Common Utensils, Machines and Processing Equipment in Meat Processing


Industry

Laboratory Exercise No. 1

I. INTRODUCTION

Tools, overalls and other protective working equipment represent the necessary
equipment for people working in the slaughterhouses, meat processing facilities and other
operations of the meat industry. These aids also help to protect meat and meat products
against the bacterial contamination. This category of working aids and means is very
wide and involves all things that are used by workers in the individual working
operations and situations. This category involves also all types of machinery, especially
those parts of these machines, which come in contact with the meat and different
containers, dishes, roast plates utensils and others aids. The current trend is oriented at a
more and moreintensive protection of hygienic quality and safety of food. The consumers
should be protected againstthe microbial contamination and for that reason, the
requirements concerning hygiene of individual ope-ra-tions are increasing not only in the
meat industry but also in catering facilities and similar establishments. In this exercise,
students will get acquainted with some important and recent utensils, machines and
equipment commonly used in meat processing industry.

II. Methods

Used internet connection in identifying utensils and equipment including their functions
and uses in food processing.

III. Results and Discussion


Common Utensils Uses and Functions
1. Knife Used for cutting and slicing of meat.
2. Hangs and hook Used to hang meat or the carcasses of animals such as
pigs and cattle.
3. Sharpening steel Used to continually keep edges of knife blades straight to
maintain a sharp edge after use.
4. Butcher blocks Used as a protective surface on which to cut or slice
meat.
5. Different container Used in storage, packaging and shipping.
6. Spoon and fork Used for food preparation to measure, stir and toss
ingredients. It also primarily used for eating.
7. Meat mallet Used to tenderize stabs of meat in preparation for
cooking.
Machines and Processing
Equipment Uses and Functions
1. Meat grinder Used for cutting, mixing, chopping or mincing. It also
helps to fragment or cut meat into slighter or small
pieces.
2. Meat mixer Used for various process of food such as mixing,
whipping and beating.
3. Meat timber To cut any sizes of meat in different pieces. It is
automatic and robotic solution.
4. Meatball forming Used for makingmeatballs, fishballs, beefballs, shrimp
machine meatballs and so on.
5. Bowl cutter Commonly used meat chopping equipment to produce
small or very small lean meat and fat particle.
6. Filling machine (sausage Used for filling all types of meat batter in containers
stuffer) such as castings, glass jars cans and etc.
7. Clipping machine Dedicated to the closing of the package.
8. Brine injector Serves for the injection of brine into meat. Used for
various type of ham, bacon and other whole muscle
products.
9. Tumbler or massager Used for processing of meat products such as whole
muscles or reconstituted hams.
10. Mixer blender Used to blend meat and spices or coarse and finely
chopped meat.
11. Emulsifying machine For the preparation of very fine meat emulsions.
12. Ice flaker To keep the temperature of meat batter low.
13. Frozen meat cutter Blocks into smaller pieces to make frozen meat suitable
for immediate comminuting in grinders, bowl cutters and
etc.

The importance of identifying the utensils, machines and equipment is for us to know
their uses, functions and on what proper equipment to be used on a particular activity
which already stated in the table. We are also used to know those equipment when we
have plans on entering a food industry, meat processing industry or in conducting our
labaratory as we go on in our discussion and also it would be easily for us to prepare the
food in the near future.

IV. Coclusion

I get acquainted and used to know the importance of utensils, machines and equipment
commonly used in meat processing industry. Along my research, it also thought me the
uses and it's functions to make the process and preparation more easier.
