What we really need is: Triacylglycerol (TAG) or triglyceride.


TAG …. consisting of 3 any fatty acids (saturated (lauric (C12:0), myristic
(C14:0), palmitic (C16:0), stearic (C18:0), … (C20 -22) and unsaturated (oleic
(C18:1), linoleic (C18:2) and linolenic (C18:3) … (C20, 21, 22,… 2.. : 1- 20)) on
a glycerol molecule, definite IV, definitive melting point and definitive texture.

The hydrolysis of oil to FFA by lipases, happens in every oil bearing
vegetable tissue; in seed, mesocarp or kernel.

Whilst the chemistry is the same, almost every plant tissue and the cells
within records lower incidence of FFA.

BUT palm mesocarp cells want to be different!!!

This is a unique fruit for its mesocarp cell contains but a large oil body. It’s up
to us to do everything we can to maintain the integrity of the cell, oil body and
its’ oil from the marauding lipases. Through this action we can sustain the
natural, wholesome and awesome oil or TAG molecules and not being
blemished by FFA, DAG and MAG.
