Garden Club tribute to honor
members in their senior years for
having given their time and talents
to their local garden clubs. This
year, the Gonzales Garden Club
nominated Ellen Richmond Posey
for the honor. She has been a
member of the club for 20 years
Historian and Chairman of the
Jambalaya Park Butterfly Garden.
Her creative talents have lead her
to present many garden craft
workshops as well as to sew and
embroider personalized garden
tote bags for every club member.

National Garden
Week in Gonzales
Local garden clubs across the
country federated with the
National Garden Clubs, Inc.
celebrated National Garden Week,
June 3-9, 2018. The Gonzales
Garden Club used this opportunity
to encourage pride in their
community by having the mayor
sign a proclamation promoting
the week and placing floral
arrangements at public facilities
along with signs promoting Garden
Week. Some of the facilities that
received arrangements or
container plants were Gonzales
City Hall, the Clerk of Court Office,
the Gonzales Police Department,
Council on Aging, Gonzales
Library, and assisted living
retirement homes. Hopefully
some citizens were inspired to
plant something.

It’s the Sweet,
I Mean Simple,
Things in Life
Ahhh….the summer of 1990. I
recall it so vividly. After a day of
swimming and fun in the sun, I
walked from the back door of my
grandparent’s home towards the
kitchen. Upon entering I could
smell an aroma of vanilla and
lemon from the still warm Lemon
Gooey Butter Cakes my Maw Maw
just baked. (Keep in mind these
were formerly known as Chess
Squares until renamed by Paula
Deen during her stint on the
Food Network).
I also remember not having a care
in the world of my waistline at the
time despite knocking down
several thousand calories from one
sit down session of the sweet snack
just baked. I relished every morsel
considering I created an appetite
larger than the pool after
performing thirty cannon balls.
It’s often those simple things,
those sweet moments that stand
out in our mind when we get
older. Those Ooey Gooey Butter
Cakes are something I cherished as
melt in your mouth confection but
more so as a memorable recipe
from my favorite person on Earth
at the time.
So a few weeks ago, I decided to
share this sweet treasure with my
boyfriend as his three children
while visiting them in Santa Rosa
Beach, FL. it was Memorial Day
weekend, and Tropical Storm
Berto, short for Alberto, was
hitting the coast. But what’s a
group of five to do while
hunkering down waiting to be
blown away by an imminent
storm? Bake of course! That’s it.
“Ooey Gooey Butter Cakes!” I
declared, with excitement and
anticipation of sharing this beloved
yumminess with my boyfriend and
his children. Oh yes…. “Ooey
Gooey Butter Cakes are in order!”
I said.
“What’s that?” the gang replied. I
then reminisced and told them
about how my Maw Maw used to
make these for me when I was
their age.

So I hurried to the store and
grabbed the ingredients and
started baking. Keep in mind the
cakes are two layers, a gooey crust
and a yummy gooier topping.
Here’s the recipe:
For the Crust:
1 regular size butter (makes it
ooey gooier) recipe cake mix
1 egg ( I like to keep at room temp)
16 Tablespoons butter
For the Topping:
1 8 oz. (fully leaded please)
cream cheese, room temperature
2 eggs
1 16 oz. box or bag of
powdered sugar
1 teaspoon vanilla
Set your oven to 350 degrees.
Mix the crust ingredients and
press on the bottom of a
9” x 13’‘ pan. No butter or
Bakers Joy needed because
it’s so buttery!
Make sure your topping
ingredients are all room
temperature (except the
powdered sugar) and beat them
with a whisk or electric beater
until smooth, then slowly add
the powdered sugar have a
smooth custard like blended.
Then pour the topping over the
crust, pop in the oven for an
hour to an hour and a half or
until the top gets golden.
Cut into squares after cooling.
(Keep in mind with this recipe
that it can be any flavor you
desire. The options are truly
limitless. Change the
flavor of cake mix or add
different extracts or add ins to
your topping mixture.
Blueberry, chocolate, lemon,
butter pecan, the world is
truly your oyster!)
So, that’s what I did. I whipped up
some delicious Ooey Gooey Butter
Cakes. Needless to say, five
minutes out of the oven there were
ten Ooey Gooey Butter cakes
down, but more importantly I had
two thirteen year olds, an eight
year old, and a forty six year old
giggling with joy because they
finally had a taste of this
noteworthy sweet treat.
So cherish those moments that
come and go in life, because
sometimes the simplest things in
life can be the sweetest.

Fourth of July, our national
Independence Day. This
celebration may get you thinking
of the many freedoms you enjoy.
But have you thought of what
you might need to do to attain
financial freedom?
Your first step is to define what
financial independence signifies

means being able to retire when
they want to, and to enjoy a
comfortable retirement lifestyle.

New International
Privacy Law

Contrary to what America’s small
business communities believe, the
not-so-foreign General Data
Protection Regulation (GDPR) does
apply to all companies handling the
consumer and user data of European
Union citizens.
GDPR was developed to promote
global data privacy and ensure all
oversea companies are compliant
with the regulations enacted on May
25, 2018. To adapt, small businesses
need to educate themselves about
the new rules set in place.
This international regulation includes
multiple filters to safeguard sensitive
data of customers in the EU. For
instance, third-party entities can be
held accountable for data breaches,
companies must delete user data
upon request, and large-scale data
processing companies must use a
data protection officer (DPO).
Along with these elements of the
new rule, a company must also alert
authorities if there is a breach within
72 hours, underage children must
receive parental consent before
using social media, and users now
reserve the right to transfer their
own information between services.
GDPR can seem overwhelming for
small companies who have yet to
assimilate into this unique culture of
heightened personal data protection
and responsibility; however, there are

multiple ways to get acclimated.
Firstly, a company needs to consider
the types of personal data required
for conducting business. Are banking,
medical or other personal details
necessary? Where will this data be
stored and for how long? Self-reflec-
tion can allow a company to refocus
on what client data is crucial and
what steps are needed to ensure
data is protected.
Secondly, transparency and
consistency need to become top
priorities. The GDPR demands a high
level of honesty when it comes to
personal data. A small business
should thoroughly develop a
privacy policy and protective
measures to abide by.
Lastly, the GDPR insists that
companies listen to customer
inquiries and demands. If a client
would like personal data updated or
deleted, a company is required to
process these requests; while doing
so, fair processing notices should be
delivered to customers.
Companies that follow these
guidelines will be able to continue
doing business with partners and
customers across the oceans;
however, failing to comply with
regulations can result in extreme
penalties.
Total costs of fines could be as much
as 20 million euros ($24.2 million) or
four percent of a company’s annual
revenue, depending on which is
higher, despite intent.
While fines and compensation claims
can be disconcerting, following the
new laws can increase the integrity
of small businesses in the eyes of the
customer. Companies that secure
user data and display complete
transparency tend to build strong
bonds of trust with global
consumers.

Wisdom Teeth

Wisdom teeth, also known as
third molars, are the last teeth to
erupt in your mouth. This gener-
ally occurs between the ages of 17
and 25, a time of life that has been
called the "Age of Wisdom."
Anthropologists note that the
rough diet of early humans re-
sulted in the excessive wear of their
teeth. Normal drifting of the teeth
to compensate for this wear en-
sured that space was available for
most wisdom teeth to erupt by
adolescence. The modern diet,
which is much softer, and the pop-
ularity of orthodontic tooth
straightening procedures produce a
fuller dental arch, which quite
commonly doesn't leave room for
the wisdom teeth to erupt, thereby
setting the stage for problems
when the final four molars enter
the mouth.
What is an Impacted Tooth?
Complications such as infection,
damage to adjacent teeth and the
formation of cysts may arise from
impacted teeth.
A tooth becomes impacted
when there is a lack of space in the
dental arch and its growth and
eruption are prevented by
overlying gum, bone or
another tooth.

How Serious is an
Impacted Tooth?
Impacted teeth can be painful
and lead to infection.They may
also crowd or damage adjacent
teeth or roots.
More serious problems may
occur if the sac surrounding the
impacted tooth becomes filled with
fluid and enlarges to form a cyst.
As the cyst grows it may
hollow out the jaw and
permanently damage adjacent
teeth, the surrounding bone and
nerves. Rarely, if a cyst is not
treated, a tumor may develop
from its walls and a more serious
surgical procedure may be required
to remove it.
Despite the considerable
concern regarding impacted third
molars, a recent study finds that
third molars which have broken
through the tissue and erupted
into the mouth in a normal, up-
right position may be as prone to
disease as those third molars that
remain impacted.
Must the Tooth Come Out
if it Hasn't Caused Any Prob-
lems Yet?
Not all problems related to third
molars are painful or
visible. Damage can occur without
your being aware of it.
As wisdom teeth grow, their
roots become longer, the teeth be-
come more difficult to remove and
complications become more likely.

In addition, impacted
wisdom teeth are more likely to
cause problems as patients age.
No one can predict when third
molar complications will occur, but
when they do, the
circumstances can be much more
painful and the teeth more
difficult to treat.
When Should I Have My Wis-
dom Teeth Removed?
Wisdom teeth are easier to re-
move when the patient is younger,
since their roots are
not completely formed, the
surrounding bone is softer, and
there is less chance of damaging
nearby nerves or other structures.
Removal of wisdom teeth at a later
age becomes more complicated as
the roots have fully developed
(may involve
the nerve), and the jawbone
is denser.
It isn't wise to wait until your
wisdom teeth start to bother you.
In general, earlier removal of
wisdom teeth results in a less
complicated healing process.
The AAOMS study strongly
recommends that wisdom teeth be
removed by the time the patient is
a young adult in order to prevent
future problems and to ensure op-
timal healing.The researchers
found that older patients may be at
greater risk for disease,
including periodontitis, in the
tissues surrounding the third mo-

lars and adjacent teeth. Periodontal
infections, such as those observed
in this study, may affect your gen-
eral health.
What Happens During Sur-
gery?
Before surgery, your dentist
will discuss with you what to ex-
pect. This is a good time to
ask questions or express your
concerns. It is especially important
to let the doctor know about any
illness you have and medications
you are taking.
The relative ease with which a
wisdom tooth may be removed de-
pends on several conditions, in-
cluding the position of the tooth
and root development. Most
wisdom tooth extractions are
performed in the office under local

There was buzz in national news last
month about the potential for tens of
thousands of Louisiana’s nursing
home residents being evicted. The
first draft of the state’s new budget
from the House didn’t appropriate
any money for Medicaid programs

Alletto, told the press that the agency
would notify about 37,000 Medicaid
recipients, whose eligibility to receive

As Ascension Parish continues to grow and the
community becomes more complex and demanding, there
is an increasing need to train responsible and informed
leaders. Leadership Ascension is an innovative program
sponsored by The Ascension Chamber of Commerce to
assist in preparing emerging community leaders for
leadership positions in local government, business and
community affairs. This results-oriented program is
directed by a steering committee of community leaders
and facilitated by the Ascension Chamber of
Commerce Staff.
The purpose is to provide a forum for and increase the
600 alumni.
A maximum of 35 individuals are selected each year to
participate in the program. Since the number of
participants in Leadership Ascension is limited and
selection will be made to reflect the diversity of Ascension
Parish, applicants who are not selected are encouraged to
reapply in subsequent years.
Following an orientation retreat in late August which
explores leadership skills, the class will attend eight
all-day sessions, each focusing on a specific aspect of
Ascension Parish, such as government, education, law
enforcement and economic development. The program
community research projects. Attendance at the opening
and closing retreats are mandatory. Participants who
miss more than two monthly sessions will not be able to
successfully graduate from the program.
Applicants must have the full support of the
organization or corporation they represent.
In addition to learning specific leadership skills and
gaining a broad exposure to the community, participants
also meet their peers in other fields and form
contacts which will benefit their volunteer and
professional activities.
The Ascension Leadership Program also requires groups
projects such as a senior citizen's prom, a mass casualty
response bus, a park in Donaldsonville, a parish-wide
youth mentoring program and countless more positive
examples of volunteerism.
In 2013, a group of Leadership Alumni came together
to launch The Leadership Ascension Foundation. The
main goal of this 501-c-3 foundation is to provide a
resource for the Class to assist in the proper management
of funds that are collected for the various organizations
supported by the class projects.

Youth Legislature program with
nearly 2000 students from around
the state. Students arrived at the
Old State Capitol where they were
elected and appointed to various

bills in committee and on the floor

Summer Songs
You Could Sing
Editor’s note-Like many
grandparents these days, our
vacations are determined by
our grandchildren’s activities-
be they baseball/softball
tournaments, soccer marathons
or dance recitals. One good
thing about being on the road
is that I got to hear some old
Casey Kasem replays on satellite
radio recalling a day before
present-day “radio personali-
ties” who kill themselve
laughing over their not-funny
personal anecdotes. The
following is a tribute I wrote
after Kasem’s death a couple of
summers ago. Man, was that
guy good…
“Keep your feet on the
ground and keep reaching for
the stars…” Casey Kasem’s
signature sign-off.
Casey Kasem signed off for
the last time on June 15, 2014,
leaving us veteran radio listeners
mourning the loss of the classic
voice of the “American Top 40”
and a younger generation
missing the voice of “Shaggy”
Rogers in the TV cartoon
“Scooby-Doo”.
On July 4, 1970, Kasem
launched his weekly program on
which he counted down from
#40 on the pop charts to #1.
But the show was not just about
the countdown. Kasem mixed
in flashbacks, biographical
information and trivia about the
artists and their music, and due
to his “always friendly and up-
beat” baritone voice, the “Top
40” soon went nationwide.
Casem’s shows were required
listening for steamy July days of
yore, especially when hanging
out at the beach listening to
good old-time rock and roll on
your transistor radio.
But alas, here we are in the

modern-day, lazy,
hazy, crazy days of
summer and all we
have to listen to is “Lil
Boosie’s” hit list-and
that’s not one you want to be
included on.
But don’t despair. Welcome
to Wild Bill’s Billboard of
Hits-songs that contain no
profanity, no derogatory
comments about women and
no racial slurs. We’re talking
about the silly songs of summer
here with classic titles like Sam
the Sham’s “Wooly Booly” and
Roger Miller’s “Dang Me”.
And unfortunately, just like a
midsummer night’s All-Star
Baseball Game, somebody has
to get left out. So if you’re
looking for the nonsensical but
non-musical “They’re Coming
to Take Me Away” by
Napoleon XIV, look elsewhere.
We’re talking about big-time
lyrics set to more music than
just a tambourine here. And if
you aren’t familiar with the
songs of the late 50’s and early
60’s, then just Google the
damn items and be done
with it. talking number features a lively “Charlie Brown” in 1959.
For the rest of you faithful dialog between two trash-talk- But for Buckskin Bill fans in
readers, I proudly present Wild ing friends. The insults range Baton Rouge, the Coasters’
Bill’s 10 Greatest Novelty from the clever-“That’s all “Along Came Jones” was
Hits/Artists of all time. By the right, my mama didn’t have to almost as big a hit on the
way, the number one hit on put a sheet over my head so that popular kids’ show as the

Diddley. A tribute to the late, big R&B hit “Young Blood” in railroad track. And then, the
great Bo Diddley who changed 1957, they took some off-beat train was coming. And then,
an entire generation of guitar shots with “Yakety-Yak” and then, and then-ack,ack-and
pickers, this upbeat walking- (“Don’t Talk Back”) and then along came Jones…” to

save the day.
As far as interior rhyme, who
can top the group’s description
of Little Egypt doing her fa-
mous Dance of the Pyramids?
“Little Egypt came out struttin’
wearing nuttin’ but a button
and a bow…”
Man, they don’t write ‘em like
that anymore.
8. Long Tall Texan by
Murray Kellum. In 1963 most
of us weren’t interested in Bob
Dylan’s pleas for ending war
and social injustice-not just yet
anyway. What we really wanted
was a simple, silly 3-chord song
that we could play on our Sears
Silvertones and sing along with.
So when Murray Kellum
introduced his cowboy hero
with the opening lines, “Well
I’m a long tall Texan, I ride a
big, white hoss...” then we
could answer right along with
the background singers, “He
rides from Texas on a big, white
hoss…” See how easy that was.
This one-hit wonder would
have made the list for the final
stanza alone when a lonesome
voice asks the musical
question, “Oh, Roy, oh Roy is
you the law?”
7. Haunted House by Gene
Simmons. Jumpin’ Gene
Simmons was the lead singer for
the Bill Black (No, not Buck-
skin.) Combo in the ‘60’s and is
not to be confused with the
teacher-turned Kiss member of
the same name.
The song “Haunted House”
was first offered to another
Memphis-based rocker
Domingo Samudio- later to be
known as “Sam the Sham”, but
when negotiations broke down,
Simmons volunteered to record
it. Now does that sound like
some of Casey’s trivia or what?
The infectious “Haunted
House was one of the few
novelty songs that teens could
not only sing, but could also
dance to. Even Van Broussard
played it at Moonlight. I was
just never sure what a “haint”
was in the line, “Ain’t no haint
gonna run me off.”
6. (Tie) My Boomerang
Won’t Come Back and Tie
Me Kangaroo Down.
Americans certainly didn’t have
a monopoly on novelty hits back
in the ‘60’s. A couple of
Aussies took their mythical
problems from Down Under
and turned them into chart
toppers on the U.S. rock scene.
In 1962, Charlie Drake scored
with the story of a banished
Aborigine teen who couldn’t
make his ornery boomerang
come back. How could you not
shed Crocodile Dundee tears
when the lost lad lamented,
“I can ride a kangaroo, make
kinkajou stew, But I’m a big
disgrace to the Aborigine race,
My boomerang won’t
come back.”
Rolf Harris followed suit in
1963 with the last requests of a
dying Australian stockman who
not only wants his friends to
“Tie Me Kangaroo Down” after
he’s gone but also leaves some
special instructions for the other
animals including “Take my
koala back, Jack” and “Mind me
platypus duck, Bill…” Eat your
heart out Eminem.
5. The Camp Granada
Song by Allan Sherman.
“Hello, Muddah, hello
Faddah,” begins the ultimate
summer camp song based on
letters Sherman received from
his own whining son when the
boy was sent off to camp.
Among the song’s disasters
are a camper named Leonard
Skinner “who got ptomaine
poisoning last night after
dinner”, and another called Jef-
frey Hardy for whom “They’re
about to organize a searching
party”.
But being the rhyme scheme
addict that I am, I am obliged
to include my favorite lines,
“Now I don’t want this should
scare ya’, But my bunkmate has
malaria…”
Now you try to think up
another rhyme for malaria.
4. Itsy Bitsy Teenie Weenie
Yellow Polka Dot Bikini.
When you consider that this
Brian Hyland classic knocked
Brenda Lee’s “I’m Sorry” out
of Billboard’s top spot in Au-
gust of 1960, you get some idea
of the power of summer silli-
ness.
The shy teen in the song
bought the skimpy bathing suit
because it seemed a good idea at
the time but now she’s having
second thoughts about the
amount of exposure she’s going
to reveal. She cautiously moves
from the locker to a blanket to
the shore and finally makes it
into the water. But now she
faces a new dilemma.
“Now she’s afraid to come

out of the water, And I wonder
what she’s gonna do. Now
she’s afraid to come out of the
water, And the poor little girl’s
turning blue…”
Now what could possibly
knock a novelty song of that
caliber out of the number one
spot on the charts? In 1960 it
was some guy named Elvis
Presley singing “It’s Now or
Never”-perhaps as some advice
to our bikini wearer.
3. Purple People Eater by
Sheb Wooley. Did the
one-eyed, one-horned flying
monster only eat purple people?
Or was he the color purple and
did not discriminate in his diet?
Inquiring minds want to know.
But in the late 50’s no one
seemed to care. The catchy
beat reflected the “Happy
Days” of the era and the words
fueled the public’s fascination
with aliens and flying saucers at
the time.
And in keeping with the frivo-
lous tone of the song, the flying
purple people eater doesn’t eat a
single person of any color and
goes on to get a job in a rock
and roll band. In fact, Wooley
tells us he saw the invader on a
TV show.
“He was blowing it out, really
knocking ‘em dead, playing rock
and roll music through the horn
on his head…”
As a side note, the vaunted
Minnesota Viking defense of the
‘60’s and ‘70’s became known
as the “Purple People Eaters”.
2. Ray Stevens. Where do
you start? Do you favor “Ahab
the Arab” (Try singing that one
in today’s politically-correct
world run amok.)? Or do you
like “Guitarzan” who’s got “a
pet monkey that likes to get
drunky and sing boogie woogie
and it sounds real funkie…”
I know “The Streak” was
probably Ray’s best seller
(“Don’t look, Ethel!”), but one
of his more serious songs
“Everything is Beautiful” won a
Grammy in 1970.
And who cared if he used
canned laughter on most of his
records. The laughter on this
side of the radio was real in-
deed.
1. David Seville and the
Chipmunks. Can you picture
a young David Seville in 1958
playing records (You know, kids,
those big, black CD’s.) at 78
RPM’s instead of 33 or 45
revolutions per minute? The
result was a high-pitched,
sped-up version of the song that
made everybody laugh.
So when David recorded a
song called “Witch Doctor”
about a guy who was unlucky at
love until the witch doctor gave
him some magic words, it was
only natural that the prescrip-
tion was recorded in the high-
pitched voice.
“Oo-ee, oo-ah-ah, ting-tang,
walla-walla bing-bang…”
The song was a huge success
and Seville decided to follow it
up with a complete album in the
high-pitched voices featuring
the skills of a chipmunk trio-
Simon, Theodore and Alvin.
Dave Clark played one of the
“group’s” holiday tunes on
American Bandstand’s
rate-a-record segment and it
received a score of 37 out of
100 because “the kids just
couldn’t dance to it”.
The public apparently dis-
agreed. In just six months after
its release, “The Chipmunk
Song or Christmas, Don’t Be
Late” sold more than four
million records and won
three Grammys.
Now 50-some odd years later,
Alvin and the Chipmunks are
still entertaining young fans
with a TV series, movies and a
video game. That longevity
alone should be enough to
make you number one.
Epilog-Two apologies-If this
piece was too wordy for your
attention span, I was just trying
to incorporate some of Casey’s
history and trivia into the
article. Remember-he did
40 songs-I only did 10.
Secondly, if I left out one of
your favorite novelty songs,
please dress up in “Chantilly
Lace” and form a posse of
“Alley Oop”, “Mr. Custer” and
“King Henry the Eighth” and
meet me on the veranda at
Sammy’s Grill to file a formal
complaint.
Just make sure to bring your
turntable, some old 45’s and a
tub of cold Miller Lite to toast
to Casey Kasem-the greatest
DJ that ever lived.
 Miserable
Not long ago I was questioning
a friend of mine about whether or
not he was going to attend our
yearly Sportsmans League fishing
rodeo weekend at Grand Isle. He
replied that he was not sure if he
was going to attend because a prior
injury made it difficult to climb
steps and the process of going up
and down stairs all weekend at the
campsite can become very difficult.
He then said things would be easier
for him if his wife would attend the
event but she didn't really care to
go. At that point I told him that in
a way I can understand why
someone would not want to attend
a weekend of heat, work, bugs,
getting up early, wind, sand, storms
etc. In my opinion to really enjoy a
weekend at Grand Isle you have to
love some degree of misery.
Hunting and fishing are
definitely my way of life. I attempt
to be in the woods or on the water
every time I have the opportunity
to do so. These adventures, for the
most part, come with some type of
discomfort nearly all the time.
Every now and then you'll connect
on the perfect trip where
everything seems to fall in place
and conditions are perfect. I'm
here to tell you that I've had some
miserable days and nights in my life
of outdoor activity. There has been
many situations when I've decided
to go out there while others that
enjoy the same passion would
decide to stay home. There's also
been a few times that I've been on
that side of the coin, but not
too often.

League he attended the Grand Isle
event and enjoyed every bit of
misery and comfort that came his
way. His wife stayed home and I
assume that she enjoyed her
weekend also. I guess it's whatever
floats your boat. For he and I it's
putting up with whatever
discomfort that we have to, to
enjoy our love for the outdoors and
camaraderie with our friends...

The Pelican Point Golf Club would like to make you aware
that an alligator has been spotted in the pond behind the
playground, near the tenth hole. Louisiana Wildlife and
Fisheries and the Sheriff's Office have been dispatched to
take care of the situation. Please refrain from going near
this area today.
Publisher Note: Imagine that. There has been an alligator
sighting in South Louisiana. It’s almost like alerting us that
there is a chance of rain. I remember on the back 18 hole
course when I might see 3 gators a day.

just a few years ago. Fortunately he was there so I could re-
trieve my new Pro V1 that I thought I had lost.

 Four years ago Doyle ‘The X-Man’ Philippe decided to learn to play golf.
He had some good days and some real bad days. All golfers experience ups
and down while on the course. Doyle fed off his misfortunes. The more
houses he hit the more determined he became. “I think I can, I think I can”
became his motto.
After a few years he decided to have a golf lesson and for a few months he
was worst than ever. Then something clicked. He started hitting fairways,
making birdies and Home Owner’s Insurance went down in Pelican Point.
During the past several months he started beating golfing buddies and
started X-ing them off his hit list.
These days Doyle routinely shoots from 88 to 74. He’s not every day
reliable for a low score but when he’s HOT, he’s HOT. Last month on a HOT
day he made 3 birdies and a Hole-in-One. On the 17th hole at Pelican Point
Doyle hit a shot that jammed the cup like a Dr. J Fly Ramma Jamma. He
drained it on the fly.
Congratulations Doyle but as a far as your X list. Sam Lavigne is
going to be a tough nut to crack.

Congratulations Jambalaya
Association, you have done it
again. This year’s 51st Annual
Festival went off without a
hitch and was a huge success.
I have been attending the
Jambalaya Festival for 40 plus
years and this year’s festival
seemed to have it all. The
food, the events, and the
entertainment makes this event
one of the most diversified
festivals in the state.
A wide variety of entertain-
ment from bands like Eddie
Smith, Mike Broussard & Nite
Train and Chee Weez rocked
the stage while hometown

It was exciting this year when
another first time champion,
Jarrett Marchand with helper
Chad Dixon, was crowned the
World Champion Jambalaya
Title.

Throughout my time at the festival I
ran into to old school Gonzales friends
that always make a reference to the
Festival that was once downtown
Gonzales.
Everybody likes to talk about the days
of old. The success was judged by the
garbage left in the street. As exciting as
those days were the current Jambalaya
Festival represents Gonzales 2018 and
our community. It’s clean, organized,
and full of musical entertainment. Along
with the good time the festival represents

5K Fun Run Jambalaya Festival 2018
 Ingredients:
Cooking Gourmet at Home
with SNO’S SEAFOOD & STEAKS 1 cup grits
4 cups water (unless you are using quick grits-
then follow instructions on package)
2 tablespoons butter
1 cup diced smoked sausage
1 cup diced white onion
½ cup green onions (sliced)
Salt, Red Pepper, Black Pepper to Taste
Method:

In a cast iron pot, thoroughly brown your smoked sausage

then remove from pan. Next, cook your onions in the
same pan until they are beautifully caramelized. Return
your sausage to the pan and you water and butter. Bring
the water to a boil then slowly stir in the grits. Bring
Jambalaya Grits mixture back to a boil, then cover and cook over medium
heat for approximately 40 minutes or until a smooth
Prep: 15 minutes texture is reached. Add salt and pepper to taste.

Cook: 20 minutes You can serve these grits with almost anything.
Pork, seafood, breakfast, brunch, lunch, dinner
