CHAPTER 1

THE PROBLEM AND ITS BACKGROUND

A bartender is someone who has knowledge to serve and mixes

drinks to customers, either directly or through waitresses and waiters

who place drink orders in the dining table or dining room of the bar.

Bartenders play a key role in the overall health and safety conditions

in nightlife environments. They administer alcohol beverages to

patrons and along with other staff such as bouncers and DJs,

contribute to the regulation of those environments.

In addition environmental health research on bartenders has so

far focused mainly on exposure to cigarette smoke and subsequent

risks of respiratory and cardiovascular disease, a problem addressed

by recent legislation against indoor smoking in many countries which

has led to improved health status for nightlife workers. “It’s an

unconscious thing,” According to Justice (2014), an award-winning

bartender and general manager of The Franklin Bar and The Upstairs

Bar in Philadelphia.

Furthermore according to Hidalgo (2016), "There are the people

that are just hard to please, maybe want more attention than you can

realistically give, and you do the best that you can”. Being a bartender

one of his responsibility is to prevent the intoxicated costumers, it is

involved in serving a patron who was harmed another as a result of

drinking. And also according to Gander (2014), “Making a genuine

impact of people’s nights is always rewarding," she adds. "Even if they

won’t remember it the next day, I will." Especially to people who

spending his sleep at nights needs a rewards to return his tired and

hard at work.

Bartenders also usually serves as the public image of the bar they

tend, contributing to as well as reflecting the atmosphere of the bar.

accurately and without waste. This study aims to know they lived

experiences of Male Bartender to understand and explore their lives

in order to pursue a career that will help them to become a better

individual.

STATEMENT OF THE PROBLEM

The study aimed to describe and explore the challenges

experiences of bartenders in selected bars. Specially, it sought to

answer the following questions:

1. What are the challenges experienced by bartenders?

2. How may the bartenders deal with the challenges they

have experienced?

3. What are the implication of those insight?

REVIEW OF RELATED LITERATURE

This chapter presents some foreign and local literature &

studies related to bartenders. Relevance to present studies gave a big

picture why this literature and studies from local to foreign are used.

Literature

A writing in which expression and form, in connection with ideas

of permanent and universal interest, are characteristics or essential

features, articles, books etc.

Local

Garcia (2018), stated that Bartending is not easy. It takes a lot

of skills – from memorization to accuracy – to become a bartender. It

takes practice to create that perfect glass of Old fashioned, Mojito,

Margarita and etc. To be a good bartender you need to be quick and

engaging.
METRO MANILA COLLEGE 9

INQUIRIES, INVESTIGATION, AND IMMERSION

Panafiel (2018), explain that aside from knowing recipes, a

good bartender also has to be quick and engaging. A bartender also

needs to know what kind of glass is used for a specific drink, the

amount of ice, how to properly open a wine bottle. She says, “It’s a

difficult job because you need to learn a lot of things. As of now, I still

need to learn a lot more.”

Therefore, according to Bolstand (2014), when the majority of

income is determined by customer discretion contingent on arbitrary

and fluctuating social norms, tipped employees are subjected to an

unequal and undefined power structure. In stark contrast to most

other low or semi-skilled service sectors jobs, bartending is a relatively

high paying service sectors occupation.

METRO MANILA COLLEGE 10

INQUIRIES, INVESTIGATION, AND IMMERSION

Foreign

According to Farrell (2015), bartending has historically been

seen as a dead-end jobs, a job for people with no brains or ambition.

But this is just one of the countless things that makes bartending such

as a job a true bartender will simply listen to this, all the while knowing

that they are so madly in love with and passionate about a job and a

skills that the people asking these questions will just never understand.

Mandler (2016), study reveal that Bartenders and their trade

are surrounded by much concern critique and controversy in the

research literature. Several studies have shown that the occupation of

bartenders carries a range of risks including those associated with

working late hours.

Therefore, according to Haven (2015), Bartenders state side are

so much more quality. It is a genuine profession, generally a number

of years’ experience, everything about the different spirits that’s on

offer or the variants of cocktails. Buying a round of drinks and soft

drinks aren’t charged for, drinking alone and tip well 4th drink is on the

house.

Jhonston & Mr. Regan (2017), stated that bartender dread

patrons who lapse into indecision, turn to distracted friends or

suddenly remember the menu. Bartenders also urged patrons not to

separate specific drinks from a group tab. “it’s simpler to make them

all together”, “it’s our business to serve you but also to keep moving.

When you’re not ready, that’s wasting our time.

Lastly, according to Buvki & Tutenges (2017), bartenders are

encouraged by their managers to sell as much as possible, but at the

same time they are supposed to obey the law against over serving

alcohol to intoxicated and underage patrons. Previous research

provides many examples of how bartenders develop shortcuts and

bend rules in order to make their jobs more manageable.

METRO MANILA COLLEGE 12

INQUIRIES, INVESTIGATION, AND IMMERSION

Studies

A careful examination or analysis of a phenomenon,

development, or question.

Local

According to the (Bar and Beverage Service Book) by Rojo

(2018), A bartenders should always use a jigger when pouring ad

serving the drinks. It depends also on the policy or standard practice

in a particular bar. Some are using free pouring. But bartenders must

able to master the technique on how to do free pouring without

sacrificing the quality of the drink.

However, according to (www.edukasyon.ph, 2015) A

bartender is someone who mixes and serves drinks to customers, they

must know a wide range of drink recipes and be able to mix drinks

accurately, quickly, and without waste. Bartenders work in restaurants,

METRO MANILA COLLEGE 13

INQUIRIES, INVESTIGATION, AND IMMERSION

bars, clubs, hotels, and other food service establishments.

Frazer (2017), stated that Bartending makes for an interesting

study. Bartenders exist in a “default career” mode of employment that

is stigmatized for being low-status, low-skilled labor. Performing

emotional labor and managing resulting in constant identity work on

and off the job.

According to Bar and Beverages Service Book (2018)

although bartenders have the same standard operational procedures

to follow, they generally differ in ways, styles, techniques in promoting

and maintaining a higher standard of service to the customer. Either

learned or acquired through the years, this extra know how in serving

or more knowledge of quality liquor, wine, beverage makes the

bartender a better one the next time around.

Foreign

According to Datausa (2016), bartender are most often

METRO MANILA COLLEGE 14

INQUIRIES, INVESTIGATION, AND IMMERSION

employed by the restaurant and food service industry. The average

yearly wage for bartenders was $24,390. The top 3 most similar

occupations to bartenders by wage are hairdressers, hairstylists, &

cosmetologists, sewing machine operators and textile winding,

twisting, & drawing out machine setters, operators, & tenders.

Bartenders are part of the food preparation & serving related

occupation category, along with chefs & head cooks. First line

supervisor of food preparation & serving workers, cooks, food

preparation works, combined food preparation $ serving workers,

including fast-food and counter attendances, cafeteria, food

concession, & coffee shop.

Ocampo (2016), study reveal that bartenders and mixologists

are fast becoming celebrities. Much like chefs, they have become

superstars in the food and beverage industry, impressing people with

their crafty cocktails and innovations in their libations. But beyond

serving us with delicious drinks, they are gaining ground and ardent

fans with the way they interact with their guests, juggle their way

behind the counter, and provide them with smooth moves and sweet

talk.

Umlas (2015), stated that Filipino bartenders are amazing in

mixing drinks and flairing a term used by bartenders to entertain

customers by tossing up bottles or cocktail shakers up in the air.

METHODS OF RESEARCH

This chapter presents the methods and procedures of research

applied to gather the needed data. It contains the research design,

participants, sampling technique, instruments used and the treatment

of the data.

RESEARCH DESIGN

Qualitative is a descriptive study is the methods of choice when

straight description of phenomenology desired. It includes focus

groups depth interview describe analysis of social phenomenon.

According to Nassaji (2015), descriptive research is to describe

phenomenon and its characteristics. This research is more concerned

with that ether how or why something has happened.

SELECTION OF CO-RESEARCHERS

In this study, the researchers interviewed three 3 Male Bartenders

in selected bars. The researchers also assured that the co-researchers

were waiting to search their experiences as a male bartenders.

SAMPLING TECHNIQUE

According to Crossman (2018), a purposive sample is a non-

probability sample that is selected based on characteristics of a

population and the objective of the study. Furthermore, according to

Foley (2018), purposive sampling is also known as judgmental,

selected, or subjective sampling, is a form of non-probability sampling

in which researchers rely on their own judgment when choosing

members of the population to participate in their study.

RESEARCH INSTRUMENT

The researchers utilized the following research instruments in

gathering data.

Interview

According to Patton (2015), it serves to help the interview to

relay important bits of information to the interviewee, such as stating

or rotating the purpose of the interview, what will happen to the

information detained and any confidentiality concerns.

Voice Recording

According to Ash (2014), Students in Oklahoma are using digital

voice recorders to capture family and local community history,

elementary school students in Oregon are teaming up with the state

park system to create educational podcasts with the audio devices,

and foreign language students are recording and playing back lessons

to practice pronunciation and vocabulary.

Treatment of Data

In the data analysis, the researchers listened to the records and

watched the videos several times, transcribed and translate the stories

and data we gathered, and evaluated the transcripts manually to

derive with the appropriate, accurate and relevant themes.

So yung oras ng trabaho

family naming kahit ganun.

kasi kabisaduhin o gawin minsan.

Is

or cocktails.

Thank you so much.

Co-Researcher A (Captain)

The life of being a bartender is you can gain more knowledge in

cocktails and how you will mix it. As a drinker, it is more advantage to

be a Bartender because I can serve myself a high class cocktails when

I'm not at work. So the working hours of a bartender is same as the

office Staff, casual 8 hours. So we also have overtime (OT) but it

happens when the staff is insufficient or inadequate man, so we also

paid when we have OT but we assure that we always have a time for

our family. I go to this field of being a bartender because it is required,

we are required here to be a bartender but there is a position to be

apply for bartender but we do all our best to be a bartender and I also

teach them how to mix a cocktails but they not totally memorize the

recipe or ingredients of the cocktails because sometimes it is really

hard to do it. Yes, we are good in encountering people, because of

my experience in our dining is almost 3 years but I am now the captain

or team leader here so I have qualities that I met for our customers,

I think that’s the quality that the manager seen to promote me or

chose me. Drunk? Yes we have, we already encountered a drunk

METRO MANILA COLLEGE 23

INQUIRIES, INVESTIGATION, AND IMMERSION

customer. We handle them in a right way or like a regular customers.

Sometimes we limit them because we also have encountered that they

are already tipsy when they enter our restaurant but they don’t cause

any chaos or commotion here in our place, we explain to them our

policy and we also based their actions or what we sees in them and

as a Drinker, I know the limits when the person is under the spirit of

beer. Before we already encountered a customer that we have to take

her to the taxi station to get home, our manager give us a permission

to find her I.D to know her address and we say to the driver of the

taxi cab that he must take her home safely and we also get the plate

number of the cab, so just in case that there an accident or

unexpected situation happens we have an information about the taxi

and we can ask him what happened to our customer. The benefits of

a bartender is an additional knowledge and skills, also I can serve my

family a high class drinks and cocktails when we have a occasions in

our house, they request me to mix them a cocktails for their drink

session. Before I only see bars and mixing cocktails in television, now

I already apply what I have learned in some videos that I watched.

METRO MANILA COLLEGE 24

INQUIRIES, INVESTIGATION, AND IMMERSION

My advice to the future bartenders, if you really want to be a bartender,

it will become easy to learn the techniques in bartending, because it

is my decision to learn some ways to be a bartender. Before there is

someone that is assign in a position of a bartender but it is my will to

learn it to help our bar or in live and also it can enhance my knowledge

and skills in bar or mixology, whenever our bartender is in live or

absent that is why I realize to observe and I insert efforts in learning

some ways in bartending. Thank you so much!

Co-Researcher B (Bartista)

pamilya kami kaunti nalang yung time namin so ayun di namin

METRO MANILA COLLEGE 25

INQUIRIES, INVESTIGATION, AND IMMERSION

trabaho mo . Ilang oras kami magtrabaho?

or gabi ang operating hours ng bars pero since kasi coffee and bar

METRO MANILA COLLEGE 26

INQUIRIES, INVESTIGATION, AND IMMERSION

mayroon.

marami kasi yung utak mo kasi gumagana lahat kasi ikaw yung front

ng customer. So kumbaga kahit bulong maririnig mo tapos nadadala

mo sya lahat kunwari kahit nasa bahay ako, tulog ako parang

mas medaling matuto at masanay. Dapat mabilis kumilos and

Co-Researcher B (Barista)

I can say that a life of being a bartender is terrible, it is really hard.

Because our life is at night and in the morning we our off or close

then we also have a family so it really affect our quality time to them

but at least we always have time to bonding even though it is a little

time. How many ours we spend our time in our work? 8-9 hours, for
METRO MANILA COLLEGE 27

INQUIRIES, INVESTIGATION, AND IMMERSION

me it is okay. So before, I really want to be a Chef and then it makes

me realize that I really want to be a Bartender or the one who mix

the cocktails then I took up the bartending course in college to be a

a qualified bartender. For me, I don’t have struggle to be a bartender

because it is what I want. I already encountered a female that is

already under of a spirit of beer but she has a company. Example they

are importunate? Then we will also importunate, what they are

actions it is also our actions but we don’t show disrespect to them.

Also we limit them. Underage? It is very rare because it is rare to have

a minor here, but I already encounter that she is look like a minor. I

directly ask her if what her age is and it turns out that she is at the

legal age. There is many benefits of being a bartender, because your

brain is the one who really function here because you are the one who

will front at customer. Even the whisper, you can also here it. You will

also can bring it anywhere, example even at my apartment I was

asleep then I am easy to wake up or get interrupted by the noise of

others. Then sometimes I think I have a order to made. I am a person

who is super alert. My advice to the future bartender, it is only my

METRO MANILA COLLEGE 28

opinion, when you want to be a bartender or want to be my assistant

and when I will teach him/he, whenever I do something he also need

to follow it step by step.

Co-Researcher C (Chill)

METRO MANILA COLLEGE 29

INQUIRIES, INVESTIGATION, AND IMMERSION

pagod talaga Oo meron yun nga overtime namin 3-4 hours at syempre

may bayad pa din yun kasi work namin yun.

naman sakanya at nagging maayos an pag-uusap namn at he said

METRO MANILA COLLEGE 30

INQUIRIES, INVESTIGATION, AND IMMERSION

tapos sabihin mo bartender kana. Kailangan alam mo yung tamang

measure ng liquor na ititimpla mo. Thank you rin.

Co-Researcher C (Chill)

Being a bartender there is a moment that you’ll enjoy the night but

there is also a moment that the sadness because our work time is

night shift and you’ll feel your tiredness but it is worth it because I am

doing this for my family, our work is to serve a bunch of people, you

have also a time to socialize with other people and you can also make

friends in your workplace. When you are a bartender you need energy

drink to energize your body then when I got home I am going to take

care of my children then relax my body to recharge my energy.

There is no problem being a bartender because it enhance my skills

in mixing an alcoholic beverages or non-alcoholic beverages and it is

feels good when I am mixing an alcoholic beverages then it makes

myself proud because I know that our customer have faith in our skills.

So our working hours is same as the other work hours, our working

hours is 8 hours then sometimes when my co-bartender didn’t arrive

early, I will extend 3 – 4 more hours to wait him to arrive, that’s why

when I got home I really felt tired. Yes it is my choice to be in this

field, to be a bartender because I really want to be a bartender, mixing

an alcoholic beverages or non-alcoholic. Whenever I watch a videos

about the bartending or mixing drinks. Struggles being a bartender

when I encountered a drunk customer that want to order hard drinks

but I decline his request because he is already drunk because

according to our policy when a customer is already drunk you must

limit them or don’t give more hard drinks that is why he make a chaos

or commotion in my workplace but I called a bouncer to stop him from

getting reckless and when he stop, our bouncer and I talked to him

calmly and explain our policy for him to understand and he said sorry

at the end then he bid goodbye. My reaction for underage that faking

his/her age just to enter our bar, it is depends on his face because

there is a person that has a baby face but he is already in legal age

but also there is a person that in illegal or underage that has a

matured face but our guard make sure that no underage will be enter

this bar. Our benefits being a bartender, is you can have more

knowledge and in my work where I get my allowance and expenses

for my family. My monthly allowance is for my family and I get it from

my work. I am thankful that I am a bartender even though it is a tiring

work but in the end of the day it is worth it. My advice to the future

bartenders be responsible, you also need to study all the recipes of

the beverages, you need to memorize it to have a good taste of a

beverages and also you need to be a fast learner. You will become a

professional bartender when you meet the quality of it but I know if

you really want to be a bartender, study hard and be responsible at

you will mix. Thank you so much!

and the co-researchers are not the same place. On the next days, the

researchers started transcription the raw data’s based on the voice

record of their actual interviews with the male bartenders.

On April 2, 2019 the researchers worked on typing transcript data’s.

On that day also, they’ve already translated it. At first, they don’t know

what to do in translating the collected data. Because in translating,

we already have to eliminate the information that we think has no

connection to the research and choose the most important details.

Connection to the research and choose the most important details.

After doing that certain process, the researchers already started

on making the themes of the research and they have realized the

importance of time

After making the themes and symbol, they started to make

findings and conclusions on the same day. After all the struggles that

the researchers came up to, they were still able to finish it. They

learned that after all stress and tiredness, they will achieve the

successful research.

RESEARCH REFLECTION

The following themes emerged from the reflections made by the

researchers on the challenges experiences of bartenders:

1. Male Bartenders has a benefits.

According to Merriam Webster (2019), benefits is something

that produces good or helpful results or effects or that promotes

well-being.

Co-Researcher A (Captain) stated that “Benefits ng isang

bartender?

class na alak or cocktails.

(The benefits of a bartender is an

additional knowledge and skills, also I can serve my family a high class

drinks and cocktails when we have a occasions in our house, they

request me to mix them a cocktails for their drink session. Before I

only see bars and mixing cocktails in television, now I already apply

what I have learned in some videos that I watched).

Co-Researcher B (Barista) stated that “Benefits ng isang

bartender ay marami kasi yung utak mo kasi gumagana lahat kasi

ikaw yung front ng customer. So kumbaga kahit bulong maririnig mo

tapos nadadala mo sya lahat kunwari kahit nasa bahay ako, tulog ako

parang naalimpungatan ako tapos iniisip ko na may order ganun

parang sobrang alert ko kahit asa bahay.” (There is many benefits of

being a bartender, because your brain is the one who really function

here because you are the one who will front at customer. Even the

whisper, you can also here it. You will also can bring it anywhere,

example even at my apartment I was asleep then I am easy to wake

up or get interrupted by the noise of others. Then sometimes I think

I have an order to made. I am a person who is super alert).

(Benefits being a bartender, is you can have more knowledge and in

my work where I get my allowance and expenses for my family. My

monthly allowance is for my family and I get it from my work. I am

thankful that I am a bartender even though it is a tiring work but in

the end of the day it is worth it).

2. Male bartenders are skilled enough.

According to Cambridge Dictionary (2018) skilled is having

the abilities needed to do an activity or job well.

Co-Researcher A (Captain) stated that “additional knowledge

(Additional

knowledge and skills, also I can serve my family a high class drinks

and cocktails when we have a occasions in our house, they request

me to mix them a cocktails for their drink session).

Co-Researcher B (Barista) stated that “bartending yung kinuha

really want to be a Bartender or the one who mix the cocktails then I

took up the bartending course in college to be a qualified bartender).

Co-Researcher C (Chill) stated that “Okay naman maging

namin.” (There is no problem being a bartender because it enhance

my skills in mixing an alcoholic beverages or non-alcoholic beverages

and it is feels good when I am mixing an alcoholic beverages then it

makes myself proud because I know that our customer have faith in

our skills).

3. Male Bartenders has its limits.

According to Merriam Webster (2019), limits is something that

bounds, restrains, or confines.

Co-Researcher A (Captain) “Yung pag-handle tamang

(Sometimes

we limit them because we also have encountered that they are already

tipsy).

kaming binibigay sakanila”. (Example they are importunate? Then we

will also importunate, what they are actions it is also our actions but

we don’t show disrespect to them. Also we limit them).

yung sinabi ko so okay naman sakanya at nagging maayos an pag-

uusap namn at he said sorry dahil sa nangyari kaya ayun.” (hard drinks

but I decline his request because he is already drunk because

according to our policy when a customer is already drunk you must

limit them or don’t give more hard drinks that is why he make a chaos

or commotion in my workplace but I called a bouncer to stop him from

getting reckless and when he stop, our bouncer and I talked to him

calmly and explain our policy for him to understand and he said sorry

at the end then he bid goodbye.)

Based on the co-researchers interview the advantage of learning

bartending services are that you can created a drink on your own and

you can improve our communication skills in this field. The

disadvantage of this is before you become a bartender you must know

all the kind of the non-alcoholic and alcoholic beverages and its

content and it is very sensitive because just one wrong in mixing a

drinks you might receive a complaint from the guest.

The opportunities in having this work and the essence of the

learning this bartending services is you can have bright future and

also can enhance more skills and knowledge.

RECOMMENDATION

The following recommendations are offered for related research

in the lived experiences of Male Bartenders:

Bartenders, in order to gain more knowledge they must study

more about their profession to become more advance and updated

like in other countries to enhance their skills, creative and critical

thinking because of that are country will rise up in terms of creating

some alcoholic drinks that they’ve never seen before, give some extra

effort not only to their career in the top even if it’s hard.

HRM/HRS/TVL STUDENTS, this study will be applicable for

their chosen course and also to familiarize more about cocktail and

bartending.

Future Male Bartenders, we have this some bartenders that

have this excellent skill but failed in some mix of cocktails.

Future Researchers, the researchers recommended this study

as a future references and guide for their study related to the lived

experiences of bartender.

SYMBOLISM

Flair bottle

The researchers choose to symbolize the male Bartenders as a

Flair Bottle because it is their material to serve the customer right.

Flair bottle play big a role being a bartender because it is what they

use for entertainment in their workplace.

It is also serves as the material that they shake or juggle to make

a good taste of cocktail that the customer want.

They signify here because it is their way to express their skills and

knowledge in mixing an alcoholic and non-alcoholic beverages.

Bartenders who has really good in flairing they can have a tips when

a customer impress in their techniques in flairing.

They also symbolize as flair bottle because it is also used to stored

first or absorbs the alcoholic and non-alcoholic beverages, like the

bartenders they are the one who absorbs first the complaints of the

customer but they chose to ignore it like the flair bottle, it ignores the

strong smell of the alcoholic beverages.
