RESULT AND DISCUSSION

After four successful readings for each sample of raw, boiled and microwaved potatoes, using

the Kjeldahl’s method were complete, the nitrogen content, and in turn, the protein content was

calculated. First, the moles of ammonia were deduced, by subtracting the moles of hydrochloric

acid and the moles of sodium hydroxide. The number of moles of ammonia were then multiplied

by the molar mass of nitrogen, i.e. 14.00671, to determine the mass of nitrogen present in the

sample. To calculate the percentage of nitrogen in the sample, the mass of nitrogen, determined

in the previous step, was divided by the original weight of the potato sample and multiplied by

100. The nitrogen percentage calculated was multiplied by 6.25 because protein is 16% nitrogen

(100÷16=6.25). Thus, the formula used to calculate the protein content is-
