Development of Spray Dried Milk Powder Using Milk from A2 Genotyped Native Cattle
The research work was carried with the objective of identifying A1 and A2 variants of the beta casein gene in
Umbalachery breed and to develop spray dried milk powder from A2 milk. T-ARMS PCR was used to
analysis A1 and A2 beta casein variants in Umbalachery cattle. The proximate analysis of the spray dried
whole milk powder from A2 milk for moisture, ash, fat, protein, carbohydrate and total solids contents were
determined. The accelerated shelf life testing revealed that the developed spray dried whole milk powder
from A2 milk could be claimed to possess a shelf life of one month.
