mash the boiled ube in a hand mill.

make sure you remove the small part of roots or anything that
would make the texture rough. i suggest to sieve it in a wire mesh strainer. blend the sugar to the mash
ube just enough to the desired sweetness. melt butter in a large wok. add on coconut and evaporated
milk (we use kakang gata of 4 medium sized coconut and 2 large cans of evaporated milk for roughly 5
Kg of ube). Add 1 tbsp of vanilla. Stir regularly until it caramelizes. add the ube to the caramelized
mixture and stir until the sticky and the desired consistency is attained. place in dishes for serving best
served when cold
