Mo' Pozole

Ingredients:

• 1 Gallon Water
• 1/4 cup Caldo De Pollo
• 3 tsp Smoked Paprika
• 1 tsp Cheyenne Pepper
• 2 tsp Chili Powder
• 2 tsp Italian Seasoning
• 4 tsp Onion Granulate
• 4 tsp Garlic Freshly (Minced)
• 1 lg can White Hominy
• 2 bundles Cilantro (chopped)
• 1 Fresh onion (chopped)
• 1 bunch Radishes ( sliced)
• Shredded Cabbage
• Arbol chile pods 2 oz bag
• 5lbs of Pork Butt/Shoulder
• 3 whole pig feet cut into 6ths

Directions:

• Dice the pork into golf-sized cubes.


• Put into a pot of water along with the precut pig's feet.
• Add the seasonings and garlic into the pot with the meat. Let boil until the pig's feet are extra tender.
• Add the hominy.
• If the water is low add chicken stock.
• Get the onion and dice small for a condiment, plus cilantro, chile abrol, cabbage and set to the side.
• When you make your bowl of pozole you top it with the condiments of your choice.
• Add lime to your soup if you'd like with a splash of Tapatio.
