    exican food connects the tradition of Spanish cuisine that was appeared in Mexico in the 16th century and Indian cuisine. Firstly, the basic set of the ingredients based on corn, beans, chili, Mexican cactus, tomatoes, and various spices. Not the last role in the cooking played chocolate. Spanish brought to the Mexicans wheat, barley, and rice, different kinds of meat, olive oil, nuts, wine, and parsley.

    Chili pepper is the most popular ingredient for the Mexican dishes. Mexicans grow different kinds of these vegetables. There are many types of red chili with varying degrees of severity. It has the same world for foreigners, but real Mexican chef can differentiate each type of the chili.

    Chipotle is one more type of the Mexican chili. It has a red color. This vegetable is already prepared: dried and smoked. The tradition of preparing the spicy vegetables came from the Aztec time. This method was one of the most reliable for that period – the smoking allowed to save the vegetables and fruits for a long time.

    The cheese was one of that things that was invented by Spanish. Mexico has a big number of cows, goats, and sheep. Especially this factor gave the possibility to expand the ratio of an everyday meal. Thanks to this the famous Mexican cheese Manchego was discovered.

    Mexico is famous by corn. It is boiled, simmered, and baked. The most delightful and favorite corn dish is a tortilla. Rice and beans are also well-known in Mexico. The color of the beans (red or black) depends on the region of the country. Bean dishes can help to let loose the hot taste of the main course.

    Well, Mexican cuisine is a blend of both Spanish and Mexican cuisines. Side note, Spanish and Mexican are not the same thing. Now, back to the gist. It uses a lot of unique spices and ingredients. Trust me, when it comes to their dishes, they do not hold back on spices, not at all. Their recipes almost always contain some garlic, oregano, thyme, cumin and a hundred different types of chili! No, they are not Indian and no, not all at once. That would probably disintegrate your tongue. The sheer amount of spice alone is like a signature in the Mexican kitchen and this makes them different from others across the world.

    Mexican cuisine is in itself a work of art. It is beautiful in its complexity, with its blend of ingredients, colors and seasonings, but how can you replicate that? You don't have to be a world-renowned chef; world class cook or even a Mexican. This is what this book is about, teaching you how to make Mexican food in your own kitchen. Yes, without a master's degree in foreign cuisine.
