Letter From The Board
Dear friends and supporters

It is indeed a pleasure and a privilege, on behalf of the staff and the Board of

Directors, to welcome some of you back and to welcome some of you for the first

time, to the annual Bow Ties and Tiaras (BT&T ) awareness and fundraiser event for the

Escambia County Healthy Start Coalition (ECHSC).

While this is the third annual ECHSC BT&T event, the Florida legislature actually

created the statewide Healthy Start Program in 1991. The mission remains focused

on reducing infant deaths, decreasing the number of low birth weight babies, and

improving health and developmental outcomes for all Florida babies.

The value of this program was recognized locally by visionary practitioners,

pediatrician Dr. Reed Bell and obstetrician Dr. Eric Geiger as well as by other

community leaders such as Pastor Michael Johnson. These individuals worked with

other community stakeholders to bring the Healthy Start Coalition to Escambia

County in the early 90s.

Tonight you will hear more about these individuals, current ECHSC activities and

services, as well as some of the “opportunities“ (in the parlance of Dr. Bell!) for us all

to embrace as we continue the ECHSC mission “to improve birth outcomes through

community partnerships.“ Because, none of us are as good as all of us!

Chef Silivos has been serving up great Southern food with


a Mediterranean flair for most of his life. From working in the
family restaurant as a boy, to attending the Culinary Institute
of America, to running a family of Pensacola’s culinary favorites,
Chef Silivos is deeply committed to preparing and serving the
best the Gulf Coast has to offer.

Chef Silivos is most widely known for his years at the helm of
the iconic Pensacola restaurant, Skopelos on the Bay, as well as
local favorites Scenic 90 Café and Nancy’s on Scenic Highway.

Chef Silivos now serves as the Executive Chef and Director of


Operations for the newly partnered Skopelos at New World and New World Inn.

History Of Skopelos In Pensacola


Skopelos is a name synonymous with fine dining in Pensacola for over fifty years. Skopelos at New
World is the result of Executive Chef Gus Silivos’ passion for serving great food crafted from the
freshest ingredients available on the Gulf Coast.

Like many Greek immigrant families who moved to Pensacola, the Silivos family hails from the island
of Skopelos, located in the in the western Aegean Sea off the eastern coast of Greece. When Chef
Silivos’ family opened their Pensacola restaurant in 1959, they named it after their former island
home. The restaurant moved east in 1987 from the original spot on Cervantes Street to the Skopelos
on the Bay location on Scenic Highway.

Celebrity Chef Gus Silivos


Chef Silivos began working in the family restaurant at the young age of 11, working his way through
most of the duties in and around the kitchen and dining room. Silivos attended Pensacola Junior
College and the University of West Florida, earning a business degree that has served him well. This
education left Silivos with a solid foundation, but his heart was drawn back to creating in the kitchen.

Silivos attended the Culinary Institute of America for two years before he returned to Pensacola,
where he was instrumental in setting up the culinary program that continues to this day at Pensacola
State College.

With its famous scenic views, Skopelos on the Bay remained a Pensacola institution until closing
their doors shortly after celebrating their 50th Anniversary in 2009. Chef Silivos continued to serve
the people of Pensacola through local favorites Scenic 90 Café and Nancy’s, both of which are still
operating on Scenic Highway.

The Rebirth of Skopelos


When the opportunity arose to partner with Jim Homyak of New World Landing & New World Inn,
Chef Silivos knew it was the right time to bring back Skopelos. Assuming the position of Executive
Chef and Director of Operations for Skopelos at New World and New World Inn, Silivos brings his
Mediterranean-inspired take on Southern cuisine to the downtown area of Pensacola.
How Your Donations Help
The Healthy Start Coalition’s mission is to reduce infant mortality with your help we can do just that.
We offer a wide array of education and support services including programs that help pregnant
women access medical care, provide needed equipment to at-risk infants, and support to bereaved
families.

Highlighted programs include:

Community Resources Improving Births (CRIB):


The Escambia County Healthy Start Coalition and Pensacola Parks and Recreation support the free
CRIB Program educational classes taught by community providers. These classes include health and
dental screenings, finance classes, and legal information for growing families. Each class includes
free professional guidance and resources for those who may not have access or qualify for other
community resources. Door prizes and snacks are provided for families who register in the CRIB
Program. These free classes will begin in Fall 2018, follow the CRIB Program Facebook account for

Century Health Clinic:


Lack of early and consistent prenatal care can lead to poor birth outcomes including preterm delivery,
low birth weight babies, and birth defects. Our Clinic in Century, Florida, addresses the needs of a
rural community by providing quality pediatric and obstetric health care and nutrition counseling
within walking distance. We currently serve nearly 150 women and young children in our clinic every
month.

Every $100 raised can provide a sturdy stroller to a mom who walks to her appointment.

Safe Sleep Survival Kits:


Unsafe sleep environments are one of the leading causes of infant death in the United States. The
Coalition’s Safe Sleep Kits provide vulnerable families with the education and equipment needed to
provide a safe sleep environment for their baby. Our Safe Sleep Survival Kits include a portable Pack n
Play, fitted sheet, Halo sleeper, educational materials, and hands-on instructions.

Every $100 raised can provide a Safe Sleep Survival Kit for a baby who does not have a safe place to
sleep.

Grief Counseling and Support:


Unfortunately some families suffer the heartbreak of losing a child. Specially trained social workers
and therapists can help families navigate their difficult journey from the time of diagnosis through
the tender end of life. We also provide families with grief support kits which include a memory box,
journal, and other supportive materials.

Every $100 raised can provide up to an hour of professional counseling or two families a grief support kit.

Client Stories
Kristine & Clyde:
When Kristine and her husband found
out they were expecting their first child,
they were equally excited and nervous.
They were unsure of what to expect and
being first time parents, they were eager
to participate in both Healthy Start and the
CRIB program. Kristine became more com-
fortable and confident with her parenting
skills as she worked with her Healthy Start
Care Coordinator, Suzie Sundberg. Kristine
credits Healthy Start with mentoring and
supporting her as she learned to set and
achieve her goals.
Kristine explained, “When my son was born, it became a very stressful time because he was born
very premature. Clyde was on oxygen for a while, and my Healthy Start Care Coordination nurse
Suzi was there throughout the whole process to provide courage and support to my new family.”
Kristine and her husband are so thankful to have the CRIB program in our area. “My favorite CRIB
class taught my husband and I about first time home buying. We are hopeful to buy our first home
in the coming year. These classes also gave us a place to make friends with other parents.”

As a first time mom, Kristine found Healthy Start offered so much more support and education for
her and her growing family than she ever anticipated. “This program has been there for my entire
family as it grew!”

Caitlin & Avery:


We met Caitlin when our Century Healthy Start office
first opened. She was pregnant with her third child and
worked at a local fast food restaurant. She struggled
with transportation to work and getting to her prenatal
appointments in Pensacola. Caitlin participated in our
Centering Pregnancy program working with Dr. Julie
DeCesare to receive prenatal coaching within walking
distance of her apartment.

Caitlin delivered baby Avery and needed assistance


with a stroller. Healthy Start was able to provide a stroll-
er in addition to the educational resources she received
during and after her pregnancy. Caitlin credits Healthy
Start with increasing her self-confidence.

“I would love to thank you with everything you have


done for me and my children. Healthy Start has made me
a better Mother for my children.” Caitlin explain that she
now feels that she is someone they can look up to and be
proud to call their mother. Since Avery’s birth, Caitlin has
changed jobs and is now working as a paraprofessional in an assisted living facility.
