Instructions: Operational Plan

1. Production

Pandeasal ni Oppa, as a bakery, we will be baking our products with the help of our trained pastry chefs
and we will be using a lot of ingredients and equipments for baking our sweet goods like flour, yeast,
salt, sugar and other condiments that will enhance the flavor of our product that will be mixed together
and will be put in an oven and we will be using other baking materials to put beauty to our product that
will surely attract our valued customers. It will cost P170 to produce per unit of pastry and P24 per unit
of bread.

2. Quality control

In a food industry, one of the most important qualities of a product is its cleanliness. The first and
foremost quality is the neatness of the kitchen that will be followed by the consistency of materials used
especially when it comes to baking. The measurements must be undeviating and all the procedure must
be all followed. To be able to do this, our employees must be trained to avoid inconsistencies. The
equipments must be all complete to reduce ingredients estimations.

3. Location
Our business will be located in Brgy. Dolores City of San Fernando, Pampanga and it is situated in a
commercial building with a size of 210 square feet. It is near a highway so the customers, employees and
supplier can easily access our business. Rent per month costs P8000, Maintenance for P5000, Utilities
like power, light and water for P9000 and remodeling cost P5000

4. Legal environment
We will register our partnership in Securities and Exchange Commission (SEC)

The permits and licenses that we need to have are following:


1. Barangay Clearance – The barangay clearance is a certificate that your business complies with the
requirements of the barangay where your business is located.
2. DTI Business Name (BN) Registration Certificate – This is the certificate of registration of your
business trade name. It gives you the power to use your registered business trade name for business
operation. It also protects your business name against being used and registered by other business
establishments.
3. SEC Certificate of Registration – Corporations (stock or non-stock) and partnerships have to secure a
certificate of incorporation or certificate of partnership with the Securities and Exchange Commission
(SEC) to be considered as legal or juridical entities
4. Mayor’s Business Permit. Businesses have to secure a Mayor’s Business Permit or the Local
Government Office where their business are located and operated. for more information.
5. BIR Certificate of Registration. Any business must be registered with the Bureau of Internal Revenue
to comply with the Philippine tax requirements. BIR registration will assign a TIN (Taxpayer
Identification Number) to the company or business owner, will give the business authority to print its
official receipts and invoices, and registered its books of accounts.

5. Personnel
Pastry Chef
Job Descriptions
-create all manner of baked goods, pastries, confections, and other desserts for restaurants, hotels,
bakeries, and pastry shops.

Cashier
Job Description
A cashier obtains payment for goods by scanning items, itemizing and totaling customer's purchases.

Janitor
Job Description
Responsible for cleaning buildings, removing debris, and keeping areas neat and tidy. Vacuums and buffs
floors, shampoos carpets, empties trash receptacles, and replace lining of trash cans.

Helper
Job Description
are required to clean pans, pots, dishes, and other elements used in a kitchen or restaurant. They need
to operate wash dishes by hand, and maintain the entire kitchen clean.

Security Guard
Job Description
Maintains safe and secure environment for customers and employees by patrolling and monitoring
premises and personnel.

Accountant
Job Description
Provides financial information to management by researching and analyzing accounting data; preparing
reports and tax reforms.

Pay Structure

They will work 8 hours per day from 8:00am to 5:00pm. The Pastry Chefs and Accountant are partners
and they will not receive salaries. Only the seven (7) employees will receive monthly salary and other
benefits such as SSS, PAG-IBIG and PhilHealth.

8. Credit policies
Personnel
Our bakeshop’s staff consists of two pastry chefs who will create all manner of baked goods, pastries,
confections and other desserts for our bakeshop together with a helper who will be cleaning pans, pots,
dishes and other elements used in a kitchen. He will be washing the dishes by hand and maintain the
entire kitchen clean. The cleaning of the business premises will handled by our janitor. He will be the
one who will keep the areas neat and clean. One cashier will be also hired to obtain payments for our
baked goods by scanning items, itemizing and totaling customers purchase. Security of the business area
is also necessary in doing business. We need to keep our staffs and employees secured from intruders
and to be able to do that, a security guard will be also hired. The partners of our business will also form
a part in the personnel of the bakeshop. As professionals, one of them is an Accounting Manager who
will provide financial information to the management by researching and analyzing accounting data and
preparing tax reforms. An Operational Manager will be the one who will ensure all the parts of the
production process. Lastly, is the one of the most important personnel in our business is a General
Manager. A General Manager will oversee all the aspect of our bakeshop in accordance with the
company mission statement, including the maximization of financial performance, guest satisfaction and
staff development within established quality standards. He is also responsible for hiring, training and
disciplining off the staffs.
