Grilled Vegetable Bruschetta

Ingredients

• 12 asparagus spears
• 1 eggplant, sliced
• 1 zucchini, sliced
• 1 squash, sliced
• 1 red bell pepper
• Sprinkle, shaved parmesan
• Extra-virgin olive oil
• Salt TT
• Parsley, finely chopped
• 4 slices baguette
• 1 clove garlic, sliced thinly

Directions
1. Over medium-high flame, grill all the vegetables on a pan griddle, griddle or on a
barbecue grill. For the fresh red bell pepper--grill it whole. When it is charred, put it
in a food plastic bag and seal. After about 30 minutes, open the bag and take out the
pepper. Slice, peel and discard the seeds.
2. On a plate, put together all the vegetables. Drizzle with extra-virgin olive oil then
sprinkle with salt, parmesan and parsley.
3. Grill both sides of the bread on a barbecue grill, pan grill or griddle, in the oven or
even in a bread toaster.
4. Rub one side of the bread with the halved garlic while it’s still warm.
5. Drizzle with extra-virgin olive oil sprinkle parmesan, salt.
6. Put the vegetables on top and serve while still warm.

Homemade Beef & Potato Soup

Ingredients
• 1 pound ground beef
• 1/2 cup chopped onion
• 1/4 cup all-purpose flour
• 3 cup chicken broth
• 5 medium potatoes, peeled and cubed
• 5 medium carrots, chopped
• 2 celery ribs, chopped
• 2 teaspoons dried basil
• 1 teaspoons dried parsley flakes
• 1/2 teaspoon garlic powder
• 1/4 teaspoon pepper
• 6 ounces processed cheese (Velveeta), cubed
• 1 cup 2% milk
• ¼ cup sour cream

Directions
1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink;
drain fat. Combine flour and 1½ cups chicken broth until smooth. Add to beef
mixture. Bring to a boil, cook and stir until thickened.

2. Place all vegetables in sauce pot and stir in the potatoes, carrots, celery, seasonings
and remaining broth. Cover and simmer for 30 minutes until vegetables are tender.

3. Stir in cheese and milk. Cover and cook until cheese is melted, about 10 minutes
longer. Just before serving, stir in sour cream.
