The Importance of Hygiene Monitoring

• Cleaning and sanitation programs are needed to prevent

pathogen and spoilage microorganisms as well as allergens in
food production facilities

• Hygiene monitoring is crucial to assess the effectiveness of

your cleaning and sanitation programs

• Hygiene monitoring is essential to support programs that

help to identify harborage sites for pathogens and spoilage
microorganisms

Hygiene monitoring generates data to determine if a surface has been cleaned sufficiently
and enables the high-risk decision to be made to start food production

Cleaning and Sanitation

Cleaning Sanitation
• Removal of debris • Reduction of microorganisms
• Improves efficacy of sanitizers to • If not combined with a cleaning
inactivate contaminants procedure, sanitation efficacy is reduced
• Should do the majority of the work and requires larger amounts of sanitizer

Now for a Poll!
How do you verify cleaning and sanitation?
Select all that apply:
A. ATP detection
B. Microbiological tests
C. Visual inspection
D. We currently do not have a verification
program

© 3M 2020. All Rights Reserved 13

13

How to verify that cleaning and sanitation

programs are working?

• Visual assessment is quick and it should be set as a minimum expectation; however, it is

highly a subjective approach
• Microbiological tests provide valuable quantitative information; however, do not enable
making fast decisions. Typically used for validation.
• ATP sees beyond the visual inspection and provides quantitative information that verify the
cleaning procedures are working

Guidance for Constructing Sampling Plans
Map your facility: This is a team effort that requires expertise from different people in your plant
to help you to identify sites in your facility

• Focus in Zone 1 and Zone 2

• Identify 100-500 sites

• You will not test them every time,
but they should cover your facility
• You can randomize test points in the
3M Clean-Trace Software

Setting-Up Pass/Fail Limits

Start with a baseline

(suggested starting point is

150 RLU as pass, 300 RLU as fail)

Gather results after a good clean

from surfaces for a defined period of
time (e.g., 3 weeks)

Adjust pass/fail limits for those

surfaces using the data collected

Review on a regular basis (e.g.,

quarterly)

18
A Note About RLU Readings
• The 3M Clean Trace System does not produce “zero” RLU results
• Blank swabs will produce low RLUs levels
≤ 35 RLU for AQF100
≤ 20 RLU for AQT200
≤ 25 RLU for UXL100

• True reading is shown – the algorithm does not hide background RLUs
• Allows for greater ability to track and trend your results for different surfaces,
as it is not possible to see trends when your results are only 0 and 1

How to Swab Surfaces

Hold the swab between the thumb and
forefinger in such a way that the swab
can be rotated

1 2
Do not touch the swab near the swab bud

Apply downward
pressure

3 4
Flat surface: 10 cm x 10 cm / 4 in x 4 in

Swabbing UXL100 Dos and Don’ts

Do Don’t

 Apply pressure on swab & rotate ✘ Touch the swab or surface tested with hands

 Swab consistently on area sampled for test point ✘ Swab through puddles as extractant present
and method for collection in the swab tip will be washed away
 After activation and shaking side to side,
✘ Swab hot surfaces – let them cool and dry
measure swab immediately

 Remove used swabs from the instrument ✘ Lay swabs down after activating

 Place the Clean-Trace tests at room temperature

✘ Carry or store luminometer with used swab inside
for at least 10 minutes before use
 Can leave swab un-activated for
✘ Use expired swabs
up to 4 hours

27
Guidance for Swabbing
Best practice: Between the cleaning and sanitation step
When to swab? • Sanitizer does not work on a dirty surface
• Swabbing after cleaning reduces the risk of sanitizer interference

Use of swabs Swabs were designed for versatility because not all facilities
after sanitation have flexibility to swab in-between cleaning and sanitizing
• AOAC PTM showed that there was limited interference by residual
sanitizers (~200 ppm)

Verify for Because we cannot predict interactions with all sanitizers in

interference all situations, it is important to verify that the sanitizer you
use will not interfere with the ATP detection.
• Blank swabs dipped in diluted sanitizer (use same concentration) to look
for high results
• Dipped swabs in diluted sanitizer dosed with ATP to look for interference
with readings

Sample Collection for Water Swabs

• Collect desired water sample using a sterile cup

• Dip the water swab head into the sample
• Remove swab without swirling

3M™ Clean-Trace™ Luminometer LM1
Key Functions
• Contains all sampling plans and points
• Contains randomized sampling points
• Reads the amount of light emitted by the swab
• Stores Relative Light Unit (RLU) results until syncing with software
• Enable the recording of additional test types (visual inspection,
microbial, allergen)
• Displays picture of test point to enable sampling consistency
• Allows users to select pre-defined comments after a test
• Allows re-test if necessary
• Syncs with software using USB, Wi-Fi or Bluetooth

© 3M 2020. All Rights Reserved 31

31

Best Practices for Luminometer Use

• Allow the LM1 to charge for 4 hours prior to use
• Check Date/Time prior to use (from the top of the screen swipe down
to be brought to the date and time settings)
• LM1 will enter sleep mode after 5 min and shutdown automatically after
2.5 hrs. Power down if not planning to use.
• Remember: the only way to wake the unit from sleep mode is by
pressing the up arrow for 2-3 seconds
• When you see a black screen, start by pressing the up arrow. If it
doesn’t wake, then press the power on bottom to power the unit
back on
• Keep the LM1 plugged in to a power source when not in use
• Note: If plugged in to PC, it only charges when the PC is fully
powered (not on standby or off)
