is
still crystal clear after that period… CONGRATULATIONS! You have succeeded on producing pure
ethanol alcohol.

Note:

1. This 1.5 li mixture is capable of being mixed with approximately 4.5 li of any other juice, this
varies according to your taste, but apple juices work best for me.
2. If you are eating and drinking, it is preferable to mix with citrus softdrinks or soda water to make
it carbonated.
3. Drinking this purely is quite impossible due to its alcohol content, you might notice gagging may
occur while trying this, along with a burning sensation on your esophagus while all teary eyed.
4. To neutralize the smell of cooking this concoction, cook unpleasant smelling foods as a mask for
innocent by-passers
5. As this mixture may be prohibited in some parts of the world, do this under your personal
discretion, this instruction manuscript is a simple experiment for DIY alcohol.
6. Practice makes perfect, enjoy and please feel free to pass on to your friends who enjoy
experiments.
7. Pag nagkita naman tayo, painumin niyo naman ako!

Thanks for believing in Filipino ingenuity!
