Cleaning Process

Cleaning process includes total 10 steps

Step 01: Preparation

Step 02: Thaw

Step 03: Purge

Step 04: Pre-Rinse

Step 05: Clean

Step 06: Disassemble

Step 07: Clean/Rinse/Lubricate

Step 08: Reassemble

Step 09: Sanitize

Step 10: Load Product


Preparation

Before beginning, please make sure you are


adhering to the following:

Using Clean, Sanitized Gloves at all times

All buckets are food grade quality and have been


cleaned and Sanitized

You are only using Stera-Sheen or Hydra Rinse


products

Only use brushes provided with your machine


(replacements can be ordered from partstown)

Only use the approved NSF cleaning processes


and any variances set by your local health
department
Thaw

Button: CLEAN

Timer: 20min

To begin, remove the inlet regulators from


hopper drain and lay them down inside
the hopper.

Run the machine in CLEAN mode for 10 to


20 minutes. This will begin to thaw the
product (the longer you allow the
machine to run the easier it will be to
purge and clean the machine).

Remove any foam from inside the hopper


with a cup or other
scooping utensil
Purge

Button: CLEAN,OPEN ALL,CLOSE ALL

Using Clean, Sanitized Gloves at all times

Place an empty bucket under spigots.

Put the machine into CLEAN mode

Open all 3 spigots so that product dispenses


into bucket

Once all the product has drained from the


machine, close all spigots

Remove the bucket


Pre-Rinse

Button: CLEAN,OPEN ALL,CLOSE ALL

Pour 2 gallons of water into each hopper

Put the machine into CLEAN mode

Using your barrel brush, clean the insides of


the hopper and the hopper lids so any
attached product drops into the water

Open all 3 spigots so that the water


dispenses into bucket

Once all the water has drained from the


machine, close all spigots

Remove the bucket


Clean

Button: CLEAN,OPEN ALL,CLOSE ALL

Mix 4 gallons of water with 2 packets of Stera-


Sheen Cleaner/Sanitizer

Pour 2 gallons of Cleaner/Sanitizer Mix into


each hopper
Put the machine into CLEAN mode

Using your barrel brush, clean the insides of the


hopper and hopper lids so any attached
product drops into the Cleaner/Sanitizer Mix

Open all 3 spigots so that the Cleaner/Sanitizer


Mix dispenses into bucket

Once all the Cleaner/Sanitizer Mix has drained


from the machine, close all spigots

Remove the bucket Deactivate Soft


Serve Machine
Disassemble

Disassemble machine and place components in either the a


hopper lid or oversize item tray in the following order:

Inlet Regulators (tray) Auger Supports (lid)

Inlet Regulators O-Rings (tray) Auger Support Bushings (lid)

Rosette Caps (tray) Auger Flights (lid)

Dispensing Valves Pins (tray) Auger Gasket (lid)

Dispensing Valves (lid) Auger Gasket O-Ring (lid)

Dispensing Valves O-Rings (lid) Auger (tray)

Door Keys (tray) Once disassembly is complete,


use your barrel brush to clean
inside the freezing cylinder,
ensuring the brush reaches all
Dispense Door (tray)
the way to the back wall

Dispense Door O- Use a Clean Rag to wipe down any water


remaining in the hoppers and freezing cylinder
Rings (lid)
Clean/Rinse/Lubricate

In a 3 compartment sink, fill the 1st compartment with


Stera-Sheen and the second with regular water (note that
sanitization will happen in the soft-serve unit at the end
of the process, so the 3rd compartment is not required
unless specified by your local health department)

Run each component through your clean sink, then rinse


sink. Make sure to use the appropriate brushes to clean
any internal channels in your components

Make sure to clean all lids and trays before


returning any components

Lubricate all black O-Rings, Auger Support


Bushing, and the Hex tip of the auger
Reassemble

Begin reassembly of the Auger in the following order:

Auger Gasket O-Ring

Auger Gasket

Two Rear Auger Flights

Insert Auger into freezing cylinder half way so that the


2nd position auger flight pegs are accessible and facing up

Place the Auger Flight onto the auger, then rotate the auger in
so that the first to Auger Flight pegs are exposed and facing up

Place the Auger Flight onto the auger, then push and rotate the
auger in until it sets in to place

Insert the Auger Support Bushing

Insert the Auger Support, ensuring that it is sitting inside the


freezing cylinder and turned at about 1 O'clock

Place the Dispense Door O-Rings in the O-Ring slot on the


dispense door
Install the Dispense Door back onto the soft serve machine,
ensuring the Orange O-Rings do not pop out of place

Secure the Dispense Door to the Soft Serve Machine, making sure
to finger tighten the keys in a cross pattern

Return the Dispensing Valve O-Rings to the Dispensing Valves

Insert the Dispensing Valves to the Dispensing Door through the


bottom. Make sure the indent in the center valve is facing the
back of the machine

Insert the Dispense Valve Pins back into the Dispense Valves

Return the Inlet Regulator O-Rings to the Inlet Regulators

Lay the Inlet Regulators inside the hopper (do not insert into the
drain at this time)

Place the Rosette Caps inside the hopper


Sanitize

Button: CLEAN,OPEN ALL,CLOSE ALL

Open all 3 spigots so that the

Cleaner/ Sanitizer Mix dispenses
into bucket

Mix 4 gallons of water with 2 packets of Once all the Cleaner/Sanitizer Mix

them on the Delivery Door

Pour 2 gallons of Cleaner/ Sanitizer Mix


into each hopper Take one carton of the product you
intend to put into the machine and
pour around the side of the hopper.
This should push all the remaining
Put the machine into CLEAN mode sanitizer in the hopper towards the
drain.

Watch the flow from the Dispensing


Using your barrel brush, clean the insides Spigots. Clear Sanitizer will run out of
of the hopper with the Cleaner/Sanitizer it, followed by product. Once you see
Mix pure product comping out of the
spigot, close the valve.

Allow to run for about 5 minutes. The Repeat this process for both sides.

the bucket from the Deliver Door

Put the machine back into CLEAN mode Place the Machine into Sleep Mode
Load Product
Button: SERVE

Timer: 8-10 min

Using a fresh pair of sanitized gloves, place the inlet regulators into the
drain of their respective hoppers. Ensure that the small tube on the
bottom of the inlet regulator is angled toward the right of the machine,
regardless of which hopper it is being inserted into

Set the inlet regulator to the appropriate setting (use 2 by default. Thicker
products should be set to 3, while thinner product can be set to 1)

Pour all the product you intend to use into either hopper (at minimum you
should have at least 2 gallons in either side)

Watch the front of the Dispensing Door. When either side of the Freezing
Cylinders appear to have filled to about 2/3 of the way up, put that side of
the machine into Serve Mode

Repeat the previous step for the other Freezing Cylinder

In 8-10 minutes you will have frozen product ready to serve

*Note: the serving size for the first 3-5 pours may be very large. Pour a few
samples after loading product before attempting to dial in serving sizes.
