Observation: House ‘Soul Sauce’ containing mayonaise is stored in a squeeze bottle in a pan in the top
loader of the sandwich cooler at 57 F for an unknown period of time. Cooler is functioning but sauce is not
effectively cold holding in this location.
Corrective Action(s):Discard the potentially unsafe ‘Soul Sauce.’ When cold holding TCS foods, store in
equipment where it can be maintained at 41 F or less such as in the reach-in portion of cooler or in a
specialty pan made for squeeze bottles. Maintain cold potentially hazardous foods at or below 41°F.
