Observation: Food handler washed gloved hands at hand sink rather than removing gloves, washing hands, and
putting on new single-use gloves.
Corrective Action(s):Gloves for food handling are only required when handling ready-to-eat foods, are
single-use (meant for only one task), and must be removed and hands washed after contamination.
Action(s) Taken: Proper glove use was reviewed with Owner. Owner is changing policy on how gloves are used in
the facility. (Corrected on Site)

POTENTIALLY HAZARDOUS FOOD, COLD HOLDING
Observation: Cooked noodles for chicken noodle soup held in a container on top of a pan of ice near the steam
table is not an effective method of cold holding. Noodles were noted at 52 F after 2 1/2 hours of storage on top of
ice.
Corrective Action(s):Rapidly cool the noodles to 41 F or below and maintain at 41 F or below using
refrigeration or other effective means. If using ice for refrigeration it must be surrounding and level with the food
product and capable of maintaining the food at 41 F or less.
Action(s) Taken: The Owner moved the noodles into the walk-in cooler. Safe cold holding options were
reviewed. (Corrected on Site)

EQUIPMENT, FOOD CONTACT SURFACES, AND UTENSILS
Observation: The underside of the deli slicer blade and surrounding blade guard are visibly soiled with food. Deli
slicer was ineffectively cleaned.
Corrective Action(s):Properly clean the deli slicer to remove all visible food and food residue before rinsing and
sanitizing. Parts may need to be removed and cleaning tools such as brushes may need to be used for
effective cleaning.
Action(s) Taken: Deli slicer was effectively cleaned. (Corrected on Site)

READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DATE-MARKING
Observation: A. Sliced ham and open can of mushrooms from yesterday (10/21) are improperly date marked to
have a shelf-life of 10 days (labeled with discard date of 10/31).
B. Open container of feta cheese is not date marked. Feta was opened on (10/18).
Corrective Action(s):Correctly date label the noted foods to have a discard date that does not exceed seven days
(with open/prep date counted as day one).
Action(s) Taken: A. Date marks were corrected for ham and mushrooms.
B. Feta was date labeled. (Corrected on Site)
