My capstone project is to make healthy recipes for people who are diabetic and

prediabetic to show them that they can eat what they like and still be healthy. This includes

turning normal recipes into healthier alternatives and make sure we use diabetic friendly

ingredients. The reason why I chose to do this project was because one of my family members is

diabetic and I wanted to help them see that they can still enjoy the foods they love by just

replacing some of the ingredients to healthier ones. When I first started this project I was hoping

to find lots of recipes to do but it turns out that they can’t eat certain things. The solution was to

limit the portions of ingredients based on the amount of carbs they could eat. What I hoped to

learn from the process was to learn how to cook and to find ways to be healthier. The steps I

planned to take at the beginning were to research what types of foods I would have to avoid, find

the types of foods I wanted to cook, write down the recipes, and edit and film. Some of the

obstacles I encountered were finding the ingredients I needed and being able to see what days we

could work on the videos since my partners and I worked. The first thing we did was create the

Instagram page for our project then we started coming up with ideas for what to cook and finally

we started making videos and uploading them on our page. One thing I feel like I accomplished

was that I learned how to cook. The things I learned from this project was that there are ways to

be healthier and people with diabetes struggle when trying to find foods they like due to the

amount of sugars, salts and other things they can have. One thing I learned about myself is that I

can definitely know how to cook I just need to actually try and also I learned that I enjoy

cooking. What I'm most particularly proud of are our dishes we made and they tasted really

good. One thing I wish I would have done differently was making more people try our food and

getting feedback from them. I believe we did make a small differences because both my aunt and

my grandmother created these recipes later on and they really enjoyed it. If I had more time I

would create more videos so that people have lots of options to choose from. Some advice I

would give to incoming Seniors would be to manage their time and to know how much time it

would take them to do their project.
