The availability of vegetables differs from season to season. Different types of vegetables
have been categorized according to their type, and taste.

Bulb Vegetables are aromatic vegetables that are widely used to flavor casseroles,
broths, courts-bouillons and soups.

KINDS OF MEAT
• Beef is one of the popular types of meat, which is used to prepare food recipes,
across the globe. This meat is obtained from cow and is one of the much sought-
after types of red meat.

• Pork is another choice, as far as types of meat are concerned. Pork is derived
from pig and is classified as red meat. However, this meat is less fatty than beef
and is more leaner.

• Turkey is raised throughout temperate parts of the world and is a popular form of
poultry.

• Chicken it is considered as a healthy meat and can be found as an indispensable


ingredient in most of the regional cuisines of the world.
• Horse is the culinary name for meat cut from a horse.

• Bison meat is another name for buffalo meat. While bison is technically correct,
the two names are used interchangeably to denote a large, four-legged, horned
animal, usually brown in color, and similar to an ox or a cow. Bison have shaggy
hair that forms a mane on their neck and a hump on their shoulders. Like a cow,
they eat grass, leaves, and shrubs. Then they regurgitate what they have
swallowed — called a cud — and chew it, which classifies them as a ruminant.
