Dear Capstone Administrator,

I am writing to you to notify you of my desire to do my senior capstone project with Shepard’s Hand
Ministry as an assistant cook at their Tuesday and Sunday night soup kitchens. I have chosen this
ministry as my project umbrella because I want to someday become a chef and what better way to
practice and learn but by serving other people and meeting their needs as well.

For several years, Shepherd's Hand Ministry has been serving the community of Junction City and I have
had the privilege of being able to be a part of it by busing tables, serving desserts and pouring drinks. I
want to be able to help the ministry in a further capacity and also learn something for my future as well.
Since I know the director of the ministry, Randall Cuddeback, I spoke with him about my desire to do my
Capstone project with him. Randy agreed to allow me to assist him in the kitchen under his and his
wife’s instruction. In my project, I will assist Randy Sunday’s and Tuesday’s with prep work and cooking
for the meals they serve those evenings. The meals are prepared for approximately 100 people on
Sunday and 50 people on Tuesdays.

Though I have helped out with Shepherd’s Hand for 6 years I haven't done much other than the serving.
In preparation for this project, I have obtained my food handlers license so that I will be able to jump
right in when the project is approved. I look forward to learning how to properly prep and cook food for
large groups with only limited amounts of ingredients and time. I am looking forward to learning things
that most people would think would apply to a kitchen like the order of cooking, scheduling, and
proportion management.

I feel that this project will help me solidify my career choice of culinary arts. I am also looking forward to
learning from someone as talented as Randy but who also has a heart for helping those in the
community that are struggling to make ends meet.
