Introduction

Japanese cuisine includes regional and traditional food from all over Japan .
The traditional cuisine of Japan is based on rice with various soups and
many other dishes with plenty of seasonal ingredients .
Seafood is common and often prepared on a grill, but it can also be cooked
as raw like sushi . Apart from rice as the main side meal, noodles are
common too !
Japanese gastronomy is based on a combination of basic ingredients
( primarily rice and noodles ) with soups, fish, meat, vegetables and tofu
cheese .
The main spices are soya sauce, powdered ginger, garlic, sesame oil, chili ...
As for the method of cooking, the food is primarily used raw, grilled,
steamed, or cooked . The most important requirement in preparing food is
to preserve the natural characteristics of the ingredients, their appearance,
color, and taste .
Given that Japan is, you will agree, quite far away, we bring 30 delicious,

Japanese cuisine has experienced a real explosion of popularity, due to the
urge to try something new and exotic, and because of the fact that the
Japanese culinary tradition is based on respect of nature . Therefore, it is
extremely healthy .
When it comes to food, the Japanese are one of the most enthusiastic and
passionate people . Their food is often one of the main motivations to
travel through their own country .
For this reason, many smaller and larger cities in Japan are primarily
famous for their local specialty . Food is a form of art, and often even the
simplest dishes are prepared by chefs, who have been trained for years .
Japan is very proud of its four distinct seasons and at any time marks the
beginning of even more delicious tastes . This can be seen in stores, hotels,
and restaurants - where menus often change to show what is available and
what's new in the season .
The Japanese people consume much more fish than the average person in
the Western countries, and that is a major factor in the relatively low rate of
heart disease in this country . Seafood is eaten in almost every imaginable
form, from raw sushi and sashimi, to grilled or cooked fish .
1 . Ramen with Soya Sauce

Ramen is a traditional Japanese meal, which consists of 3 main parts :


Soup, ramen noodles, and various toppings .
Cooking time : 20 minutes
Serving : 2
Ingredients :
1 chicken soup cube
2 oz . of cut ginger
2 tbsp . of powdered garlic
1 teaspoon of powdered chili
1 tbsp . of soya sauce
2 packs of ramen noodles
Salt to taste
1 egg
1 leek
1 cup of cooked corn
7 oz . of ham
Instructions :
1 . Prepare egg in water . When water boils, cook for another 10 minutes .
When it is done, peel it and cut in half .
2 . Pour 2 cups of water in one cooking pot . Add soup cube, ginger, and
garlic . Cook for 20 minutes .
3 . Add soya sauce and chili . Cook only for 5 minutes more .
4 . Cut leek thinly, ham into slices .
5 . Prepare noodles by following the instructions noted on the pack .
6 . Serve all together with cooked corn .
7 . Decorate to taste and enjoy !
2 . Vegan Ramen Noodles

Cooking time : 30 minutes

Ingredients :
1 green bell pepper
2 oz . of celery
5 oz . of borecole
3 oz . of carrots
1 tbsp . of soya sauce
5 oz . of ramen noodles
1 teaspoon of powdered ginger
1 tbsp . of chili sauce
Instructions :
1 . Clean and cut all vegetables into smaller pieces .
2 . Put them in a cooking pot and cover them with water . Start cooking .
3 . After 5 minutes of cooking, add all spices . Cook until vegetables
become soft .
4 . When vegetables are ready, add noodles .
5 . Cook for 10 to 15 minutes and then serve .
6 . Enjoy !
3 . Japanese Apple Cake

Cooking time : 90 minutes


Serving : 5
Ingredients :
17 oz . of Fuji apple ( pink lady )
½ cup of lemon juice
½ cup of water
For the dough :
2 eggs
4 oz . of sugar
½ cup of milk
1 tbsp . of melted butter
3 oz . of flour
2 oz . of almonds
For the caramel sauce :
2 tbsp . of sugar
3 tbsp . of melted butter
Instructions :
1 . Peel the apples and cut them into slices .
2 . Put them in a bowl with lemon juice and water . Let them sit there for a
while .
3 . In another bowl, mix eggs, sugar, milk, flour, and melted butter . Use
mixer .
4 . Combine apples with dough mixture .
5 . Pour mixture onto the baking tray . Cover it with milled almonds .
6 . Bake for 50 minutes at 225 F .
7 . In a meanwhile, prepare the caramel sauce :
In one small bowl, mix sugar with butter .
Put the bowl in a microwave and heat it for 5 minutes .
8 . Decorate your cake with caramel sauce and serve . Enjoy !
4 . Vegetable Vegan Sushi

Cooking time : 40 minutes


Serving : 2
Ingredients :
1 cup of rice
2 cups of water
½ cup of lemon juice
1 carrot
1 cucumber
1 avocado
6 nori layers
½ cup of soya sauce
4 tbsp . of sesame oil
1 red bell pepper
Instructions :
1 . Prepare rice in 2 cups of salt water . Cook for 10 minutes .
2 . When it is done, combine it with lemon juice . Let them cool .
3 . Grind the carrot . Cut cucumber, avocado, and red bell pepper into small
cubes .
4 . Spread rice mixture over each nori layer . Then, add vegetables .
5 . Roll the layers and serve sushi with soya sauce .
6 . Enjoy !
5 . Chanko Nabe

A very popular Japanese dish . Used by sumo fighters to gain weight .


Very healthy and protein - rich indeed !
Cooking time : 90 minutes
Serving : 6
Ingredients :
For the soup :
8 cups of water
4 soup chicken cubes
2 tbsp . of soya sauce
2 tbsp . of rice wine
7 oz . of Chinese cabbage
7 oz . of fresh sour cabbage
3 carrots
3 leeks
4 oz . of mushrooms
7 oz . of tofu
For meatballs :
17 oz . of minced chicken meat
2 leeks
1 egg
2 tbsp . of bread crumbs
Pinch of salt
Instructions :
1 . Prepare the meatballs :
Mix minced chicken meat with cut leeks, egg, and breadcrumbs .
Pour them with salt .
Make small balls out of the mixture .
2 . Prepare the soup :
Dissolve chicken soup cubes in 8 cups of water . Put them to cook in
one cooking pot .
Add soya sauce, and rice wine .
After 10 minutes of cooking, add meat balls .
Cut mushrooms and carrots . Add them to the soup too .
After another 5 minutes, add cut cabbage and cut leek .
Cook until the meatballs and cabbage become soft . ( Around 40
minutes )
When the soup is about to get ready, add tofu . ( Optionally )
3 . Serve and enjoy !
6 . Easy Japanese Sesame Spice

Cooking time : 10 minutes


Ingredients :
4 oz . of sesame
1 teaspoon of salt
Instructions :
1 . Put sesame to cook on low heat . ( In a cooking pot )
2 . After 5 minutes of cooking, switch to the medium heat . Mix
constantly !
3 . Cook for another 5 minutes and then remove it from the heat .
4 . Put sesame in a blender and blend well .
5 . Enjoy !
7 . Japanese Stir Fry

Easy and fast to prepare ! Marinated meat in a fine vegetable sauce !


Cooking time : 45 minutes
Serving : 4
Ingredients :
12 oz . of pork or chicken meat
10 oz . of mushrooms
1 green bell pepper
1 garlic clove
For stir - fry sauce :
2 tbsp . of soya sauce
Pinch of salt
½ tbsp . of sugar
1 teaspoon of fish sauce
For marinade :
2 teaspoons of soya sauce
2 teaspoons of starch
1 teaspoon of oil
Instructions :
1 . Cut meat into small lines .
2 . Mix all ingredients listed for the marinade and soak meat in it .
3 . Cut garlic into smaller pieces and then sauté it in oil .
4 . After 5 minutes of frying, add meat to the garlic and continue .
5 . Prepare stir - fry sauce :
Mix all ingredients listed
6 . When the meat becomes light brown, add green bell pepper ( which you
previously cut into lines ).
7 . Pour stir - fry mixture over meat and cook for 5 more minutes .
8 . Serve with rice and enjoy !
8 . Japanese Soup with Onion

Cooking time : 55 minutes


Serving : 4
Ingredients :
2 onions
2 garlic cloves
4 oz . of celery
4 cups of water
1 vegetable soup cube
2 carrots
7 oz . of champignons
3 leeks
Salt and pepper to taste
1 tbsp . of soya sauce
Instructions :
1 . Cut onions, carrots, celery, and garlic into thin lines .
2 . Sauté onion in an oiled cooking pot .
3 . Add carrots, celery, and garlic . Let them sauté .
4 . In a meanwhile, dissolve 1 soup cube in 4 cups of water .
5 . Cover vegetables with soup cube mixture and cook for 30 minutes .
6 . Cut champignons and leeks into small circles .
7 . After 30 minutes of cooking, add champignons, soya sauce, and leeks .
8 . Serve hot and enjoy !
9 . Smiley Sandwiches

Easy to make and fun breakfast . Perfect for your kids !


Cooking time : 90 minutes
Serving : 4
Ingredients :
9 oz . of flour
½ cup of milk
½ pack of instant yeast
½ teaspoon of salt
1 egg
1 oz . of melted butter
1 teaspoon of salt
For topping :
2 hard - boiled eggs
1 leek
6 slices of ham
1 egg yolk ( for coating )
1 tbsp . of mayonnaise
Instructions :
1 . Combine milk, sugar, and yeast in one bowl . Mix them with mixer until
you get dough mixture .
2 . Gradually, add flour to the dough mixture, along with the salt, butter, and
egg . Knead the dough from the mixture . Let it sit for 40 minutes in a
fridge .
3 . After that, separate the dough into 6 parts . Stretch each one into a
sandwich size .
4 . Coat egg yolk over dough pieces .
5 . Cut 2 boiled eggs into 3 parts each . ( To get 6 pieces )
6 . Put on each dough 1 egg slice and 1 ham slice . Cover everything with
cut leek and mayonnaise .
7 . Bake them for 15 minutes at 225 F .
8 . Serve hot with yogurt . Enjoy !
10 . Tonkatsu

Cooking time : 45 minutes


Serving : 4
Ingredients :
14 oz . of pork steaks
Salt and pepper to taste
1 egg
1 teaspoon of oil
1 tbsp . of flour
3 tbsp . of breadcrumbs
1 / 3 cup of oil
Tonkatsu sauce :
2 tbsp . of Worcestershire sauce
2 tbsp . of ketchup
1 tbsp . of oyster sauce
1 tbsp . of powdered sugar
Instructions :
1 . Prepare the meat :
Cut steaks into slices . Make a few cuts in each one . ( See picture
bellow )
Beat them .
Rub salt and pepper to taste into steaks .
Soak each steak slice first into the flour, then into an egg and finally
into the breadcrumbs .
2 . Fry meat in an oiled frying pan .
3 . In a meanwhile, prepare the Tonkatsu sauce by mixing all ingredients
together .
4 . Cover meat with prepared sauce and serve with rice .
5 . Enjoy !
11 . Japanese Potato Salad

Cooking time : 30 minutes


Serving : 6
Ingredients :
2 hard - boiled eggs
3 potatoes
1 cucumber
1 carrot
1 onion
1 leek
For topping :
3 tbsp . of rice vinegar
6 tbsp . of mayonnaise
1 tbsp . of mustard
Salt and pepper to taste
Instructions :
1 . Peel potatoes and cut them into small cubes . Cook potato cubes in salt
water .
2 . Add ground carrot and cook until potatoes become soft .
3 . Separately, cook eggs .
4 . Put peeled egg, cooked potatoes, and carrot into a blender . Blend
thinly .
5 . Peel the cucumber and cut it into small circles . Cut onion and leek into
small cubes . Salt them .
6 . In one bowl, prepare topping :
Combine all ingredients listed and mix them with an egg beater or a
mixer .
7 . Combine everything together and serve on one bigger plate .
8 . Enjoy this salad with grilled meat or fish !
12 . Japanese Cheesecake

Cooking time : 100 minutes


Serving : 6
Ingredients :
6 eggs
9 oz . of cream cheese
2 oz . of butter
7 tbsp . of milk
3 oz . of flour
1 oz . of starch
½ teaspoon of salt
3 tbsp . of lemon juice
½ teaspoon of baking powder
6 oz . of sugar
Instructions :
1 . Separate egg yolks from egg whites .
2 . Melt butter with cream cheese until you get a homogeny mixture .
3 . Gradually, one by one, add flour, starch, salt, 2 oz . of sugar, egg yolks,
and lemon juice to the butter mixture . Mix until you get a homogeny
mixture .
4 . Blend egg whites until you get foam . When you get foam, add baking
powder and 4 oz . of sugar .
5 . Carefully, combine white and yellow mixture .
6 . Bake resulting mixture in the oven for 60 minutes at 200 F . ( Use
cooking pot or a cake mold ).
7 . After 60 minutes of baking, turn the oven off but keep the cooking pot
inside for another 30 minutes .
8 . Serve with powdered sugar and a fruit to taste . Enjoy !
13 . Teriyaki Chicken

Cooking time : 25 minutes


Serving : 4
Ingredients :
20 oz . of chicken meat
7 oz . of red bell pepper
7 oz . of green bell pepper
3 leeks
6 oz . of fennel
2 garlic cloves
1 cup of rice
3 tbsp . of oil
½ teaspoon of salt
½ teaspoon of pepper
For teriyaki sauce :
½ cup of soya sauce
3 tbsp . of honey
3 tbsp . of apple vinegar
Instructions :
1 . Cook rice in 2 cups of salt water . When it is done, strain the water and
let rice aside .
2 . In a frying pan, pour soya sauce, apple vinegar, and honey . Let them
cook for 10 minutes .
3 . Cut chicken into smaller pieces and prepare them in an oiled frying pan .
When they become yellow, add teriyaki sauce . Fry them together for
another 5 minutes .
4 . Cut green and red bell peppers into lines . Sauté them in oil shortly and
then add onion and garlic ( cut into small cubes ). Spice them .
5 . Serve everything together and enjoy !
14 . Chicken Legs in Chocolate

You must admit that this recipe looks very strange, but – that is just
Japan !
Cooking time : 45 minutes
Serving : 1
Ingredients :
1 chicken leg
2 vanilla ice cream balls
For the chocolate sauce :
½ cup of water
½ cup of cacao
½ cup of powdered sugar
4 oz . of melted chocolate
Instructions :
1 . Cook chicken leg in water .
2 . Prepare chocolate sauce :
Mix all ingredients listed for chocolate sauce in one cooking pot .
Cook them for 2 minutes only .
3 . Cover chicken leg with chocolate sauce and it is ready !
4 . Serve with vanilla ice cream and enjoy !
15 . Yaki Nasu Salad

Balanced eggplant salad the Japanese way .


Cooking time : 45 minutes
Serving : 2
Ingredients :
2 eggplants
4 tbsp . of soya sauce
2 tbsp . of apple vinegar
2 tbsp . of lemon juice
½ tbsp . of powdered ginger
1 leek
2 teaspoons of sesame seeds
Salt to taste
Instructions :
1 . Put eggplants into a casserole dish and bake them for 20 minutes at 250
F.
2 . After that let them cool . Peel them and cut into slices .
3 . Cover eggplant slices with sesame seeds .
4 . In one bowl, mix the rest of the ingredients . ( Except leek )
5 . Cover eggplant with ingredients and let it sit in a fridge for at least 30
minutes .
6 . Add cut leek and serve .
7 . Ideal salad for fish meat or sushi . Enjoy !
16 . Healthy Japanese Juice

Cooking time : 5 minutes


Serving : 2
Ingredients :
2 carrots
2 oranges
1 lemon
2 tbsp . of powdered ginger
2 tbsp . of honey
1 cup of orange juices
Instructions :
1 . Grind the carrots . Squeeze the lemon and oranges .
2 . Put them all in a blender . Add honey, ginger, and orange juice .
3 . Blend them together well .
4 . Serve and enjoy !
17 . Japanese Omelet with Rice and Chicken

Cooking time : 35 minutes


Serving : 4
Ingredients :
1 onion
14 oz . of chicken meat
1 tbsp . of oil
7 oz . of peas
7 oz . of cooked rice
2 tbsp . of ketchup
2 tbsp . of soya sauce
Salt and pepper to taste
For omelet :
4 eggs
4 tbsp . of milk
4 tbsp . of ground cheese
2 tbsp . of oil
Instructions :
1 . Cut onion and chicken into small pieces to taste . Sauté them in oil .
2 . Fry until meat becomes soft and dark yellow .
3 . Then, add peas . Mix constantly .
4 . After 10 minutes of frying, add rice ( which you previously cooked in
water ).
5 . Add ketchup and soya sauce . Continue frying for a few minutes more .
6 . In a meanwhile, prepare the omelet :
Fry eggs in an oiled frying pan .
After 3 minutes of frying, cover them with ground cheese and milk .
Fry for 3 minutes more .
7 . Combine meat and eggs in one frying pan and mix them well .
8 . Serve and enjoy !
18 . Shogayaki

Shogayaki is a Japanese sweet meat with ginger . Easy and fast to make !
Cooking time : 35 minutes
Serving : 4
Ingredients :
17 oz . of chicken meat
Salt and pepper to taste
1 tbsp . of oil
1 leek
For sweet sauce :
1 onion
1 garlic clove
1 teaspoon of ginger
2 tbsp . of soya sauce
2 tbsp . of red wine
1 teaspoon of sugar
Instructions :
1 . Grind onion, ginger, and garlic . Mix them with soya sauce, red wine,
and sugar .
2 . Cut meat into thin slices . Pour salt and pepper over slices .
3 . Prepare meat in an oiled frying pan . This should not be long, if meat is
thin .
4 . When meat is done, pour recently prepared sweet sauce into the frying
pan . Add cut leek .
5 . Cook until sauce boils .
6 . Serve hot with rice or cooked vegetables to taste . Enjoy !
19 . Japanese Spring Rolls

Cooking time : 60 minutes


Serving : 4
Ingredients :
For the dough :
2 cups of flour
6 tbsp . of starch
2 . 5 cups of water
½ teaspoon of salt
For stuffing :
4 garlic cloves
1 onion
2 carrots
1 cup of spinach
1 zucchini
1 red bell pepper
1 cup of mushrooms
Instructions :
1 . Cut garlic cloves, onion, carrots, spinach, zucchini, pepper, and
mushrooms into smaller pieces to taste .
2 . Mix flour, water, starch, and salt together . Use a mixer and then let the
mixture sit for at least 30 minutes in a fridge .
3 . From the resulting mixture, make thick pancakes in an oiled frying pan .
4 . Fry vegetables in a frying pan . Spice them to taste ( soya sauce, ginger,
salt, pepper, red pepper …).
5 . Fill pancakes with vegetables and then roll them .
6 . Fry the resulting rolls in deep oil for 3 minutes each .
7 . Serve and enjoy !
20 . Japanese Pancakes

Cooking time : 45 minutes


Serving : 4
Ingredients :
1 cabbage head
1 zucchini
1 red bell pepper
4 tbsp . of oil
1 onion
2 cups of flour
2 tbsp . of water
Instructions :
1 . Cut onion and pepper into small cubes and then sauté them in an oiled
frying pan .
2 . Wash the zucchini and cut it into small cubes too . Grind the cabbage .
3 . Add them to the frying mixture and continue .
4 . Then prepare the pancakes :
Combine flour and water . Use mixer .
Add fried vegetables to the mixture .
c . With the kitchen spoon, pour mixture into an oiled frying pan and make
thick pancakes .
5 . Serve with sauce to taste and enjoy ! ( We suggest Yum Yum sauce,
which you can find on the next page )
21 . Yum Yum Sauce

Amazing Japanese sauce which can be used with many meals and
ingredients – vegetables, meat, rice … Taste is fantastic every time !
Ingredients :
1 cup of mayonnaise
4 tbsp . of water
1 teaspoon of tomato juice
1 tbsp . of melted butter
1 tbsp . of powdered garlic
1 teaspoon of sugar
½ teaspoon of milled red pepper
Pinch of cayenne pepper
Instructions :
1 . Mix all ingredients together in a blender . If you do not have a blender,
you can use a mixer .
2 . Put resulting sauce in a bowl, cover it with aluminum foil .
3 . Let it sit in a fridge during the night .
4 . Enjoy !
22 . Teriyaki Chicken with Vegetables

Cooking time : 35 minutes


Serving : 4
Ingredients :
2 tbsp . of oil
17 oz . of chicken fillets
1 onion
1 garlic clove
1 carrot
1 zucchini
Salt and pepper to taste
For the red sauce :
½ cup of teriyaki sauce
2 tbsp . of ketchup
1 tbsp . of cut coriander
Instructions :
1 . Clean and cut chicken fillets into small lines .
2 . Prepare chicken in an oiled frying pan .
3 . Cut garlic, onion, carrot, and zucchini into thin lines . Add them to the
chicken .
4 . Mix teriyaki sauce and ketchup in order to make the red sauce .
5 . Add salt to taste and serve all together .
6 . Enjoy !
23 . Easy Sushi with Smoked Salmon

Cooking time : 45 minutes


Serving : 4
Ingredients :
1 cup of rice
2 cups of water
7 oz . of salmon meat
2 tbsp . of soya sauce
Instructions :
1 . Wash rice and then cook it in 2 cups of salt water until it becomes soft .
( Around 20 minutes on medium heat )
2 . In a meanwhile, cut salmon into thin lines .
3 . When rice is ready, form them on into rectangular shape .
4 . Put 1 slice of salmon on each rice rectangle .
5 . Serve with soya sauce and enjoy !
24 . Japanese Fusion Salad

Cooking time : 30 minutes


Serving : 2
Ingredients :
10 oz . of chicken fillets
7 oz . of rice
1 green bell pepper
2 carrots
1 tbsp . of soya sauce
2 tbsp . of oil
Pinch of powdered ginger
Pinch of milled red pepper
½ teaspoon of salt
1 teaspoon of powdered basil
½ cup of rice wine
3 tbsp . of cream
Instructions :
1 . Cut chicken into lines and then fry them in an oiled frying pan . Spice
them too .
2 . When the chicken is done, remove it from the heat and let it cool .
3 . Add rice wine into the same frying pan, along with the soya sauce . Fry
them for a few minutes and then let them aside . Mix them with cream and

2 . In one bowl, mix soya sauce, sugar, sake, and rice wine together . Let
sugar to melt .
3 . Cut tofu into cubes and then cook them in water for 2 minutes .

5 . Add red chili pepper and minced meat and continue frying . Add salt .
