Chex Muddy Buddies

Prep Time: 15 Mins Servings: 18 (1/2 cup each)

1 cup semisweet chocolate chips 1 tsp. vanilla


½ cup peanut butter 9 cups Chex cereal
¼ cup butter or margarine 1 ½ cups powdered sugar

1. In 1-quart microwavable bowl, mix chocolate chips, peanut butter and butter. Microwave
uncovered on High 1-minute; stir. Microwave until mixture can be stirred smooth. Stir in vanilla.
2. In large bowl, place cereal. Pour chocolate mixture over cereal, stirring until evenly coated.
Pour into 2-gallon food-storage plastic bag.Add powdered sugar. Seal bag; shake until well coated.
Spread on waxed paper to cool. Store in airtight container in refridgerator.

Stove-Top Directions: Into large bowl, measure cereal; set aside. In 1-quart saucepan, heat
chocolate chips, peanut butter and butter over low heat, stirring frequently, until melted. Remove from
heat; stir in vanilla. Proceed to steps 2 & 3.

Rice Krispy Treats


Prep&Cook Time: 30mins Servings: 24, 2x2 inch squares

¼ cup margarine or butter 6 cups Rice Krispies Cereal


1 pkg regular size marshmallows 1 cup Chocolate morsal bits

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted.
Remove from heat. Add in Rice Krispies.
3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with
cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.
French Toast
Prep Time: 10-20 mins Servings: 6 Slices

6 Slices of Bread ¼ tsp cinnamon


2 eggs Pinch of salt (optional)
2/3 cup milk 1 tsp. vanilla extract (optional)

1. Beat together egg, milk, cinnamon, vanilla and salt.


2. Heat a lightly oiled skillet or griddle over medium heat.
3. Soak bread slices in egg mixture for 20 second on each side, or until thoroughly coated.
Cook bread until both sides are lightly browned and crisp. Serve hot.

Pancakes
Prep Time: 15-25 mins Servings: 6 pancakes

1 egg 1 Tbsp. sugar


1 cup flour 1 Tbsp. baking powder
¾ cup milk ½ tsp. salt
2 Tbsp. melted butter or margarine

1. Bear egg with fork until fluffy. Beat in remaining ingrdients just until smooth. For thinner
pancakes, stir in additional ¼ cup milk.
2. Heat frying pan over medium flame.
3. Pour batter onto hot pan [use measuring cup to pour, it’s easier]. Cook pancakes until
puffed and dry around edges [bubbles form]. Turn and cook other sides until golden brown.
Blueberry Muffins
Prep Time: 15 mins, Cook Time: 20 mins Servings: 6 small muffins

1 egg 1 Tbsp. baking powder


¾ cup milk 1 tsp. salt
½ cup oil ¾ cup blueberries (if frozen: defrosted and
2 cups flour dried)
1/3 cup sugar

1. Preheat oven to 400


2. Beat eggs; stir in milk and oil. In a large bowl mix together flour, sugar, baking powder, and
salt.
3. Fill muffin cups ¾ full. Bake until golden brown, about 20 minutes.

Biscuits

2 cups all-purpose flour 1/3 cup

1. Preheat oven to 450


2. In a medium mixing bowl stir together flour, baking powder, and salt. Using a pastry blender cut
in shortening till mixture resembles coarse crumbs. Add the milk all at once.
3. On lightly floured surface, Quickly knead dough by gently folding and pressing dough 10-12
strokes or until nearly smooth. Pat or lightly roll dough to ½ inch thick, cut dough with floured 2 ½
inch biscuit cutter [use cup]
4. Bake for 10-12 mins or until golden brown.
Crunchy Ranch Fingers
Prep Time: 10mins, Cook Time 10-12mins Servings: 6 tenders

1 cup cornflake crumbs 1/3 cup ranch salad dressing


1 Tbsp. parsley 1 Tbsp. water
¼ tsp. salt ¾ lb. boneless skinless chicken cut into strips
1/8 tsp. pepper

1. Preheat oven to 425


2. Line a 15x10x1 inch baking pan with tin foil
3. Combine cornflake crumbs, parsley, salt and pepper
4. In separate bowl stir dressing and water
5. Dip chicken strips into dressing mixture, allowing excess to drip off, dip into crumb mixture to
coat.
6. Arrange strips in prepared pan and bake 12-15 minutes or until chicken is no longer pink.
Okazu
Prep&Cook Time: 20-25 Servings: 6-10

1 lb. ground beef 1 block firm tofu


½ white onion (yellow ball onion) ¼ cup soy sauce
¼ cup chopped green pepper 2 Tbsp. sugar
½ cup celery 2 Tbsp. Mirin (or wine)
¾ - 1 lb string beans, cabbage, or snow peas

1. Brown onion, celery, and green pepper in a deep pot/skillet, until just browned, then add ground
meat and cook all.

Impossible Cheeseburger Pie


Prep& Cook Time:45 mins Servings: 6-8

1 lb ground beef ½ tsp salt


1 ½ cup chopped onion ¼ tsp pepper
1 ½ cup milk 2 tomatoes (optional)
¾ cup Bisquick baking mix 1 cup shredded cheddar cheese

1. Preheat oven to 400, Grease pie plate, 10x1 ½.


2. Stir beef and onion over medium heat until beef is brown; drain. Spread in plate.
3. Beat milk, baking mix, eggs, salt and pepper until smooth [15 seconds w/blender on high or 1
min w/hand] Pour onto plate. Top with sliced tomatoes and sprinkle with cheese
4. Bake 25 minutes…bake until knife inserted into center comes out clean, if not, 5-8 minutes
longer. Cool 5 minutes before eating.
Grandma Emi’s Chicken Soup
1 Costco or Whole Rotisserie cooked chicken 1 large onion
2-3 carrots 2 cups cooked pasta noodles (your choice)
2-3 stalks celery 1 tsp salt
2 potatoes ¼ tsp pepper

1. Take the meat off the bones of the entire chicken and set aside. Place the carcass and bones
(include the wings and skin- has lots of flavor!) into a large pot and cover with water (use the
drippings at the bottom of the chicken container for more flavor as part of the water)
2. Put in 1 carrot peeled and cut in ¼; 1 celery-use the leafy part of the inner celery stalk too, 1
onion cut into ¼s cover and boil then simmer on low for 1-1 ½ hours. When simmered drain into a
sieve into a pot (now you have broth only) take out any small floating fat.
3. Cube 2 carrots, 1 celery, 2 potatoes and add to stock until cooked. Add pasta and cubed
chicken. Season with salt and pepper.

Swanson Chicken & Carmelized Onion Soup

2 tsp. Vegetable Oil


2 Med. Onions (Cut in ½ and thinly sliced)
8 c. Swanson Broth
1/8 tsp. Ground Black Pepper
2 Med. Carrots (Sliced)

Chicken Broccoli Bake
Prep&Cook Time: 1 hour Servings:6-8

2 whole chicken breasts or equivalent ½ cup mayonnaise


2 Tbsp. butter ½ cup mozzarella cheese
1 pkg. frozen broccoli [11 z], or 1 head fresh Breadcrumbs, tater tots, croutons, or can friend
1 can cream mushroom soup [11oz] onions
½ cup milk

1. Preheat oven to 375


2. Arrange chicken cubes in baking dish, drizzle butter over chicken and season with salt, pepper
(onion flakes, etc.)
3. Bake @ 375 for 40 mins or until pink is gone
4. Place cooked and drained broccoli over chicken
5. Blend soup, mayo, milk and cheese. Pour over chicken and broccoli
6. Top with crumbs, tots, onions or croutons
7. Bake 20 more minutes, serve over rice.
Peanut Butter Blossoms
Prep & Cook Time: 45 mins Servings: 54 cookies

½ cup shortening 1 tsp baking powder 1 tsp vanilla


½ cup peanut butter 1/8 tsp baking soda 1 ¾ cups all-purpose flour
½ cup granulated sugar 1 egg ¼ cup granulated sugar
½ cup packed brown sugar 2 Tbsp milk Milk chocolate kisses or stars

1. Preheat oven to 350


2. In a large mixing bowl beat the shortening and peanut butter with an electric mixer on medium
speed 30 seconds. Add granulated sugar, brown sugar, baking powder, and baking soda. Beat
until combined. Beat in egg, milk, and vanilla till combined. Beat in flour.
3. Shape dough into 1-inch balls. Roll the balls in the ¼ cup granulated sugar. Place 2 inches
apart on ungreased cookie sheet. Bake 10-12 minutes or till edges are firm and bottoms are lightly
browned. Immediately press a chocolate kiss into each cookie’s center.
Homemade Macaroni and Cheese
8 cups water ½ tsp. salt
2 cups medium-sized elbow macaroni 2 cups milk
¼ cup butter 1 ½ cups grated sharp cheddar cheese
¼ cup flour ¼ tsp. pepper

1. Pour the water and tablespoon salt in a 4-5 quart pot and set over high heat. When the water
boils add the macaroni and stir. After 10 minutes, check, If still firm, cook for 2 more minutes.
2. Melt the butter in a small saucepan over medium heat, stirring regularly. Add flour, stir
continually. Slowly pour in milk and stir until mixture thickens. Add the cheese, salt, and
pepper. Stir until smooth. Salt to taste.
3. Pour cheese sauce over macaroni.

3 ½ c. Flour 1 ½ c. crushed potatoe chips (classic lays)


1 ¼ c. Sugar 2 tsp. Vanilla
1 lb. Butter or [½ lb margarine & ½ lb butter]

1. Cream butter, sugar, and vanilla. Add flour. Mix in crushed potatoe chips (best by hand). Drop
by tsp onto cookie sheet
Snickerdoodles
Bake at: 400° Bake For: 8-10 mins Makes:

¼ c. Butter or Margarine 1 tsp. Cream of Tartar


¼ c. Shortening 1/8 tsp. Salt
¾ c. Sugar
1 Egg Coating:
1 1/3 c. Flour 2 tsp. Sugar
1 tsp. Baking Soda 2 tsp. Cinnamon

1. Cream butter, shortening, and sugar. Add egg and beat until light and fluffy.
2. In another bowl, mix flour, baking soda, cream of tartar, and salt. Add to wet mixture.
3. Shape dough into balls and roll in coating mixture.

Bake at: 400° Bake time: 5-8 mins Makes: 1 dozen

3 c. Flour 1 Egg (Slightly Beaten) Frosting:


1 ½ tsp. Baking Powder 3 TBSP Milk 4 c. Powdered Sugar
½ tsp. Salt 1 tsp. Vanilla ¼ c. Milk

1 c. Butter (2 sticks)

1. Combine flour, baking powder, salt and sugar. Cut in butter using pastry mixer. With wooden
spoon add egg, milk, and vanilla. Mix thoroughly. Dough should be slightly sticky.
2. Roll out to 1/8 in. thickness and cut into desired shapes. Bake 5-8 mins.
Down to Earth Granola
Prep time: 40 mins Bake time: 40 mins

4c. Old Fashion Oats ½ tsp. Ground Cinnamon


¾ c. Sliced Almonds ¼ c. Cooking oil
¾ c. Pecans (chopped) ¼ c. Honey

2. Combine oats, almonds, pecans, brown sugar, cinnamon.
3. Heat oil and honey is glass bowl in micro for 30sec-1min. Whisk until mixture thickens
