WINERY
INTRODUCTION
A winery is a building or property that produces wine, or a business involved in the production of wine, such as a
wine company. Besides wine making equipment, larger wineries may also feature warehouses, bottling lines,
laboratories, and large expanses of tanks known as tank farms.

Wineries typically employ winemakers to produce various wines from grapes by following the winemaking
process. This process involves the fermentation of fruit, as well as blending and aging of the juice. The grapes
may be from vineyards owned by the winery or may be brought in from other locations. Many wineries also give
tours and have cellar doors or tasting rooms where customers can taste wines before they make a purchase.
Winery architecture is very varied and rich and it is used by wineries as a way to promote their wines and
cellar doors.

This thesis concerns the design of a winery and a path through the landscape leading to it. The aim is on the one
hand to design a modern winery that could be visited while producing good quality wine, and on the other hand to
give the opportunity to the visitor to wander and get in touch with the region of the production of wine, following
the route. To design a whole family entertainment space including resident villas, recreational space, party halls,
outdoor and indoor play areas, etc…

HISTORY OF INDIAN WINES.

Viticulture in India has a long history dating back to the time of Indus valley civilization when grape wine were
believed to have been introduced from Persia. Wine making existed throughout most of India’s history but was
particularly encouraged during the time of Portuguese and British colonization of the sub-continent.

Wine consumption has increased from 1 million liters to more than 10 million liters in 2010.

WHY A VINEYARD AND WINERY?

The project has a chance for me to explore a variety of area, which includes

# production facilities

#Hospitality

# Housing

# Exhibition Centre

# Recreational space.

The winery is proposed near gudalur the gateway to three states, Tamil Nadu, Kerala and Karnataka lying
equidistant from both Kerala and Karnataka.

One of the primary goals of the thesis is the composition of a space that the visitor can experience through the
senses of his human body. Some of its original design goals compared to the tactile understanding of space
through the movement of the body are approached with the ¨sinking¨ of the building in the slope of the hill. What
is more in this way the ideal conditions for the process of winemaking are also provided.

The approach and understanding of the landscape was achieved through walking in the region and identifying the
characteristics that consist it: vegetation, ground, sunlight, air flow.

The visitor crosses the vineyards, passes under the trees, rests on the benches, encaves himself in the gradual
sinkings of the ground level. The path suggests a view of the landscape through the senses, with the body of the
visitor to be in constant dialectical relationship with the landscape and himself.

This thesis deals with the design of a winery and a path leading to it. The thesis approaches the way that the total
experience of architectural space is composed of the senses of human body.

The Objectives of the Project:
The project deals with the design of a winery in the, Western Ghats,. The project was developed out of the
issues identified from the context and the thesis investigates how a winery be conceptualized and designed for a
newly developing cool wine and viticulture area, and the reasons for choosing and developing such a design. It
poses such questions as, how should a building of this nature respond to its context and to the sensitive macro
and micro environments within which it will be situated? It is envisaged that part of the developing of the project
will create opportunities for the employment of a large number of members of the local community in terms of
equipping them with skills in viticulture and wine making, and providing more jobs for them in the winery. In
addition, it will promote economic diversity in the area.

STATEMENT OF THE THESIS TOPIC


The selected program is centered on a vineyard. A winery sees a complex transformation of a seed in the
soil to a grape and eventually wine in a glass. The process of wine-making is extremely site specific;
sometimes, several types of grape will grow within one vineyard. A site-specific program compliments an
architecture that is intimately related to its site.

Rather than a 'snapshot' experience of the wine tasting, the program will offer the opportunity to engage in the
whole process of wine making. The typology of the vineyard is one of destination-the visitor uses mainly the
tasting room and has little opportunity to experience the stages of this elaborate process. This project will
propose a new way to experience a winery, from the characteristics of the soil and water, to the smell and
taste of the final product.

For these reasons, there will be a housing component here; people can stay for a certain amount of time. This will
not only inform the process of wine-making but will enhance the appreciation of the final product. By remaining in
the site for an extended period oftime, the user will hope fully understand in a more holistic way, approaching a
sense of place.

The experience of the vineyard will therefore expand to a sensuous experience of the whole day
where the program encourages the user to engage the senses whether bathing, wine tasting or
eating. Favoring some senses over others for certain activities will encourage a heightened use of the
senses. This new 'sensuous destination' would challenge pre-established notions such as that of a
visual- based world and offer a new way of perceiving the world through the body-mind balance as
a whole.

WINERY WASTEWATER

Winery wastewater is primarily generated during the cleaning of winemaking equipment and facilities. The
quantity and quality of wastewater shows seasonal variations. Wastewater handling involves collection, possible
treatment, then disposal and/or reuse.

Peak wastewater generation occurs during the "crush", in other words, when grapes are actively being
processed into juice for fermentation. This process requires large amounts of clean water for washing newly
harvested grapes, and results in a high wastewater output. To a lesser degree, wastewater is produced if
boilers or water conditioning equipment is used.

Themes Emerging from and influencing the design of the project

Four themes guided the research and provided the motivation and conceptualization of the design: firstly, the
understanding of the context and its issues in terms of the development of the local economy and the creation of
employment and of job security; secondly, the understanding of global warming and its effect on the global and
the Indian agricultural industry, in particular, and on Tamil Nadu in areas such as the western ghats and how this
affects the efficiency and sustainability of resources; thirdly an understanding of issues pertaining to the
wine industry and wineries and their changing nature and development in India, specifically in newly developing
cool climate viticulture and wine industry areas. Lastly, the field of viticulture in general, and specifically creating
some urban context recreation space in the outskirts of the city.

Description of the thesis work


The theme of this thesis explores wineries and the unique quality that they possess of essentially being an
industrial factory that has become a place of perceived romanticism, high class and sophistication. A curiosity of
how a factory adopts such a prestigious and desired status is developed, and an exploration of whether the
architecture of a winery has become such because of a collective romanticism and sophistication perceived by
society and does architecture exaggerate this apparent imagery? Could a winery be understood on a multiple
of levels and be able to trace an ‘architectural lineage’ to a typology that is already steeped in similar or
perhaps seminary social readings? By using an understanding of ‘tourism theory’, an exploration of how the
effect of tourism can influence the architecture of a winery and conversely how the winery, where void of the
tourist, architecturally denounces the spatial glamour generally presented to the tourist and returns to being a
factory. By utilising this new understanding of a winery, the question is asked of whether a winery can serve a
larger collective of society and not an exclusive few. By doing so, the winery could be re-scripted and be
transformed from a factory space to space of sophistication to ultimately a space of social contribution.

DESIGN CONSIDERATIONS FOR SITE SELECTION.


CLIMATE:

For cultivation of quality grapes, the plant requires biumal temperature which means two drastic temperature
differences in the same day. The days are to be above 24 degrees and the nights are to be below 18 degrees.

SOIL TYPE:
Black or red soil, but winemakers preferred black soil as it tends to the wine a more acidic flavor.

TOPOGRAPHY:
The vineyards to be located in the leeward side of the mountain and towards the outskirts of the city.

SITE
Gudalur is a picturesque green valley on the way from Mysore to Ooty with a population of 32,605 (1991 census).
It is a gateway to three states, Tamil Nadu, Kerala and Karnataka lying equidistant from both Kerala and
Karnataka. It is the place where all of the three states' boundaries meet.

Gudalur is linked by road to Ooty through NH 67 and this is one of the Nilgiri Ghat Roads. In the other direction,
the same road continues on towards Mysore in Karnataka State. Another road links it to Kerala State. Gudalur
is therefore on the access route to other towns in the district for goods and passengers from the state of
Karnataka and some from the state of Kerala.

Gudalur gets closer to 120 inches of rain in a year. This area is blessed with South West and North East
monsoon. So the predominant crops grown in this hill are coffee, tea, GRAPES, pepper, cardamom and many
cash crops. the height is approximately 3500 feet above se a level.
