Take 6-12 lbs (3 - 6 kgs) of vegetables. Based on your preference either chop, shred or slice them or keep them whole.

Take the starter culture out of the fridge for 15 minutes to activate the bacteria, and then dissolve it in 1 - 2% salt solutions.
■ Add vegetables in a jar or crock filled with the salt solution. Make sure vegetables are fully submerged in the water. Add
herbs spices, and other ingredients if you like.

Seal the jar or crock well and keep it at the room temperature(15 - 35°C) for fermentation. In summers, it generally takes
about 24 - 36 hours to ferment and in winters the fermentation takes about 72 - 96 hours.
