Sequence of table service

Welcoming and greeting the guest with things /to sit down
Unfold the table napkin. (napkin is position on the left side of the guest) EXCUSE ME MAM/SIR
SHALL I UNFOLD YOUR TABLE NAPKIN?
Excuse yourself for a while then leave the guest
Go back to the table bringing a pitcher of water. (excuse me sir/mam would you like to have some
refreshing water? By the way I am ________ and I will be your server for tonight.
Excuse me I will just get our wine list.)
Bring the the wine list standing on the left side of the guest. (Here is our wine list for your selection. Just
call my attention when you are ready to place your order.) one step backward
Get the order and repeat the order. (your order will be_______ excuse me I will just get your order.
Bring the order place on the ride side beside the water goblet. Mention the name of the order. (here is
your ___ enjoy your pre meal drink. Excuse me.)
Get back to the guest bringing food menu list(excuse me mam here is our food menu for your selection..
Just call my attention when you are ready to take the order.
Take the order.. Usually orders only soup main course (mostly beef) and dessert.. Suggest appetizer, salad
and drinks.. Pair main course with wine.. Do suggestive selling. Repeat the order and give estimated time
of service. Excuse yourself.
Adjust the table before the service. Remove unnecessary items from the table. Those items that will not
be use based on the order. Change dinner knife with steak knife if the order is beef. If dessert is with
sauce use spoon if dry place fork on top of the show plate
Place wine glass together with saucer to place the cork when opening the bottle of wine.

Serve complimentary bread.. Then proceed with the order from starter to dessert.(perform 3 minute
check- revisit the guest table and ask for guest satisfaction. Ask for refilling of water) service of wine is
after placing the the main course.
Clear the table every after food served.
Crumb the table before serving the dessert.

Present the bill.. (bill settlement)
Assist the guest on leaving the premises.. Offering to assist on the car/ cab.. Offer umbrella or bringing of
belongings. Thank guest and wish to visit again
