CHEESE’S SELECTION

Our cheese menu is composed by about two dozen different types selected among the most
interesting Italian and European dairy specialities.
Alongside the great traditional Italian classics, you will be able to taste cheeses from the
Roman countryside, some rarities from around the Mediterranean, or move through
interesting historical itineraries which recount stories of cheeses from the Padano or
Appenine areas, but also of some gems from France, Spain and Great Britain.
We suggest a selection based on the route which most piques your curiosity, and to allow
yourself to be accompanied by the infinite pleasure which only cheeses can give:
they are all made with only three ingredients (milk, salt and rennet),
history adding all the rest.
