II. Introduction

Filipino carinderias and eateries have become an integral part of Filipino’s lifestyle. They are as fit
to be called as the Philippine’s trademark. This chapter presents the definition of chosen Filipino art; followed
by the Philippine context of Filipino art, review of related literature, how the respondents chose and their
identities. Lastly, this expands the understanding of the researchers regarding the subject matter and serves as
a guide for the researchers in conducting their study.

III. Definiton of Chosen Filipino Art

“Carinderia” is a local eatery selling and serving affordable viands for the masses, it is a food stall
with a small seating area, typically in a market or at a roadside. It is also known as a “turo-turo” wherein
customers literally point what they want to eat. At present time, “carinderias” in the Philippines is known to be
one of the cheapest and most accessible way to obtain food.

IV. Philippine Context of Filipino Arts

Filipino cuisine is composed of the cuisines of more than a hundred distinct ethno-linguistic groups
found throughout the Philippine archipelago. Before 1764, there was no Filipino word for a commercial
establishment selling cooked food. By the 1800s, the word for these food shops was Carinderia. The word
Carinderia is most likely derived from the word “cari” or “kari” a Tamil word for sauce. For another, dishes in
carinderias and eateries come relatively cheap and are worth your money. Of course they don’t offer food with
the quality that of restaurants in a very small price, but at least you can have a complete meal without hurting
your pockets. The wide range of dishes is also one of the reasons why people love to eat in carinderias and
eateries. There are many reasons why carinderias and eateries are numerous in our country, and being a
major hit for the masses is one of them. In the Philippines, you can almost never find a street without one or
two carinderias, except for some very developed and private properties. Places where there are many ordinary
people like schools, business centers, and travelling routes are where you will usually find these carinderias.
Another reason is that only enough space is required to put up this kind of business. Carinderias and eateries
are indeed of great importance – for a student, for a normal Filipino citizen, and for our culture as an
inhabitant of this country.
V. Review of Related Literature

Carinderia Industry Profile

According to Business Diary Philippines (2018), carinderia is a local eatery selling and serving viands for the
masses. Wenceslao Retana, a Spanish Filipinologist discovered the origin of carinderia in the year 1920. The
origin of carinderia can be traced to the word kari which means “spice”, or what we know today as “curry”.
Carinderia is also known as “turo-turo” where the customers can freely choose or point what they want to eat.
Most streets in the Philippines where schools and offices located with exception to highly developed areas and
private properties have carinerias surrounding them. Carinderia is the ancestor of the fast food concept here in
Philippines. Before year 1764 there was no Filipino word to infer a commercial establishment selling cooked
food, and in the year 1800s, carinderia was recognized as the native of local food shop, are spite for travelers
and a direct ancestor of the turo-turo. Carinderias became widespread in rural areas only after increased
human mobility, around the late 1800's.

According to Mrs. Mary Anne Amores, the manager of Chicken Tutu, one of the reasons why carenderias and
eateries are numerous here in Philippines is the wide range of prospective customers, like in their eatery which
is part of a boarding house, near a university and many business establishments.
The boarders, their friends, and others students usually eat there, together with employees and the people
living in the area. In the case of Royal Café, according to Ms. Lydia Ambao, a saleslady there, it was
established for the benefit of a charitable institution called Children’s Joy Foundation. Their target customers
are students, so their two branches are located near the University of the Philippines and University of San
Carlos in Cebu.

Pinoys and Carinderias: Inseparable

Carinderias and eateries are indeed of great importance – for a student, for a normal Filipino citizen, and
for our culture as an inhabitant of this country. In 2001, Marylindbert International, Inc. initiated a unique
advocacy called Carinderia Fiesta and later on they were renamed it Buhay Carinderia. It was aimed to help
improve the carinderia's image, help the entrepreneurs behind them and present their unique style of cooking
to a wider audience.

Some artist like Cesar Montano, Linda Legaspi and Erwan Heusaff, carinderia are close to their hearts,
carinderia offers a glimpse into Filipino culture and customs- they are the closest to what one gets at Filipino
homes, where great recipes are handed down through generations. Mary Linda said, “generous portions,
affordable prices, short waits, and sumptuous dishes. Is it any wonder that carinderias are continuously
growing everywhere in the country?
