INTRODUCTION 
 
Chocolate have always been favorite 
among children and a reason of 
worry among parents. 
Recently, they were thrown into 
controversy over the alleged ​Nickel 
content in them. 
 
Researchers have proved that 
Nickel is present in most of the 
chocolate and its intake can be very 
dangerous to us. Since then various 
brand have been trying to prove 
absence of nickel content in their 
chocolate and have now come out 
with improve process to reduce the 
nickel content. 
 
This project is about finding out 
whether "Nickel is present or absent 
in the given sample of chocolate." 
 
Nickel are determined in the 
different brands of chocolate and 
candies available in the market of 
suburban area of Delhi, India. 
 
 
 
 
 
 
 
FOREWORD 
 
The future of any Nation depends 
on the Health property and 
progress of the forthcoming 
generation. In the present era of 
industrialization and development, 
one concern should be the health of 
the future generation. Children are 
the most vulnerable age group of 
any kind of contamination of food 
chain. 
It was recently published in a 
national newspaper that there was 
Nickel poisoning in a certain brand 
of chocolates (name of the brand 
was not published). 
Role of Nickel in 
Chocolate 
 
Nickel is added to chocolate for 
increasing their melting point and 
for preventing it from melting at 
normal temperature. 
 
NICKEL 
 
NICKEL is transition element with 
atomic number 28 and has the 
configuration: 
1s²2s²2p63s²3p64s²3d8 
 
It has two unpaired electron so it is 
paramagnetic. 
Nickel is silvery - white, hard, 
malleable and ductile metal. 
 
It is a fairly good conductor of heat 
and electricity. 
 
Nickel dissolves slowly in dilute 
acids but, like iron becomes passive 
when treated with HNO​3​. 
 
Most nickel compound are ​blue​ or 
green​. 

 
EXPERIMENT 
 
Aim 
To detect the presence of nickel 
content in various brands of 
chocolate. 
 
Chemical Required 
 
1. Concentrated hydrochloric acid 
(HCl) 
2. Nitric acid (HNO​3​) 
3. Ammonium hydroxide 
(NH​4​OH) 
4. Ammonium chloride (NH​4​Cl) 
5. D.M.G. (Dimethylglyoxime) 
6. H​2​S 
CHEMISTRY OF 
TEST FOR PRESENCE 
OF NICKEL 
 
To detect the presence of Nickel 
in chocolate, Group IV test is 
performed. Fourth group 
contains Ni​2+​,Mn​2+ ​and Zn​2+​. 
These ions are precipitate by 
passing H​2​S gas through 
ammonia solution of chocolate. 
 
In case of Nickel, black 
precipitate is observed after 
passing H​2​S gas through 
ammonia solution of chocolate. 
 
PROCEDURE 
 
Take a few pieces of chocolate in 
a test tube and add dilute HCl to 
dissolve it. 
 
Apply usual chemical test to 
confirm the presence of Nickel in 
it. For quantitative estimation 
take a weighed amount of 
chocolate in a beaker and add 
dilute HCl and shake it till it 
dissolves completely. 
 
Filter the solution and add 
sufficient amount of NH​4O​ H. 

Through the solution pass H​2​S 


gas till complete precipitate of 
Nickel sulphide and dissolve 
them in maximum quantity of 
aqua regia.  
 
Evaporate the solution to 
dryness and dissolve the solid in 
dilute HCl and heat up to 80°. 
 
Add 1 % alcoholic solution and 
add in slight excess. Immediately 
add NH​4​OH with constant 
stirring till the solution is 
slightly alkaline and give rise to 
red precipitate. 
 
Red precipitate confirm 
presence of Nickel.
