Ingredients
300 grams Cauli ower
60 grams Diced Red Onion
30 grams Peanuts
1 Tbsp Butter
1 Tbsp olive oil
1 Tsp Mustard Seeds
1 Tsp Tumeric
1 Green Chilly
8 Curry Leaves Order them here
Salt to Taste
Cilantro/Coriander For garnish
a squeeze of Lime Juice
Servings: 2 servings

Instructions
1. Start by prepping the cauli ower. Separate it into orets and the stalks. Wash
thoroughly.
2. Shape and cut the stalk into cubes to resemble potatoes and rice the orets in a food
processor.
4. Dry roast the peanuts in a frying pan till they get a nice golden brown colour and set
aside
5. In the same pan heat up 1 tbsp olive oil with 1 tbsp butter (alternatively you can use
2 tbsp of ghee instead)
6. Then add in the mustard seeds and once they start popping add in the curry leaves
and the onions.

7. Season with some salt and tumeric and fry out the spice
8. Then add in the peanuts and green chillies and cook for a further minute or so.
9. Add in the cauli ower rice, season with salt, add a splash of water and cover and
cook till tender.
10. Once the cauli ower has cooked add in the fake potatoes and give it all a good mix.
12. Serve.
