each and every part of business.

Practical study is also necessary. It helps to develop the analytical
skills, i.e. conception or execution of the students. These practical
training is like industrial visit. Presents a unifies picture of what
management is & how it is applied to various forms of human
endeavor in this country. Such visit are important in order to
acquit the students with the technicalities of the various process
and principles undergone in various factories. In today’s world of
globalization opportunities are plenty and they keep knocking at

BRIEF HISTORY

It all began in 1944 when Satish Chona, a young engineer


working at BOAC (now British Airways, decided to set up a pop
up ice cream shop in karachi, Pakistan, called Havmor. What he
started as a part-time venture to supplement the family income
soon grew in to a popular local ice cream brand. But the year 1947
proved to be a tumultuous one with the partition of India and
Pakistan. Mr chona and his family were forced to leave
everything behind in Karachi as they migrated to India overnight
in search of safety.

After attempting to set up a base in a couple of Indian cities


including Dehradun and Indore, Mr Chona eventually decided to
start his ice cream business in Ahmedabad. Here, the weather
would stay warm for a better part of the year, which meant
potentially higher ice cream sales. Mr Chona began Havmor
operations with just 200 rupees from a humble handcraft that he
would take to the Ahmedabad railway station. Everyday, he
would sell ice cream from his handcraft that he and his wife, Mrs
Nirmal Chona, painstakingly churned all night. To increase
revenues, Mr Chona would borrow a friend’s cycle and sell ice
cream around Ahmedabad while his friend would take care of the
handcraft.

While Mr Chona worked tirelessly, it was his unwavering focus
on 3 values – Acchai (Goodness), Sachhai (Truthfulness) and
Safai (Cleanliness) – that helped him lay a solid foundation for
the business. These three values still remain core to everything
that is done at Havmor. Havmor’s range of products are today
available across 14 markets in India with a network of restaurants,
eateries & and Havfunn parlours.

Curating novelty of flavours since 70 years, 1944 is when our


journey began. 1944 is a part of the Havmor chain of restaurants,
that started in karachi before it moved to Ahmedabad, after the
partition. Since the shift, there has been no looking back. Even
today our food tops the consumer surveys for serving authentic
North India Cuisine.

In this factory of manufacturing it the machines are arranged


according to the process they perform in the plant.
Company produces 150 different varieties of products and
distributes throughout the Gujarat by its annual turnover of
Rs.250crores.
The location of the company is very good and safe in the
sufficient area like Naroda. They get easily their production-
needed raw materials.

cream products and great achievements in the field of ice cream
distribution among its consumers in all over India has been
received many honors and awards from many association and
organizations.

“The Great Indian Ice Cream Contest Season 5” organized by


DANISCO DUPONT. Havmor have been honored with the
prestigious TIMES FOOD AWARDS 9 years (2009-2017) in a
row.

PRODUCTION PROCESS

The process of manufacturing ice cream passes through various


stages. The procedure of making ice cream and candies is
explained below:
First of all thousands of liter of milk is produced by cows and
buffaloes that get milked at the automated dairy plant. From here
milk, fresh cream, milk powder and other products are send to
Havmor ice cream factory in hygienic tankers. All those
ingredients are thoroughly tested and analyzed for the quality at
Havmor factory.
Now begins the process of making Havmor Ice Cream
 The first step to make basic ice cream mix wherein milk
which is pasteurized in stainless steel pasteurizer.
 Fresh cream, skim milk powder, sugar stabilized emulsifier
are all mixed together in blender. Than to kill pathogenic
bacteria in the mix it is pasteurized for 10 minutes at 80
degree Celsius temperature.
 Thereafter the mix is passed through homogenizer where it
is homogenized and as high pressure piston is used to
pulverize the mix.
 After this process smooth and consistent ice cream is
obtained.
 To add flavour there are several thousand liter tanks with all
popular and natural flavor like Black Currant, Strawberry,

chocolate, Vanilla and many others along with Fruits, Nuts,
Chocolate Chips etc. are added as per requirement of the
flavour.
 This rich flavourful ice cream mix is than frozen in Italian
and German freezers at less than 5 degree Celsius
temperature.
 After the basis of ice cream are created, as per the
requirement fruits and nuts are sprinkled over it as toppings.
 After this there is a stage where the wonderful and delicious
ripples are made on the ice cream.

Now let’s see how candies are made:


 Firstly the candy mix is kept in candy aging tank at 4 to
6 degree Celsius temperature. From here it is moved to
ice cream filler station where it is converted into ice
cream.
 Candy mix is filled into moles at -3 to -4 degree Celsius
temperature. A stick is put into the mix and the mold is
frozen between -38 to -48 degree Celsius temperature.
 From here the moles are taken to defrosting station
where water is sprayed at 9 to 10 degree Celsius.
 Finally the candy is dipped into delicious flavours.
 Now the candies are packed and wrapped into their
protective covers.

 Thereafter ice cream is passed through Metal Detector to
make sure no foreign bodies are present in it.
 After this it is frozen even further in Hardening Tunnel
at -25 degree Celsius. This hardening process is done in
Automatic Spiral Hardener.
 Now it’s time for crucial test Quality Assurance.
 Since Havmor is extremely cautious about its product
quality, a group of expert at Havmor laboratory checks
and analyses thoroughly the quality and consistency of
all product which should meet stringent quality standard.
 Havmor ice cream is made in pure and hygiene
environment at the world class Havmor Manufacturing
Plant.
 From here the Havmor products are delivered to
refrigerated and hygienic vans to more than 20,000
dealers and over 100 exclusive outlets .

PROCESS FLOW DIAGRAM

PRODUCTION CAPACITY
 Havmor boasts a product portfolio comprising 150 kinds of
ice creams retailed through a parlour network operating
across 14 states.
 It has two plants, in Ahmedabad and Faridabad,
manufacturing 2.5 lakh litres of ice cream per day.
 Havmor has a capacity to store 4 lakh litres of ice cream
 In Havmor factory 12,000 candies are made per hour.

PLANT LAYOUT
Layout problems are fundamental to every type of organization
and are experienced in all kind of marketing. Once the decision
about location of a plant has been taken, next important problem
before the management is to plan suitable layout for the plant.
Efficiency and performance of good machines and sturdy
buildings depend to a great extent on the layout of the plant.
According to James Handy, “layout identically involves the
allocation of space and arrangement of equipments in such a
manner that overall operating cost is minimized.”
There are mainly three types of layout:
i. Process Layout
ii. Product Layout
iii. Fixed Position Layout

RAW MATERIALS AND ITS PROCUREMENT


There are various types of raw materials used in production of ice
cream. Major raw materials used are described below:
 Milk
 Fresh Cream
 Skim Milk Powder
 Sugar
 Stabilized Emulsifier
 Fresh Fruits

 Flavours
All the materials which are used are thoroughly tested and quality
is checked by the Research and Development Department.
Raw material procurement system is as follows:
 Milk is main raw material for ice cream. Milk delivered by
producer is measured, quality tested, analyzed and
accordingly paid.
 Sugar is purchased in bulk by the company.
 Special attention is given at the time of purchasing nuts,
fruits and chocolates.
Those color and flavor are used which are permitted by
government.

BASIC DATA ABOUT PRODUCT

An ice cream contains most nutritious element such as


Carbohydrates, Vitamins, Proteins, Minerals, Fats, and Proteins

1. PRODUCT:-

 The Product should fit the task consumers want it for, it


should work and it should be what the consumers are
expecting to get.
 Different types of products are manufactured at Havmor
Factory.
 Such as Ice Creams, Kulfis, Candies, Novelties, Cones,
Sugar free Products, Blockbusters and many more.
 There are different varieties available in ice creams, candies,
kulfis and others.

2. PLACE:-

 The product should be available from where your target


consumer finds it easiest to shop. This may be High Street,
Mail Order or the more current option via e-commerce or
an online shop.
 Place includes Channels, Location and Transportation.
 In the field of marketing, channels of distribution
indicates the routes of pathway through which goods and
services flow or move from producers to consumers.
 The channel of distribution of Havmor is from
Manufacture to Agents to Distributors to Dealers and
Retailers to Customers.

 The location of the unit should be suitable so that the
transportation cost is minimized and raw materials can be
easily obtained.
 Efficient transportation helps in reduction of cost of
production and earns more profit and above all consumer
satisfaction.
 Havmor industry has separate vehicles for transportation.
 Refrigerator vans are used to transport the product to
different states and cities.
 Cooling vans are used to transport the product locally

3. PRICE:-

 The Product should always be seen as representing good


value for money.
 This does not necessarily mean it should be the cheapest
available; one of the main tenets of the marketing concept
is that customers are usually happy to pay a little more for
something that works really well for them.
 Price is the amount or services that consumer exchange for
the benefit of having or using the product.
 Havmor have 2 factors affecting the price decision. They
are Internal Factors and External Factors.
 Internal factors include marketing mix strategy and cost.
 Moreover Havmor decides who within the organisation
should set prices.
 External factors include competition such as Pure
Competition and Monopoly Competition.

4. PROMOTION:-

 Promotion means an activity to increase purchase or sale of


the product or services.
 Advertising, PR, Sales Promotion, Personal Selling and, in
more recent times, Social Media are all key communication
tools for an organisation.
 These tools should be used to put across the organization’s
message to the correct audiences in the manner they would
most like to hear, whether it be informative or appealing to
their emotions.
 Advertising is a means of communication with the users of
a product or service.
 Sales promotion means short term incentive to encourage
purchase or sale of a product. It is a connecting link between
personal selling and advertisement.

COMPETITORS

 Havmor is producing many products of their own facilities,


the Havmor industry produce ice-cream in modern way.
 They have many competitors in market. The main
competitors are Amul, Vadilal, & cream bell etc.
 In the modern time the Havmor is also producing its products
as best as its competitors.
 So to be always ahead of their competitor Havmor always
try to maintain best quality and always do research &
development.

[D] HUMAN RESOURCES

NUMBER OF EMPLOYEES

 Employees are the backbone of the company, every


work in the organisation is done by the people working
there.
 Havmor have around 500 employees in their factory
which are working everyday so that we get our ice
cream on time.
 There are three shifts in summer in the havmor factory
due to higher sales.
 In winter there are 2 shifts only due to the lower sales.
 All the shifts are of 8 hours; in the first shift only
women are working.

RECRUITMENT

 There are two sources of recruitment i.e. Internal Sources


and External Sources.
 For the lower level of worker recruitment process is very
simple whereas for higher authority it is not that much
simple.

 Recruitment is done through advertising, recruitment at gate,
employment exchange centre, employment agencies etc.
 For the recruitment of skilled workers, advertisement is
given in newspaper and unskilled workers are recruited from
local areas.

SELECTION

 After the recruitment process Havmor selects the worker on


the basis of the efficiency of worker.
 The selection process of Havmor is done stepwise such as
receiving application, employment tests, personal interview,
checking of references, preliminary selection and last step is
final selection.
 Physical examination of the worker is also conducted to
check the capability of worker for the factory work.
 After passing the selection test employees are selected.
 The personnel manager acts as an expert in the final selection
and placement.

TRAINING AND DEVELOPMENT

 Different types of training and development schemes are


there for the employees at Havmor.
 Training is given to the lower level employees while
development program are meant for top level management.
 In the modern times there are new technology and new
machines and products, many workers are not aware of this
so they are given training accordingly which help them to
improve their work efficiency.
 In Havmor also employees are given training and
development to build their skill and performance.
 Sometimes they send their staff outside for training
purposes.
 They develop overall growth of worker by enhancing their
hidden capacities and shaping the personality.

COMPENSATION

 Havmor take care of his employees very much.


 Havmor gives medical insurance to every worker of
the company.
 They provide good atmosphere to work and salary on
time so that they got motivated.
 Every employee get uniform from the company.
 Non cash benefit is also given so their will increase in
the work efficiency

POLICIES REGARDING PROMOTION AND
TRANSFER

PROMOTION:-

 Promotion is advancement of an employee to better job


in terms of responsibility, prestige, skill, salary, greater
skill etc.
 Havmor Company also gives promotion on the basis of
overall performance. It also considers merit basis and
seniority basis.
 Promotion is given by top level management.

DEMOTION:-

 When an employee is transferred to inferior position than


the current position it is termed as demotion.
 Havmor Company gives demotion when any employee is
not able to do the work due to some reason.

TRANSFER:-

 Transfer refers to change in place without change in


responsibility or salary.
 Havmor transfers its employees from one shift to
another whenever required.
 When there is need of worker in other area, he may be
transferred over there.

FINANCIAL PLANNING

Finance is an important function of business. The application of


planning to the function is financial planning. It involves the
policies, determination of objectives and procedure relating to the
finance function. Financial planning is an important function of a
financial manager whether a business is big or small this function
has to be performed. It is necessary to do financial planning for
an existing as well as new business.
A financial plan is a statement estimating the amount of capital
and determining its compensation and another important aspect
of financial plan is to determine the pattern of financing.
Before raising finance it is essential to make estimates for long
term as well as short term financial needs.
 Long term financing is generally needed for fixed capital
requirement i.e. purchase of fixed assets.
 Short term finance is generally needed for working capital
requirement i.e. marketable securities, debtors, etc.

SOURCES OF FUNDS

Some sources of finance are short term and must be paid back
within a year. Other sources of finance are long term and can be
paid back over many years.
Internal sources of finance are funds found inside the business.
For example, profits can be kept back to finance expansion.
Alternatively the business can sell assets (items it owns) that are
no longer really needed to free up cash.
External sources of finance are found outside the business. For
example from creditors or banks.

Short-term sources of external finance:


 An overdraft facility, where a bank allows a firm to take
out more money than it has in its bank account.
 Trade credits, where suppliers deliver goods now and are
willing to wait for a number of days before payment.
Long-term sources of external finance:
 Owners who invest money in the business. For sole traders
and partners this can be their savings. For companies, the
funding invested by shareholders is called share capital.
 Loans from a bank or from family and friends. Different
types of loans are available from bank such as secured loans
and unsecured loans.
 Money borrowed from bank is paid back over time, usually
with an additional payment of interest. Interest is the cost of
borrowing and the reward for lending.
 Debentures are loans made to a company.

SALES TURNOVER
 Havmor established a strong brand presence in Ahmedabad
and then expanded its network to over 30,000 ice cream
outlets across eight States.
 Even as the raw material costs continue to soar, Ahmedabad-
based ice cream maker, Havmor Ice Cream,was looking at
40 per cent growth in the sales in 2013 financial year with a
targeted turnover of Rs 260 crore.
 In 2015-16 fiscal, the company had a turnover of around Rs
450 crore, of which 85 per cent was contributed by ice cream
business and rest by restaurants and fast food chains.
 Havmor registered turnover of 550 crore for fiscal year 2017,
of which nearly 85 per cent or 465 core came from the ice
cream business.
 India’s ice-cream industry has an estimated worth of
around 9,500-10,000 crore, of which nearly 45-50 per cent
is the unorganized market. Commenting on the deal,
Managing Director Ankit Chona said: “If someone takes the
business and makes it grow much faster and take it to the
national level, then we are happy to look at the brand going
into suitable hands.”

FUTURE PLAN OF THE ORGANISATION

CORPORATE SOCIAL RESPONSIBILITY

Havmor ice cream limited over the years directly and indirectly is
involved in various philanthropic and social activities.
The company sets out its corporate social responsibility policy
under section 135 of the Companies Act 2013 read with the
Companies (Corporate Social Responsibility Policies) Rules
2014. The Companies’ CSR Policy is inspired by its motto of
“Goodness, Truthfulness and Cleanliness.”
They at the Havmor are committed to offer the finest quality of
the products to their customers at the best value for money.
Havmor operates in a manner that not just continues to generate
an attractive return for stakeholders, but also trying for
minimizing impact on the environment and helps in replenishing
the plant; while lending a helping hand to the community.

CSR VISION OF THE COMPANY

The Company under its CSR Policy through sustainable measures


actively proposes to contribute to the Social, Economic and
Environmental Development of the community in which it
operates ensuring participation from the community and thereby
creating Goodness, Truthfulness, and Cleanliness in the society.

FUTURE PLANS

 Havmor Ice Cream, India’s second largest 100% real


milk ice cream brand that has delighted many with its
delicious offerings since 1944, has announced its
plans for further expansion and market development
across cities with an investment of INR 200 cr.
planned over the next 3 years. Havmor has now
officially launched its first new production facility
outside of Gujarat with a state of the art facility in
Faridabad adding a capacity of 25000 liters of ice -
cream per day. Havmor intends to scale this facility
up further to over 1 lakh liters per day with a
combined output of over 3 lakh liters per day. Today,
Havmor is readily available across 14 states and to
over 70% of India’s ice-cream consuming population
making Havmor the 2nd largest 100% real ice-cream
manufacturer in India.
 Havmor continues to expanding its operations
through various retail partnership and ice-cream
parlors in its six newest territories including Delhi
NCR, Haryana, UP in northern markets and in
southern markets namely Telangana in Hyderabad,
other centers in Andhra Pradesh, and recently in
Karnataka.
 These new investments are being made by the
company to help it reach a 1000 cr turnover by 2020.
