Section 1 GENERAL INFORMATION

1.1 PRODUCER:

1.2 INTRODUCTION

Service Manual is designed for acquainting customers with the product as


well as it’s putting into operation and maintenance. You can find all necessary
data related to product assembly, putting into operation, maintenance and
machine correct and safety operation. In Service Manual drawing up there was
included experience of the company producer and its specialist in that field of
production.
We recommend to be followed all instructions and safety measures during
machine operation. Operations requiring elements disassembly should be made
by well qualified and authorized specialists.
Machine is designed and produced according to the operation requirements
of food, wine and tobacco industries. It is made by stainless steel No. 1.4301 in
several versions depending on customers needs.

Section 2 INDUSTRIAL SAFETY


2.1 Industrial safety rules

WARNING! Before putting the machine into operation, read the Service
manual carefully. All industrial safety rules should be strictly observed.
Notwithstanding the machine is equipped with all necessary safety devices,
there exists any risk for endanger operators during working process. Therefore,
operator safety depends on himself. Unfortunate accidents could be happened in
following cases:

- Non dried and aired: dosimeter, frying tray, elevator;
- Trouble clearing when oil is heated up;
- taking hot doughnuts by hands;.
- using the machine if it is not in neutral earthing condition.

 The machine must be maintained by well trained and acquainted operators with
instructions for safety measures. They should be very well acquainted with work
safety measures and means
 It is recommendable to provide enough free space around the machine. The floor
must be leveled and clean. Avoid fat and other waste products. Provide good
illumination.
 Never put objects on machine surface during operation.
 Before putting the machine in operation, all safety means should be examined for
their serviceability.
 Switch off the machine during maintenance and repair.
 Machine installation and assembly must be made by trained and skilled
personnel.
 It was not allowed machine to be repaired by unauthorized persons.
 When connecting the machine to electrical power network, use safety circuit.
 Do not leave the machine switched on without observation. In case of failure,
stop the machine immediately by emergency button as to switch off the master
switch. (position “0”) and then inform the authorized personnel.

2.2 Design measures for safety improvement

 All electric motors are equipped by thermal protection that is activated in case
of overload and the relevant motor stops.

2.3 Safety elements

 As to prevent the already prepared mixture from dust or other admixture, a


cover is placed on the bunker. That part ensures normal operation of dosing
elements pistons.

Section 3 MACHINE ASSEMBLY


3.1 Working space requirements
Machine location is selected in order to meet the requirements for normal
operation. Connection to electrical power net must be closed and suitable. Floor must be
solid and leveled. Space must be well illuminated. Minimum free space around the
machine- 500 мм. The machine should be fixed on a stand- 800 mm height and then
leveled. It is necessary to provide aspiration system over machine.

3.2 Connecting machine to electrical power net

WARNING! Machine connecting to electrical power network as well as all


assembly works on electrical system (maintenance and service) must be made only by
qualified and skilled electricians and power supply cable should be disconnected from
electrical power network.

Phase conductor of power supply cable is connected to input terminal L1.


Earthing conductor (yellow-green) is connected to PE (earth). Neutral conductor is
connected to terminal N.

Section 4 MACHINE OPERATION


4.1 Machine running
The machine is designed for production of donuts.
For safety operation following recommendations should be observed:
- Do not allow external people to handle the machine or power supply cable
during machine operation
- Do not use electrical supply cable for purposes for which it is no intended.
- Do not pull the cable as to switch off the plug.
- Keep supply cable from heating and sharp objects.

4.2 Putting the machine into operation

- Clean the machine carefully.


- Fill the tray with oil up to 2-3 mm above the upper part of the chain
аnd heat up to 180-1900 С.
- Level machine in such a way as the chain to be uniformly dipped into oil.
- Switch power supply to the machine by packaged switch.
- Switch on oil heaters by button B2. Oil temperature is regulated by temperature
controller T0 from 180 – 190 0
- Prepare dough according to Technological requirements.
- After reaching the required oil temperature, fill in dosimeter with preliminary
prepared dough.
- Switch buttons B1 and B3
- After frying the first doughnuts, check doughnut weight up. Changing piston rods
height makes weight adjustment with the eccentric 13. When height is increased,
the weight is also increased and vice versa.
- Dosimeter stop is provided by button B3.
- Keep constantly the level of oil and dough during operation.

Note: When the machine is not working all the time the sediment at the bottom of the
dispenser is bake from the temperature of the oil and needed every 15-20 minutes for
the determination of a few donuts. The kit has a removable machine stainless steel,
which should be placed / in not working machine / between pistons and fring

container to reduce the temperature of the mixture. Moving plate must be removed
before putting the machine into operation.

Section 5 MACHINE DESCRIPTION


5.1 Technological system
Machine for donuts production consists of elements as follows:

4. Reversing device 8. Motor-reductor 12. Heaters
13. Eccentric

Frying tray shape is a rectangular parallelepiped, provided with double


walls for insulation. The oil is poured in it, where the doughnuts are fried. It is
made of stainless steel and serves as a main body of the machine.
Heaters with cylindrical shape are assembled on the tray bottom and they
are U- shaped bent. They are intended for oil heating and keeping technological
temperature.
Elevator shape is a rectangular parallelepiped mounted in the tray. It is
made of two stainless side plates connected by studs.

Dry and driven shaft are mounted to the elevator by stretched tight chain
on them. In the middle of the elevator is mounted a reversing device which

rotates round the immovable axis by the help of chain; it is fixed by a cam and a
spring. To the one end of the elevator it is mounted а plate on which the already
dosed dough is fallen from dosimeter; a plate under slope is mounted in its other
end as to take out the already fried doughnuts.
The main purpose of the elevator is to carry doughnuts from dosimeter,
their both sides frying and to take out of the tray. Elevator movement is
performed by motor-reductor.
Bunker shape is a truncated pyramid, fixed on the front side of the
electrical board. It is made by stainless steel and serves for replace the already
mixed dough. Pistons are mounted in it. They provide dough dosing in equal
weights and circle shape and their movement to the tray. Pistons can be fine
adjusted for donuts weight. Piston movement by cam is made by motor-reductor,
fixed on the electrical panel.

5.2 Electrical system

Electrical panel shape is a rectangular parallelepiped. It is separated out of


frying tray in a separate case fixed to it by bolts. This case is to provide electrical
parts from dust and moisture as well as for fixing the dosimeter and motor-
reductor.

Section 6 MAINTENANCE

6.1 Cleaning and technical support

WARNING! Before repair, cleaning or engineering inspection, unplug the


machine from electrical power supply.

Machine regular cleaning provide long-term operation and safety work.

6.1.1 Dosimeter disassembly


Unscrew the two knurled screws. Remove dosimeter carefully, wash and
dry it.

6.1.2 Elevator disassembly


Lift elevator front left as to provide plate release and then easily pull to the left as
to release reductor and then take it out.
6.1.3 Heaters disassembly
Heater are hinged mounted which allow their lifting in case of tray
cleaning from technological waste. A stainless steel box is placed under the
electrical board where heater connections are located.

6.2 Failures and trouble clearing


After machine assembly, the machine is tested in a workroom as following
instruction of the present service manual and it is accepted after its faultless
operation. Incorrect maintenance, assembly or negligent transportation usually
causes failures.

Machine is made in conformity with the approved technical documentation


of the company-producer. Producer gives guaranty for machine good operation
order within 12 months as from the date of its putting in operation, but not more
than 18 months as from the date of shipment and following conditions and
requirements for assembly, operation and maintenance stated under Service
manual.
During guaranty period, producer is obliged to give free services in case of
machine failures.
Producer does not assume an obligation to remove failures due to incorrect
maintenance or operation in spite of their appearance during guaranty period.
Claims for damages shall be given by Guaranty chart, obligatory submitted
to the machine.
