CHAPTER I

THE PROBLEM AND ITS BACKGROUND

This chapter presents the introduction, the statement of the problem, significance of the
study and the scope and the delimitation of the study.

Introduction

According to a paper in Psychological Review by Abraham Maslow in 1943 titled “A


Theory of Human Motivation”, the Maslow’s Hierarchy of Needs emphasized that people are
suggested to fulfill one’s basic needs before going up to the next level with the goal of self-
actualization (Maslow, 1943). This theory suggests that the basic physical need of a person
should be sufficed first, and one of these physiological needs is food. People nowadays could
purchase and intake a variety of food from different cuisines, various classifications, diverse
prices and dissimilar tastes. One of the places where people particularly students and academe
personnel buy their food is from school canteens.

According to the American Dietetic Association Foundation’s 2010 Family Nutrition and
Physical Activity, about 56-75 percent of the students buy their lunches on their respective
school canteens rather than bringing with them their lunches from home. Additionally, this
survey shows that even children from low-income homes amounting to 89% choose to buy their
food on their school canteen.

While teachers are feeding their student’s minds, school canteens or cafeterias are
responsible for nourishing the students’ stomachs (Sereguilla). School canteens in general all
over the world aims to provide nutritious and delicious food for their students, teachers, the
personnel, and guests at times. In addition, it is not enough for them to sell these kinds of food

but also their way of preparation is something that should be given importance as well. School
canteens should offer clean and high quality food without sacrificing the price of the products.

By definition of the Business Dictionary, customer satisfaction is referred to as the “The


degree of satisfaction provided by the goods or services of a company as measured by the
number of repeat customers.” There are many factors that constitute the success or failure of a
certain business and customer satisfaction is probably one of the most essential factors that need
to be kept in track regularly. Customer satisfaction is the key in creating a lifelong relationship
with customers. This satisfaction then leads to customer loyalty. Once the customers have build
trust with a business, they would continue to interact with them (Chambers, 2017).

In connection with school canteens, they have the duty to feed staffs and students
properly everyday. Student satisfaction with regards to their cafeterias is not only measured by
the taste of the food offered or the price of each. School canteens should also consider all the
other factors that should be done in order for them to have better food and service quality to the
students.

One of the problems faced by today’s school canteens is the conflict of offering healthy
food options and sanitation. According to Drummond and Sheppard (2011), school canteens are
considered to be one of the most influential environment that shapes a person’s, especially
students’, eating behavior. Therefore, school food services are then an ideal site to improve the
nutrition of school children (Drummond, 2011). Eduflow in 2013 also suggests that school
canteens should avoid offering food and beverages that are high in saturated fats, salt, sugar, and
other preservatives. They should offer more fruit, fruit juices, vegetables, and more nutritious
food.

In the Philippines, Department of Education Order (DO) 14, S. 2005 or the Instruction to
ensure consumption of nutritious and safe food schools proposes that, “Food items for sale at the
canteen should include natural or fortified food products that are rich in protein, energy,
vitamins and minerals like: rootcrops, rice and corn products in native preparations, fruits and
vegetables in season, and fortified foods, bearing the “Sangkap Pinoy” seal. Beverages shall be
limited to milk, shakes and juices prepared from fresh fruits and vegetables” (DepEd, 2005).

Additionally, Presidential Decree No. 856 or the Code on Sanitation of the Philippines advocates
that a food establishment should include sanitation requirements for food service structure and
facilities and it should follow all the requirements asked by the Department of Health.

One of the facilities that the Saint John the Baptist Catholic School is offering for its
students is the school canteen. According to the Saint John the Baptist Catholic School Student’s
Handbook (p.9), “The canteen provides for the food needs of students by serving breakfast,
lunch and merienda.” As of the academic year 2018-2019, the school has a collective number of
5 canteen spaces to accommodate the growing number of students. One of which is the main
canteen which is located at the old building of the elementary department, two are located at
each side of the covered court and two are located at the senior high school department.

This study mainly focuses on the level of satisfaction of the Junior High school students
of Saint John the Baptist Catholic School regarding the food and services of the school’s canteen.
The researchers chose this topic by the reason that as students, they need to have a place that is
comfortable to rest to and feel satisfied during break times.

Statement of the Problem

The general problem of this study is to identify the level of satisfaction brought by the
school canteen to the Junior High School Students of St. John the Baptist Catholic School.

Specifically, this will seek answer to the following questions:

1. How can the perception of students and personnel be presented in the specific areas of:
1.1 Food;
1.2 Food Service Area; and
1.3 Staff/Personnel?

2. What is the level of customer’s satisfaction about the school canteen in terms of:
2.1 Food:
a. Nutritional Value;

b. Hygiene?
3. Are food sold in school canteens worth the students’ money?

Significance of the Study

This research may contribute some pieces of information that could be useful to the
School Administrators, Canteen Personnel, Parents, Students and Future Researchers. The results
of this research may help the abovementioned be informed about the factors that affects the level
of satisfaction of the Junior High School Students of Saint John the Baptist Catholic School.

School Administrators. The results of this paper may help the school administrators to have a
more definite canteen policy, a more established standard of what should and should not be
offered to the students in school. School administrators may also consider being more involved
with the service and food quality of the school canteen for the benefit of their students.

Canteen Personnel. The results of this research may help canteen personnel to know what
factors they should focus on improving more to be able to satisfy the students and teachers. This
research may also serve as guide for canteen personnel in formulating, provision and application
of new programs and innovation who must be served are and are to be fulfilled.

Parents. The findings of this study may be beneficial for the parents to know the amount of
money that their children should have for their allowances. It may also give them the idea that

they should guide their children to properly manage their money and allocate it on things that
they could benefit more.

Students. The findings of this research may also be beneficial for the students who are
technically the most directly affected people by the services and food provided by school
canteens. This study may also help them realize the other factors that they should consider when
they buy from their canteens.

Future Researchers. The findings of this paper may serve as a guide for the future researchers.
In a way this may help them to further studies, in a more advanced way.

Scope and Delimitations of the Study

The scope of this research is limited to one school which is Saint John the Baptist
Catholic School (SJBCS) Calumpit, Bulacan under a specific department in which Junior High
School students and selected teachers who also buys their food in the school canteen for the
school year 2018-2019 were utilized as respondents. This research focuses
on the level of satisfaction brought by the school canteen to the Junior High School Students of
St. John the Baptist Catholic School. This study targets to show the underlying factors that
influences the level of satisfaction level of satisfaction brought by the school canteen to the
students. The researchers will use simple random sampling technique in which several students
in the Junior High School Department of St. John the Baptist Catholic School would be chosen
as respondents. Pieces of information will be obtained using structured questionnaires given to
the students, text analysis, observation, interviews and open-ended questionnaires. For more
precise and extensive answers, the researchers also asked faculty members about their stand on
the current situation of the school canteen.

Some of the coverage of the study includes the price, sanitation or proper serving of the
food, equipment, and as well as the facilities of school canteen. This study hopes to determine
whether it really affects the students’ willingness to buy if the price or quality of the food in the
school canteen is not that satisfying in overall.

This research is only limited to the students of Saint John the Baptist Catholic School
(SJBCS), Calumpit, Bulacan. Although this research aims to reach its goals, there were some
limitations that are inevitable. Due to this research having only the respondents from the JHS
Students of SJBCS, this cannot be generalized to the perspective and preference of other people
outside of this department and from other age range.

CHAPTER II

THEORETICAL FRAMEWORK

This chapter discusses the relevant theories, theoretical framework, review of related
literatures, and related studies. This also includes the assumptions of the study and the definition
of terms.

Relevant Theory

Cue Utilization Theory

The Cue Utilization Theory was proposed by Jerry C. Olson on 1972. This theory shows
that products and/or services have various arrangements of cues. For example; brand name,
price, packaging, color and etc. Each of these cues has the ability to change the impression of a
person regarding the product itself. One of the most crucial impressions in consumer behavior is
the perceived quality of the product. With this quality perception is strongly related to the
consumer’s purchasing behavior. These cues are sub-divided into two: intrinsic and extrinsic
cues. Intrinsic cues are those that could be seen on the actual product such as the quality or the
design while extrinsic cues are those that are not inherent to any part of the product such as brand
and price. Both of these cues help customers to determine the quality of a specific product or
service which is closely related to customer satisfaction.

Choice Theory

William Glasser M.D., a renowned American psychologist and psychiatrist developed the
Choice Theory (formerly called Control Theory) in 1996. It is based on the notion that any
behavior is a result of a person’s attempt to satisfy one’s needs. The things that change people
are based on what he or she thinks go essential and satisfying. Moreover, this theory also shows
that people are given the ability to choose how to behave. Hence, people are considered more
responsible for the choices they make. People are in general, conscious about the things in their
surrounding and because of this; they choose to change themselves to be able to please others.
Knowingly or not, people weigh whether their existing behavior is the best choice of behavior
that they could act. As a person chooses to live by a behavior that provides greater control, he or
she will be complemented with better feelings and a sense of comfort. People must realize that
choices are always available and that they have the capability to make their lives better. In
connection with customer satisfaction, one’s buying decision is a result of trying to fill up the
satisfaction he needs.

Related Literatures

An article from The Department of Health of Australia, “Role of the School Canteen in
Contributing to a Health Promoting School” (Retrieved: January 2019), states that students who
purchase their food from school canteens often allows these food to have a significant
contribution to their total food intake and nutrition. Hence, canteens must provide the best food
possible to enhance the ability of the students to learn and to focus during their classroom
discussions. The food preference of a person is developed in childhood. Therefore, school
canteens must be more mindful of what they offer because even young students sometimes buy
their food there. They must promote and encourage students to turn into healthier food choices
during childhood that would then build healthy eating habits that they could carry up until they
grow up.

In order for school canteens to be able to offer more nutritious meals to students, there
had been various challenges faced by them in terms of taste, nutrition, and cost-effective meals.
In accordance with Alto Hartley’s article, “Five Important Factors for Successful School
Cafeterias” (2018), there are five important factors that a school nutrition program should be
mindful of to be able to have a more successful school canteen service. First, provide quality.
Successful school canteens are specific with the quality and variety of food that they sell.
Students will purchase their meals once they like what is being served. That being said, when
they find meals tasty and pleasurable, there would be a higher probability of buying. Second,
serve healthy options. Students should not only be provided with delicious meals but also those
that would benefit their nutrition. Third, serve variety. A diverse set of meals would be more
likely to attract students. Fourth, create visually appealing stations. If school canteens create a
more aesthetically pleasing and appealing canteen space, students will be more enticed to buy.
Lastly, increase speed of service. As schools only give students limited time for their breaks,
school canteens must keep up with it by increasing their efficiency when it comes to service
(Hartley, 2018).

Food hygiene is considered to be one of the biggest health concerns in our society most
especially when it regards to the health and safety of students at school. Food hygiene in the
school environment must be taken very seriously. Mandeep Kullar in his article “The Importance
of Food Hygiene in Schools” (2018) stated that children are vulnerable to foodborne illnesses as
they are less likely to practice good hygiene. The preparation area of a school canteen must have
a high standard with the practice of cleanliness and hygiene for food safety. Aside from the
actual place of preparation and the process of doing so, the canteen staffs should learn how to
follow these imposed rules. As it is said, “processes is only as effective as the people that follow
them, preparation is only as safe as the people making the food, and the premises are only as
hygienic as the people that clean them” (Kullar, 2018). Hence, it is essential to have fully trained
and competent staffs.

An article from Croakey revealed that Australian children have the highest rate of child
obesity in the world. If the current eating pattern would continue as related to weight gain, over
two thirds of Australians would be overweight by the year 2025 and the remaining one third

would develop Type 2 diabetes during their lifetime. Dr. Melissa Stoneham in her article, “The
High Price of Healthy School Canteens” (2017), shows that there should be a greater effort in
promoting healthy eating habit and lifestyle choices amongst the young people. However,
improving the nutritional value of the food sold in school canteens might be a little difficult since
healthier option means more costly ingredients. Despite the fact that imposing solutions to
healthy school canteen food would not be simple, they “need to follow and be recognized for
following the good practice guidelines, balanced with the need to build the capacity of schools,
canteen managers and suppliers to make innovative and appetizing healthy options available on
school canteen menus” (Stoneham, 2017). School children need to be well informed how healthy
food would keep them well both now and in the future.

Students spend most of their time at school; hence, most if not all of their meals are
bought in school. By eating the adequate amount of food and vitamin intake from these, they
receive the calories that they need for “academic and physiologic” functioning. It is not only the
school personnel’s task to impose these rules; students should also know how to work together
with their teachers to be able to build a school culture which would bring a healthier
environment. Milagros Suyu in her article “Nutritional Adequacy of the Daily Stuff at the
University Canteens: The Case of a Philippine University” (2016), stated that there must be a
regular evaluation of the nutritional content and needed quality of a food to be considered as
something that would be beneficial to the health and well-being of students.

It is said that more than half of the schools in Singapore are serving healthier meals with
a minimal amount of fat, sugar, and salt, and each is served with fruits. However, even though
this move surprised parents with its good benefit to their children, the prices of these meals have
increased. In accordance to an article from The Strait Times, “More School Canteens Serving
Healthy Food but Rising Prices a Concern”, parents were said to be glad that their children are
starting to eat healthier even though it means additional allowance for them (Teng, 2016).

As stated by Arshad Mahmood in his article “Is the Food at your Child’s School Canteen
Safe?” (2016), the effects of junk food intake are most evident to children. Some of the problems
associated to unhealthy eating are either obesity or malnutrition. Junk food may be inexpensive,

accessible, and delicious, however these food items are filled with “carbohydrates, fat, aerated
water, low quality sugar, salt, hazardous artificial flavors, artificial coloring, and deep-fried stale
items” (Mahmood, 2016). These junk food receive more advertisement and marketing even
reaching the poor neighborhoods and rural places. School canteens are no exception to this junk
food frenzy. Small shops and vendors in front of schools are also full of substandard junk food
and carbonated beverages. School children are said to have high junk food intake as they tend to
buy in their canteens rather than bringing with them packed food. Most of school canteens focus
on their revenue rather than health which is why they choose to stock up processed food than
healthy ones which is made by fresh ingredients. School administrators, concerned government
officials and sectors, and parents must make themselves responsible for the widespread
awareness of the negative effects of frequently consuming these substandard food products
(Mahmood, 2016).

School canteens are one of the most essential parts of a school, not only for the students
but also for the holistic functioning of the institution. Pilgrim (2013) in his article, “School
Canteens are Important”, suggests that there are two main ways in which school canteens
contribute on school life when it comes to teaching proper nutrition and health practices. First, it
impacts the food intake of students as there are some provisions regarding the dietary
requirements for the students and the staffs. Second, school canteens could be trouble zones to
the health of the students if specific measures would not be implemented. Thus, administrators
and canteen committees must be responsible enough to enforce such rules would ensure that their
canteens would meet the national standards for food preparation, storage, hygiene, and safety.
Well-administrated school canteens would not only focus on their profit but also gives emphasis
on the development and learning of students. It is important that they provide enough nutritional
value when it comes to the products that they serve and would give students high energy levels
and those that would prevent diseases (Pilgrim, 2013).

A school or educational institution prioritizes the presence of a canteen for it is needed to


be able to meet the food and nutritional needs of a student to have sufficient energy to last
through the day while completing tasks. The study from the students of Holy Angel School of
Caloocan (Retrieved: January 2019) focuses on the level of satisfaction of its Grade 9 students
regarding the food quality and service of its school canteen. Results of this study show that the
food that give students the highest satisfaction are not the healthy ones but those that are made
up of meat. Moreover, the serving attribute that satisfies students the most is not through the kind
approach but through its fast and efficient service. Lastly, the students consider price as the most
considered factor when buying a product.

The results of a research conducted by Michaela S. Dela Cruz, Shiela Mae C. Sigua, and
et al. (2018), suggests that the operation of a school canteen is essential to keep up with the
nutritional needs of the students to become physically fit individuals who would be fond of
eating healthy food. Schools are encouraged to give importance to the health and well-being of
students through different programs that would tackle food and nutrition. This research revealed
that the taste of canteen food is not the main factor that students consider when they purchase
their meal. Moreover, canteen cleanliness is not regularly observed and there are even rare
moments wherein canteen personnel are not aware of cleanliness (Dela Cruz, M. S. & Sigua, S.
M. C., et al., 2018).

Abu Rashed Osman, Tazkia Hossain and James Bakul Sarkar (2018) had conducted a
reseach with the purpose of investigating the relationship between food quality, food variety,
price, fairness, ambience, staff, and student satisfaction with the cafeteria food services. The
study revealed that factors such as food quality, ambience and staffs have a significant impact
with the satisfaction of the students’ when it comes to the cafeteria services. The factor with the
highest seen correlation is between the food quality and student satisfaction followed by the
ambience, staff, and price fairness. Continuous monitoring in this student food service could then
ensure students’ satisfaction over time (Osman, A., Hossain, T., & et al., 2018).

Chang, M., Suki, N., et. al. (2014), conducted a study to figure the relationship between
the “food quality, price fairness, staff performance, and ambience of the university cafeteria with

student’s satisfaction”. Results revealed that food quality and price fairness turned out to be the
two most important factors that affect students’ satisfaction on the canteen service quality. Next,
it also shows that staff performance and ambience of the canteen are the two factors that are less
likely to affect the satisfaction of students which was actually contradicting to a preceding study
conducted. University canteens or cafeterias should make and strictly implement some serious
measurements to be able to improve food quality and price for long term sustainability (Chang,
Suki, et. al., 2014).

Most universities and colleges around the world emphasizes that the main
function and responsibility of a school canteen is to provide nutritious food not only for the
students but also for the faculty, employees, administrators, and guests as well. Food that are
sold must be clean, safe, and of good quality but still sold at a reasonable price. The students
from Bohol Island State University had made a research with the guide of Avergonzado (2010),
which had shown that the facilities and equipment of together with the food services are often
observed by the customers.

School canteens are more than just that structure that provides daily meals for students.
The school setting is a big and crucial part of the social environment that shapes a person
holistically. The school canteen specifically shapes the eating behavior of the students since
children’s food preference are greatly influenced by repeated exposure to food. Claire
Drummond and Lorraine Sheppard (2010) in their research show that canteen personnel admitted
that the food that they often sell are those that are easy to prepare. Additionally, the outsourcing
of canteen employees is the result of lack of volunteers. Lastly, the limited canteen space had
been the reason to the difficulty of preparation of fresh food according to some canteens staffs
(Drummond & Sheppard, 2010).

Jisook Jun, Youngmee Lee, and Yu-jin Oh (2009) made a research with the intention of
comparing student’s satisfaction with school fool service environment to be able to think of ways
that would improve the quality of middle school meal service. The research focused on the
comparison between the classroom group and cafeteria group. Study shows that the classroom
group is more satisfied when it comes to quantity, distribution time, cost of school meal and

diversity of types than the cafeteria group. This study suggests that schools should improve their
eating place together with the hygiene of meal, cafeteria space, and pleasant environment (Jun,
J., Lee, Y., 2009).

A research made by Frederike Lülfs‐Baden and Achim Spiller (2009) , aimed to create a
theoretical model that would measure student’s satisfaction and the underlying dimensions that
affect it. The results of this research show that service, quality of food, and atmosphere are the
three main predictor of customer satisfaction. Other factors like canteen organization and the
nutritional value of the food still influence satisfaction indirectly in that sense. It also suggests
that a higher satisfaction level would lead to higher willingness to participate on school activities
and would be more willing to purchase food on school canteens (Lülfs‐Baden, F. & Spiller, A.,
2009).

Assumptions of the Study

There are different factors that affect the level of satisfaction brought by the school
canteen to the students, teachers, and personnel. These factors are namely: food, food service
area, and staff/personnel.

Figure 1 shows the connection between the level of satisfaction brought by school
canteens to the students and school personnel in terms of food, food service area, and canteen
staff/personnel.

Definition of Terms

Amount of Serving. Refers to the quantity of food per serving.

Comfort. Refers to the state of being relaxed and comfortable.

Courteousness. Displaying of good manners and etiquette through being polite and respectful. It
is marked by the canteen personnel’s consideration to their customers.

Food Service Area. Refers to the actual place where the students stay. This is the place given to
the students or school staffs to consume what they have bought in the canteen. It provides several
tables and chairs for the comfort of the customers.

Food. Refers to any nourishing substance that is eaten or drunk that provides vitamins and
minerals. This is anything that the canteen may sell to the students.

Hygiene. Employees’ practices to keep themselves clean and pleasant-looking.

Nutritional Value. Refers to what the food is made up of and its impact on a person’s nutrition
and health.

Price. Refers to the amount of money that has to be paid to acquire a given product. In this case,
food.

Sanitation. Refers to both the cleanliness of the service area including the neatness of the tables
and chairs, utensils, and the floor area of the canteen.

Satisfaction. Refers to the feeling of fulfillment of a customer with regards to a specific factor.

School Canteen. The canteen provides for the food needs of students by serving breakfast, lunch
and merienda.

Size. Refers to how large and spacious the school canteen is. This is the measurement of the area
or place of the canteen.

Staff. They are the people who run or manage the canteen and maintains the facilities. They are
more commonly known as the employees.

Taste. Refers to the sensation of flavor perceived by the taste buds.

Variety. Variety is the state of being diverse. This pertains to how different and how the food
sold in the canteen vary from one another.

This chapter discusses the research design, the methods and techniques used in this study,
the sampling technique that was used in selecting the sample from the total population, the
instruments used in collecting the data needed, the ethical considerations that are observed to

maintain the values and respect towards the respondents, the data gathering procedures, and the
data processing and statistical treatment applied in the analysis and interpretation of data.

Methods and Techniques of the Study

This study used the descriptive survey method to study the level of satisfaction brought
by the school canteen of St. John the Baptist Catholic School to the Junior High School students
in accordance to their answers. The researchers had given questionnaires to the some of the
Junior High School students of SJBCS as the main instrument in gathering data.

According to Dr. Y. P. Aggarwal (2008), “Descriptive research is devoted to the


gathering of information about prevailing conditions or situations for the purpose of description
and interpretation. This type of research method is not simply amassing and tabulating facts but
includes proper analyses, interpretation, comparisons, identification of trends and relationships.”

This research used content and thematic analysis to interpret the data gathered during the
interviews. Content analysis was used to interpret the data gathered according to the respondents.
This analysis was arranged by the summary of each respondent’s answers to all questions.
Thematic analysis was used to show the answers of the respondents for each question. This was
presented through the summary of answers per question; starting form the commonly stated
answer down to the least stated answer. Additionally, the respondents had used the Likert Scale
in determining the level of satisfaction with the factors included in the survey questionnaires.

This study has three goals, (1) tell the perception of students when it comes to the areas
of food, food service area, and staff or personnel (2) determine the level of customer satisfaction
in terms of various factors under food, food service area, and staff or personnel (3) show whether
food sold in the school canteen are worth their prices.

A probability sampling was used in this study as its sampling technique in which the
population is given equal chances of being selected as samples for the study. Specifically, this
study used simple random sampling as the method of selecting the respondents to be part of the
research.

According to Foley (2018), probability sampling allows researchers to create a sample


that is an accurate representation of the real-life population of interest and it utilizes the use of
random selection. In this technique, the researchers ensured that the population has an equal
probability of being chosen.

Furthermore, Moore and McCabe (2006) also asserted that simple random
sample (SRS) of size n consists of n individuals from the population chosen in such a way that
every set of n individuals has an equal chance to be the sample actually selected.

The researchers chose some of the students from the Junior High School Department of
St. John the Baptist Catholic School who were enrolled for the academic year 2018-2019. The
researchers had set the limitation of three students per section to generate a total sample
population of 63 out of the 21 sections of the Junior High School Department. The researchers
used 63 respondents from the entire population of Grade 7 to Grade 10 students from sections 7-
Luke, 7-Joel, 7-Hosea, 7-Nehemiah, 7-Micah, 8-Mark, 8-Amos, 8-Zechariah, 8-Zephaniah, 8-
Obadiah, 8-Nahum, 9-Matthew, 9-Isaiah, 9-Elijah, 9-Daniel, 9-Malachi, 10-John, 10-Jeremiah,
10-Ezekiel, 10-Samuel, and 10-Ezra. The distribution of questionnaires in each section is given
to randomly selected students. This sample was used to gather information to know the level of
satisfaction brought by the school canteen of St. John the Baptist Catholic School in their
department. This kind of technique was helpful in knowing the different perceptions of students
from different grade levels with the different factors presented in line with the school canteen.

Population and Sample of the Study

The target respondents were the student from Grade 7 to Grade 10 of the Junior High
School Department of Saint John the Baptist Catholic School where the researchers are enrolled

in. T he total number of sample is __ respondents who are randomly selected from the sections of
Grade 7 to Grade 10. The study used a stratified sampling technique where the researchers
distributed the questionnaires in each room to randomly selected students. Moreover, the
researchers also interviewed __ faculty member as additional respondents of the study.

Research Instrument

The research instrument used by the researchers was structured. The researchers
formulated survey questionnaire and self administered questionnaire as a guide to know the
perception and level of satisfaction of students in school canteen's food, food service area, and
staff/personnel. The survey questionnaire was the main tool used in measuring the respondent's
answers for the right data needed for the research.

The first part of the survey questionnaire contains three introductory questions about the
students’ daily allowance, how often they used the canteen, and what they consider in order to
answer the second part of the questionnaire. It was a questionnaire consisting of tables with
corresponding questions based on the statement of the problem. The researchers assigned five as
very satisfied; four as satisfied; three as neither; two as dissatisfied; and, one as very dissatisfied.
It is the most reliable way to measure the satisfaction of students. This survey questionnaire was
distributed for the students.

Also, the researchers used unstructured interview for the Junior High School teachers.
This questionnaire served as a guide for the researchers to perform the interview. The questions
was asked orally and done one on one. The data collected through the prepared questions were
stated from the respondents own perspective and experiences, audio taped recording was used.
The concrete answers of the respondents were then analyzed and interpreted by the researchers.

Ethical Considerations

Before proceeding to the data gathering proper, the researchers did the following to
ensure a proper observation of ethical considerations done during researches.

First, the researchers articulated and presented an approval letter to several concerned
administrators and teachers asking for their permission to gather necessary data with the students
of junior high school department as respondents. Second, the researchers have formulated a
structured research questionnaire and properly stated that the data to be gathered would be
treated with utmost confidentiality intended to be answered by the Junior High School Students.
Moreover, the researchers also prepared questions for a semi-structured interview to be answered
by the teachers. At the time of the data gathering proper, the researchers made sure that the
respondents would be chosen randomly, as compliance with the research design implemented in
this study.

Data Gathering Procedure

Since the researchers are students of St. John the Baptist Catholic School, it was easier to
distribute the questionnaires with the respondents who are also students of the same school. The
researchers secured a letter signed by the teachers involved and responsible for this study.

To assure sensible information from the respondents, the researchers clearly stated in
their questionnaires the purpose of the study and the research topic itself. The distribution of
questionnaires took place during class hours. Three class officers of each class were excused,
given the questionnaires and were requested to answer them honestly.

Furthermore, to guarantee sensible information from the respondents, the researchers


informed the teachers about the topic, the research, and the possible questions that could be
asked during the interview. The interviews took place after class hours. The selected teachers
were requested to be excused from the faculty room for the interviews. The researchers acted as
the interviewers and the respondents’ answers were taped and were transcribed afterwards.

Data Processing and Statistical Treatment

We would like to know the level of satisfaction brought by the school canteen of Saint
John the Baptist Catholic School. The content of data processing in this study is collecting,
organizing, presenting, criteria for mean, and experience with random events. The research
would then undertake different process such as generating the mean of the responses.

This study used the descriptive survey to be able to collect limited data from a large
number of respondents. Conducting a survey is one of the things that a researcher must need to
accomplish, which is to gather data.

This chapter presents, analyzes, and interprets the data collected through the interviews
and survey questionnaires distributed by the researchers to answer the questions presented in the
Statement of the Problem.

Results of the analysis of data are presented in three parts. The first part answers the
respondent’s perception regarding three factors; food, food service area, and staff/personnel. The
second part deals with the level of customer satisfaction in terms of food, food service area, and
staff/personnel with various underlying factors; for food — nutritional value, price, amount of
food per serving, taste, and variety; food service area — comfort, sanitation, and size; and
staff/personnel — courteousness and attitude, and hygiene. The last part shows the respondents’
stand on whether the food sold in school canteens are worth the students’ money.

and below. 22 out of 66 or 33.33% of the respondents answered that their daily allowance ranges
from 51-100 pesos. 27 out of 66 or 40.91% of the respondents said that their daily allowance
ranges from 101-150 pesos. 6 out of 66 or 9.09% of the respondents said that their allowance

Table 3 shows the respondents' answer towards the question: "How often do you go to the
canteen?" As the respondents are allowed to select more than one of the given choices, we have
generated 140 responses. 50 out of 66 or 35.7% of the total responses from the respondents show
that they eat in the canteen during AM Snack (Morning Break). 51 out of 140 or 36.43% of the
total responses from the respondents show that they eat in the school canteen during lunch break.
While 39 out of 140 or 27.86% of the total responses from the respondents show that they eat in
the school canteen during PM Snack (Afternoon Break).

Table 4 shows the factors that attract the students to eat in the school canteen. As the
respondents are allowed to select more than 1 factor, we have generated 75 responses. 57 out of
75 or 76% of the total responses shows that the food itself attracts them to eat in the canteen. 10
out of 75 or 13.33% of the total responses shows that the food service area attracts them to eat in
the school canteen. Lastly, 8 out of 75 or 10.67% of the total responses shows that the staff and
personnel attract them to eat in the canteen.

the school canteen. 32 out of 66 total respondents said that their feeling is neutral when it comes
to the nutritional value of the food in the school canteen. 6 out of 66 total respondents said that
they are satisfied when it comes to the health benefits of the food offered in the canteen. Lastly,
only 1 out of 66 total respondents answered that he/she is very satisfied when asked if the food
served in the school canteen is good for their health.

Content Analysis

For the first factor which is food, Teacher 1 said that the price of the food in the school
canteen is somehow affordable for the teachers but quite expensive for the students. However
they actually face an issue when it regards to the prices of the products because it varies with the
vendor that sells them. When it comes to the variety of food, Teacher 1 said that the school
canteen offers enough variety of food but it is often that the food that was left the other day
would just be reheated and served the next day. The food choices of the school canteen do satisfy
the nutritional needs of the students in a way but then the sanitation of the place may also affect
the health of the students. For the amount of food being served, it is not enough as compared
with the price. There are products especially their breakfast meals that are enough, but majority
of the amount of food served is inadequate. For the food service area, the area of the canteen is
not comfortable and is not sufficient to cater all the students mainly because of the large
population that is why some chooses to stay on the corridors or the covered court. For the
cleanliness of the food service area, the preparation area is not that sanitary because the cooking
area and the washing area are located near each other. However, there are various signboards that
say, “Clean as you go” but students still they tend to ignore those. Moreover, the utensils are also

not that organized. There are times that students would complain about the attitude of the
vendors. Moreover, not all of the personnel have proper hygiene and proper attire such as gloves
and hair nets. In conclusion, the food sold in the school canteen is not worth the students’ money
because majority of the products are doubled in price.

Teacher 2 said that the school canteen does offer healthy food however the price is quite
expensive. It comes to a point where buying from the canteen seems impractical especially to the
scholars and those whose allowance is just enough. The area is clean but there are rumors where
they reuse the plastic spoons and forks. The canteen provides trash cans and proper segregation.
Lastly, the staff or personnel depends their behavior towards the students and teachers especially
when the students get in commotion. The food offered by the school canteen is more delicious
and healthier than before. However, the food could still not be considered as worth it because the
price is quite high. Other than the price, the canteen is fine.

When asked about his perception about the school canteen, Teacher 3 said that the food
sold in the canteen is more expensive than the ones in the Senior High School Department when
it fact the price should be the same. Even though the amount of serving and nutritional value is
good, the variety and taste is not the same. There is no enough variety of food because they just
repeat the food from the previous day. In terms of food service area, the sanitation serves well
and the place does not have much trash. The school canteen could accommodate the students if
they would fall their lines properly. Lastly, the staff and personnel are nice towards the teachers
but it may not seem the same with the students and they also have proper hygiene.

The most protested complain of the students is that the price of the food sold in the
canteen is expensive, said Teacher 4. The food service area could be untidy at times, but it is
probably the students’ fault when they just leave their trash after eating. However, there are
several complains about the attitude of the staff/personnel although there are no concrete
evidences to prove it. As a conclusion, the worth of the food sold in the school canteen would
depend on the student if one is capable of buying the food given the price.

Teacher 5 said that the nutritional value provided by the food in the school canteen is
quite satisfying because of some of the food that they serve. As compared to the prices of the

food in the Senior High School’s canteen, it is expensive. For the amount of serving given, it is
few as compared with its price. It is disappointing that the taste is not good and the variety of
food is not enough. When it comes to the food service area, some teachers are not comfortable
eating in the canteen because of the students but then it can still accommodate the number of
students given that there are two canteens. Lastly, the attitude of the staff or personnel varies,
some are good and some are not. In terms of hygiene, not all of them wear hair nets and there are
times that strands of hair were found on the food itself. To sum up, the food sold in the school
canteen is not worth it because the prices are expensive.

According to Teacher 6, the foods sold in the school canteen are overpriced. The taste,
nutritional value, amount of serving, as well as the variety of the food is all unsatisfactory. The
service area of the canteen is so noisy and it is small to be able to accommodate such a large
population. The canteen is somehow clean but the lighting makes it seem like it’s not clean. But
in terms of the staff or personnel, they are interacting with an appropriate behavior. Also, they
have proper hygiene such as wearing hair net, apron, and gloves.

Teacher 7 stated that the food itself is satisfying but the price is not working well for the students
since it is expensive. It may not be a problem to the teachers since they already have their
salaries but the students are just based on their allowance. In terms of the amount of food being
served, it is not worth it. The school canteen is a comfortable place to eat in and the
staff/personnel are approachable and practices nice behavior towards the students.

The nutritional value of the food offered by the school canteen is satisfactory, said
Teacher 8. However, the price is expensive even if some of the students have bigger allowance.
The taste of the food is occasionally good. Although the school canteen offers various choices,
there are some times that variety of products is still not enough. In terms of food service area, the
ambiance is good. The size is enough to accommodate the students and the school canteen is
responsible with the proper waste management. For the staff or personnel, they are all friendly
and nice towards the students at the same time, they practice cleanliness. As a conclusion, the
food sold in the school canteen is worth it for those who have high allowances.

The primary reaction of the respondents when asked about their perception of the school
canteen is the “price”. Based on the experience of both the teachers and the students, the price of
the food is sometimes doubled as compared to the prices of those products when bought outside
the school. Price fairness is one of the two most important factors that affect students’
satisfaction on the canteen service quality together with food quality (Chang, Suki, et. al., 2014).
Most of the respondents show that the food sold in the school canteen is not worth the students’
money mainly because of the price. Food that are sold must be clean, safe, and of good quality
but still sold at a reasonable price (2010).

cleanliness and hygiene for food safety (Kullar, 2018). School canteen’s focus should not only be
focused on the food itself but also the safety that the food may bring to the customers.

Well, when I go inside the preparation area, honestly, it is not that


sanitary because the cooking area and their washing area are
almost situated next to each other. Then the utensils that they let
the students use are also not that organized and sanitary. –

Administrators and canteen committees must be responsible enough to enforce such rules
would ensure that their canteens would meet the national standards for food preparation, storage,
and hygiene (Pilgrim, 2013). The location of the school canteen is also essential for the safety of
the health of the students. Limited canteen space had been found out to be one of the reasons
why canteen staffs or personnel find it difficult to prepare fresh food (Drummond & Sheppard,
2010).

Lastly, the primary answer on the respondents’ perception towards the school canteen’s
staff and personnel is about their attitude. They are sometimes selective on to whom they would
show good and proper behavior.

aprons, hairnets, or gloves.

as the people making the food, and the premises are only as hygienic as the people that clean
them” (Kullar, 2018). Hence, school canteens must have fully trained staffs who would adhere to

Several factors were presented to be able to come up with an answer towards the
question, “Are food sold in the school canteen worth the students’ money?” Majority if not all of

Interviewee: Hmm, nutritional value. I can’t tell eh, pero siguro kung food choice, like for
example sa breakfast. Siguro, na...na aano naman nila yung needs or satisfaction ng mga students
o mga kumakain, Kagaya ng kapag breakfast yun nga, mayron silang mami, sopas, or lugaw
which is nakakabusog in a way, pero healthy? I don’t know. Kasi iba kasi definition ng healthy
kasi yung sanitation pwede ding maka affect yun sa health. Pero, ok naman siya. Nasasatisfy
naman somehow.

Interviewer: Sa amount of serving po per food?

Interviewee: Amount of serving...kung yung pag-uusapan ay yung mga breakfast meal nila like
sopas ganun. Enough naman siya. Pero...based on my observation na rin saka na rin sa
experience ko dati. Kapag, lunch, yun dun ako nakokontian. Like, for auhm... for the price of 50
pesos or 40 pesos something. Yung serving ng rice and ulam sa mga students is not enough for
them to ano, mabusog. Di sila... di siya nakakabusog, yun.

Interviewer: Enough po ba yung variety ng food natinitinda nila?

Interviewee: Variety ng food...uhmm...in all ano naman, uhm merienda, lunch or something.
Enough naman, for me enough naman siguro kasi marami namang choices naman yung mga
bata. Kung ayaw nilang magmeryenda na like yung mga niluluto meron namang mga tinapay
or...or chichirya yun nga lang siguro ano na lang, uhm...iba-ibahin. Wag yung araw-araw ganito,
ganun. Siguro ano na lang, transition, mga ganun. Iba..iba-ibahin nila. Wag yung araw-araw
ganito or every other day or every ano two days, ganun. Ibahin nila yung menu nila kasi
nakakasawa din.

Pero may iba akong naririnig. Naririnig ko lang ha na ginagamit parin yung mga plastic spoons

ng mga bata. Ayun lang, yung sa table naman nila may trash can naman. Proper naman yung ano
nila… yung pinagtatap—yung pagtatapon nila ng basura don. Okay naman din yun.

Interviewee: First at food, ah for me it is good okay for the health of the students , but sometimes
ahh the presented food are not totally ahh good for some students specially for the lower grade
and elem. Next, the food service area is okay, ahh the ambiance is okay and it is also clean and
what did you call this, and condusive when it comes with ahhh the students when they are having
their lunch and even their breaks. And last, the staff and personel, the staffs and even the
personel are okay, they are good in serving foods and ahhh they are also kind and ahhh they are
responsible when it comes with proper waste management.

Interviewer: What is the level of customer satisfaction about the school canteen in terms of food?
Under ng food is nutritional value, price, taste, and variety.

Interviewee: Nutritional value sometimes ahhh... Like ahhh.. What i said a while ago, when it
comes with ahhmm... Nutritional value sometimes there are foods that ahh.. Does it contain
anyyy ahhhhh.... ahmmm... Nutritional ahhh or nutrition they are noot good or healthy specially
for those stuu lower ahh students under grade 1, kinder and even grade 2. Under price, ahh some
ahhhh lots of or most of the products... Specially ahhh the snacks are too expensive for the
students ahhhh... Even though students have their ahhh.. have lots of money..... They are still too
expensive. And taste and even variety, so when it comes with taste it is good, but not always
good ahahaha, and their variety sometimes when they ahhh.. What ahhh.. Students needed are
not there and sometimes those products which are not needed by the students are their soooo a
good sometimes but definitely not almost.

Interviewee: Well, when I go inside the preparation area, honestly, it is not that sanitary because
the cooking area and their washing area are almost situated next to each other. Then the utensils
that they let the students use are also not that organized and sanitary. But I also see posters that
say “Clean as you go” but students tend to still leave their plates and trashes. I don’t know if it is
the canteen personnel’s responsibility or what, but it is neither dirty nor clean. It’s a little messy
because students do leave their trashes after eating.

Interviewer: When it comes to the staffs?

Interviewee: With the staffs, I don’t really notice a lot about their attitude other than what the
students tell us, can I say that?

Interviewer: Yes.

Interviewee: Well, for me, students personally tell us that they would sometimes ask the vendors
and they would answer like they were angry. But in my own experience, I find no problem with
their attitudes maybe because we are teachers. But one thing I noticed is that there are times that
the prizes vary. When you buy from one vendor, the prize would not be the same when you buy
it to another.

Interviewee: Nutritional value, I can’t tell. But if we are going to talk about food choices, like for
example, for breakfast. Maybe it does satisfy the need of nutrition of the students. Like during
breakfast, they offer mami, sopas, or lugaw which could satisfy hunger in a way, but healthy? I
don’t know. There are various definition of healthy. It could be about sanitation because it also
affects health. But it is ok, satisfying somehow.

Interviewer: When it comes to amount of serving of the food?

Interviewee: Amount of serving, if we are going to talk about their breakfast meals like sopas, it
is enough. But based on my observation and past experiences, the food served during lunch is
inadequate. Like, for a price of 50 pesos or 40 pesos something, the serving is not enough. The
serving of the rice and the dish is not enough to make them full.

Interviewer: Is the variety of food being served enough?

Interviewee: In all aspects? Like merienda, lunch, or something? For me, maybe it is enough
because the students are given various choices. If they don’t want to have cooked merienda they
could have sandwiches or crackers. But maybe they should have a variation with their everyday
meals. Like they should have different sets of meals everyday, because it can be tiring to eat
same food daily.

Interviewer: For the place itself? Is it comfortable and do you think the size is enough...

Interviewee: To accommodate?

Interviewer: To accommodate the students?

Interviewee: If we are to talk about the accommodation of students, it in not enough because they
have a large population. If they would have their breaks at the same time, for example during the
first break in the morning, most of the Grade 10 and 9 students would stay on the covered court
or the corridors. Well, maybe it’s their choice to roam around but if we are to talk about the
comfortable way of eating that you could really sit and spend time with your friends, they can’t
do that because there are only limited number of chairs and tables.

Interviewee: There are sometimes. But not everyone has. Maybe it is only essential for those
who are assigned in the preparation area. They really need to wear hair nets and aprons and I also
notice that they sometimes prepare food with their bare hands. For the vendors, it is not actually
a really big deal because they only handle the finished products. But of course, sanitation wise,
they could still use hair nets for assurance and it is only cheap. It could also be of big help
because there could be times that it comes out clean from the preparation area but the problem
would come from the vendors. Unexpected things could happen. But it is not all the time and not
all the staffs wear proper attire.

Interviewer: Last question. Do you think the food sold in the school canteen worth the...

Interviewee: The price?

Interviewer: The money.

Interviewee: Honestly, no. Maybe for us teachers, the price...

Interviewer: Affordable?

Interviewee: Yes, affordable in a sense. But of course we are just human as well. What more
when it comes to the students, their parents just give them their allowance. Honestly no, because
oftentimes they earn double as compared to the prices found outside the school. Just like what I
told you, if we are going to buy bottled water in the morning, the vendor would say it is 10
pesos. Then if we are going to buy during lunch, it is already priced 15 pesos. Like, it is just the
same canteen outlet but different vendors. So, it is not, it is really worth the price especially the
lunch of the kids. It is too expensive for its serving size.

Interviewee: I think when it comes to food that they sell, I could say that it is healthy because
they also sell sopas and others but the price is quite high as compared outside but we have no
choice because it is the only store that we could buy food. But it is really expensive like there are
times that it is already double the price that it becomes impractical to purchase. Especially to
those students that are just scholars or those who are not that rich. Other students are forced to
have packed lunch and snacks which is why their lunches are not warm anymore. But there are
some who are really forced to buy from the canteen even if it is really expensive because they are
not given a choice. Anyways, nothing is cheap nowadays. So in short, it is quite expensive
especially for the children.

Interviewer 1: How about their food service area?

Interviewee: Food service area, there are some complains from the students about the area. You
mean the dining place?

Interviewer 1: Yes, the canteen.

Interviewee: Yes, that. It is clean. After the students eat they clean it immediately. But I hear
rumors that they reuse the plastic spoons but I’m not sure. I don’t know if it is true because it is
just the students who say their complaints. There are trash cans provided. They have proper
segregation of trashes and.

Interviewer 1: The last one, staff and personnel?

Interviewee: For the staff and personnel, it depends. Well they are kind towards me, even
Mommy (Mami). When it comes to other children, maybe they feel irritated that is why they
would sometimes shout at them. The staff at the canteen are only few and there are so many
students who buys there because as I have said, they do not have any choice. Especially during

Interviewee: The food that they sell now is more delicious as compared to what they sell before.
The person who cooks their food now cooks better. They also offer healthier options because
they sell bananaques and not only chips. They also offer snacks like fries which I think is
healthier as compared before. However, it is not that worthy because the price is quite high. I
think the only problem is the price. Other than the price I think the canteen is just fine.

Interviewer: What can you say about the level of satisfaction with the food of the school canteen
when it comes to its nutritional value?

Interviewee: Nutritional value in the canteen. Well usually the foods that they serve are okay for
example during breakfast. They offer lugaw and then spaghetti. It is okay for me.

Interviewer: When it comes to price?

Interviewee: When it comes to price I think that, well I sometimes hear rumors that the price of
the meals in the canteen of the senior high school is cheaper. I think that the price should be the
same though.

expensive. That is what I always hear from the students. In matters of personnel, there are some
isolated cases that they do not show proper attitude towards the students. Well, those are just
hearsays. I haven’t encountered those things personally yet.

Interviewer: How about the food service area?

Interviewee: The dining area?

Interviewer 1: Yes. Is it clean?

Interviewee: Actually it is not the personnel’s fault anymore if the area was left untidy. It is the
buyers’ fault. So if we would say that it is untidy, then we pertain not to the staffs but to the
customers.

Interviewer 1: And the last question is about the staffs and personnel?

Interviewee: They are okay. Well just like what I have said, there are isolated cases that some
staff gets angry at students. I just heard that so we can’t make that as concrete evidence.

Interviewer: Are food sold in school canteen with the students’ money? Is the food worth it?

Interviewee: I don’t really know because there are differences. We cannot use a single standard
for everyone because there are rich and poor students. There are students who have higher
allowance and there are some who are given just the exact amount. So we cannot really say if it
is worth it because we don’t have any concrete evidence but from the hearsay, the price is really
quite high.

Interviewee: There are lot of price that somehow, overpriced. For example, the chuckie drinks
and crackers. But the cooked food, it is okay.

Interviewee: The place is too loud or noisy. So, we can't be able to eat inside.

Interviewer: How can the perception of students and personnel be presented in the specific area
of food, food service areas, and staff or personnel?

Interviewee: First for food, for me it is okay and good for the health of the students. But
sometimes, there are food that are not enough to suffice the health needs of the younger students
in the elementary department. Next, the food service area is okay. The ambiance is okay and it is
also clean. Lastly, the staff and personnel are okay. They prepare good food and they practice
proper waste management.

Interviewer: What is the level of customer satisfaction about the school canteen in terms of food?
Under the food is nutritional value, price, taste and variety.

Interviewee: Like I have said a while ago, there are food that are not healthy for the pre-
elementary and grade school students. For price, most of the products especially the snacks are
very expensive for the students even if the students have lots of allowances. The taste and
variety, the taste is occasionally good. For the variety, there are products that the students like
but are not available.

Interviewer: For the food service are: comfort, sanitation, and size.

Interviewee: For the comfort, the school canteen space is comfortable during the times that
students are to take their lunches and breaks. Sanitation wise, they are responsible for proper
waste management. Even the size of the canteen is good but sometimes students take their breaks
at the same time that is why it is quite chaotic in the canteen.

Interviewer: With the staffs and personnel? Their attitudes and their hygiene?

Interviewee: Their attitude is good and they are friendly. They have good hygiene and they
practice cleanliness.

Interviewer: Are food sold in school canteens, worth the students money?

Interviewee: For the students who have lots of money or allowance the food is worth it. But for
those who has only exact allowances, the food is not worth it because some products are really
expensive that is why there are students who would prefer to buy outside of the school.
