elcome to the new look, new concept Phuketindex.com Magazine. When I was considering what to include for the opening of my note I was going to begin by saying that although rainy season should have been upon us there had been very little rain. However, as I write this note the rain is absolutely pouring down so that put a stop to that. I have noticed on my travels around the island that although it should be low season, it would appear there are still a large number of tourists visiting the island, which makes me wonder do we really still have a low season? island has to offer, chefs and other people of interest from the island, our regular feature from Dr John Demartini, one of the worlds leading human behavior specialists and Social Circle the photo gallery of the best of Phukets recent events. However, the remainder of the magazine will now be dedicated purely to Phuket, whether it be room or restaurant reviews, property news or general topics of interest, such as the best local food and places of interest you may wish to visit whilst youre here. First of all, can you give a small introduction about yourself please
Certainly, Im a New Zealander who has been living here in Thailand for two and a half years, and loving every moment of it. I studied hotel management whilst in New Zealand, but eventually travelled overseas to Australia, Asia and places like the Maldives and Malaysia, before ending up here in the best part of the world, Thailand. Paresa is my first work placement in Thailand, I joined before the resort was completed so was here for the pre-opening phase and was heavily involved in setting up and preparing, getting the team together and finally launching the property. We are now into our second year and for me it has been a great experience, and is a great place to be. We have stunning views and a top class team here, so I am more than happy with my situation.

Do you personally feel that it is important, in a role like yours, to experience work at the bottom of the ladder?
Very much so, it gives you a good grounding to know what happens right on the front line, and I think most people have worked their way up through different areas of the hotel to become a General Manager. From my point of view, Ive seen different areas; Ive worked in the kitchen and in food and beverage, as well as wait on tables. This is as well as working in human resources prior to coming back to operations and managing a resort.
Luckily we managed to keep these and incorporate them into some of the buildings; we also built some of the buildings around the beautiful trees which were here originally. We wanted to immerse the resort in this wonderful area and make it a unique retreat. Were much retreated here, with the stunning sea views and natural Thai bush, no noisy tuk tuks, its a very peaceful, relaxed hideaway style resort.
How do you see the situation here in Phuket with regards to tourist numbers and has it had any affect on the resort?
We have actually grown and built over the past 2 years. Yes its probably not the best time to be opening a new resort in the current economic climate, but for us, we have done very well considering the current market. We are happy with our position and will continue to build our market and increase our number of guests. The climate has affected the way we thought we could market the resort and has affected the way in which we thought we could be growing the business, but luckily as we are a new resort we have been able to adapt quickly to the current situation. Being an independent brand makes it a lot harder in times of an economic crisis as many tour agents are cutting back on properties and not really

now doing a lot of travelling to meet new agents and operators to get Paresa out there so everybody knows about it.
Why would you tell readers to choose Paresa above all other resorts here on the island?
Primarily its because of the stunning location. There is no where else where every villa offers magnificent sunsets and sea views. Everywhere you go here, whether its the cooking school, the spa, the restaurants you are surrounded by great views. We are a luxury hideaway retreat offering great food, whether it is Italian or Thai, in a peaceful relaxed atmosphere.
taking on new properties and unknown brands like us. The first year was very much about looking at new markets and those markets have certainly helped us grow. However, we are starting to see the old markets come back and many of them are coming to Paresa wanting to market us which is very good.
Do you have a personal goal you still wish to achieve, either work related or personal and if so what is it?
A golf handicap would be good or even just a day away at the gold course would be great. But I think really developing Paresa into a fantastic brand is going to be a great challenge for the next couple of years. We hope we can have more Paresas popping up around Thailand in the future, so that is the main challenge that we have ahead of us. f youre an enthusiastic home cook, Phuketindex.com would highly recommend The Blue Elephant Cooking School. If you take one look at the dishes taught in half-day sessions, youll immediately want to sign-up. If you want to learn about Thai cuisine, a class at The Blue Elephant is certainly the best place to start. Although the emphasis is on authentic Thai cooking at The Blue Elephants cooking school, many dishes uncover slight inuences from other cuisines. The class the Phuketindex team attended struck a balance between the two. On the agenda was Keang Ka-Ree Koong Subparod (Yellow Curry with Prawns and Pineapple) and Yam Som O (Grapefruit Sald). The Blue Elephants Phuket location is in the restored Phra Pitak Chinpracha Mansion on the Krabi Road in Phuket Town. The interior is an oasis of calm. Heavily polished oors and teak furniture are rened and welcoming. The course begins, with a trip to a local fresh market. Every stall is busy with the activity of buyers examining produce and haggling over cost. In the bustling market our class is, not surprisingly, a bit of a spectacle. We block the paths between vendors as we position ourselves to hear the instructors discourse on the various herbs, vegetables and pastes available to us.

Cooking Class
Back at the school, armed with a beginners knowledge of Thai produce, we begin our lesson. The teachers assistant hands out copies of our recipes the chef begins demonstrating in the bright, airy exhibition kitchen. We observe every movement on the counter and are encouraged to jump in with questions. When questions were asked, the instructors respond quickly and in detail, peppering their answers with titbits on the history and techniques of Thai cooking. After each demonstration we stand in a semi-circle around the preparation table to taste the chefs creation and are, again, encouraged to ask questions. The open discourse and casual sampling of the food creates a sense of camaraderie within the class. We then le into the well-stocked kitchen to try our hand at each dish. Despite the clear instructions and a team of assistants overseeing our work, we manage to blunder in our recreation of the recipes. The experience of working in the pleasant kitchen is enhanced all the more by the knowledge that I will not be called upon to wash a single dish. At the end of the class, we nd ourselves hesitant to leave the kitchen and return to the hot chaos we know awaits outside. The school seems to have anticipated this, and invites students to eat their creations in the restaurants dining room, only after lling our arms with a certicate of completion and a bag of Blue Elephant-branded spices and seasonings.
Although The Blue Elephant is an international organisation that now boasts restaurants in locations around the world (including Paris, Moscow and Dubai), the value it places on the cooking school is evident. The quality of ingredients, the thoughtful design of the space, and the shared knowledge of experienced chefs make the experience one that I would happily repeat. In the end, The Blue Elephant Cooking School easily wins us over, and we will jump to recommend it to other enthusiastic cooks who will be traveling to Phuket. A half-day course at The Blue Elephant Cooking School is priced at 2,800 ++ Baht (approximately 100 USD/70 Euros). Course descriptions are available on the schools website.

Oh Aew many of you have probably heard people talk about this before. Oh Aew is a popular dessert which originates from Phuket. Oh Aew is made from jellied banana-our mixed with boiled red bean, ice and sweet red syrup.

Oh Tao is a local Phuket dish. O-Tao is a delicacy made of our and taro, added together with small oysters, bits of crispy pork rasher and spring onions. It is best taken with a sweet and spicy sauce that further enhances the avor. To start the dish, taro is cut into cubes, steamed and then dipped in our. It is then soaked in oil and fried in a hot pan. The oysters, pork and spring onions and are added and the ingredients are mixed together. The dish is then seasoned with pepper, garlic sauce and white sugar. The nished dish is served in a bowl and eaten with pork cracking and bean sprouts. One of the popular restaurants that serve this dish is Mee Sapam.

Hokkien Mee
There are many different varieties of Hokkien Mee. However, the most popular version here in Phuket is the Chinese version. Hokkien Mee are round yellow noodles, bigger than normal noodles. They are similar to Japanese type So Ba. There are two choices of Hokkien noodles, with or without soup. But the most popular among locals are fried Hokkien noodles with sauce & meat ingredients like pork, fish, squid & mussels. The noodles are fried then served in a bowl in which a medium boiled egg is prepared. Its served hot, with shallots and ground chili. Cooking oil, meat such as squid, pork, fish ball slices & soy sauce are added as the main ingredients. Then sugar & vegetables are added. It depends on the heat & techniques used as to how the finished dish tastes. Strong or less fire or heat influences the taste. The more the dish is stirred & moved, the more delicious it gets.

entral Festival Phuket is known for being the islands best shopping centre. However, its also increasingly becoming known as one of the islands best food centres. With a recently increased overall space of 53,000 square meters, possibly a quarter of that space is dedicated to food. There are now three dedicated areas within Central Festival that give shoppers a chance to dive into delicious international cuisines whether it be Japanese, Italian, Western, Asian and of course, Thai. On the first floor is the Central Food Hall. Taking a walk around this 3,500 square meters area is an experience in itself, and determining what to have for lunch is nothing less than a daunting task youre faced with. A quick browse around reveals an astonishing array of nothing else but food and more food. This is the home to the best known fast food chains as well as stalls offering local delicacies. There an abundant amount of ice cream parlours and cafes and many eateries where you just can sit relax and enjoy a light snack.
Set in the centre of the shopping complex on ground level is Central Festivals Dining Circle & Lan Lom Bar. This outdoor restaurant and bar area provides visitors with an alfresco dining & bar circle where they can indulge in modern international restaurants and bars with a 360-degree panoramic view. The third floor offers possibly the biggest area and food option, the Family Food Area. Within the mall Central Festival Phuket reflects the Thais delight in international cuisine. Here you can find tasty Thai and yummy Japanese, Italian, Chinese, and Western fare. Also within the third floor is the Food Terrace, here you can go local and enjoy authentic local and Asian dishes. Clean, quick and tasty, this is the bustling venue of noodle vendors & quick rice dishes. Favourites include: Pork Leg and Rice, Pad Thai, and Hainan-style chicken. Although the main seating area is inside amongst the hustle and bustle there is also a large terrace which overlooks the central Lan Lom Bar area which makes for a lot quieter dining experience.

An Unconventional Path
Like other successful entrepreneurs-Richard Branson of Virgin Group, Tony Fernandes of Air Asia-both friends of Michael, Michael Ma is a bit off the wall. Its the secret of their success. Michael started his career on the edge early; he got kicked out school aged four for stealing fighting fish from school boarders. The fish went in his pocket but he went out of the school, expelled! The incident underlined his love of animals and led to his long career in conservation, working with global environmental NGOs such as IUCN. After obtaining a double major in economics and marketing in Australia and a successful career as an economist and commodities trader he started his first IndoChine restaurant and bar in Singapore in 1999. All that without serving behind the bar or being a waiter! Michaels explanation for this somewhat strange phenomenon is that he learned on the job. We listen to our customers. I am a customer. We do continuous testing. You can go out and spend time working in a bar and a restaurant, but the reality is that running a business is not that simple. In the early days this desire to make a strong statement, meant Michael having the confidence and drive to beat the competition. Being cheeky I said to myself I could outrun these guys. From the outset I wanted to be at the top. I sized myself up against others regionally and globally.

27-year-old Thawatchai Moonyong (Dan) was born and raised on the outskirts of Chiang Mai in Northern Thailand. Dan, who is a qualified music teacher, has always had a great passion for great tasting coffee and started to learn the art of making this many years ago. In 2008 Dan heard of a new brand of coffee outlet which was coming to Thailand, and due to his love of coffee and passion for making it, he knew he wanted to be part of the team of the new outlet, now popularly known in Thailand as The Coffee Club. In January 2009 Dan started working at The Coffee Clubs first Thailand outlet which is located in Turtle Village Mai Khao Beach Phuket. He joined the team as a trainee barista* and from the very start Dan loved serving the customers and gained great satisfaction knowing that a customer had an excellent coffee experience.

It was noticed from early on by The Coffee Club Thailands GM Michael Chick that Dan had a certain talent when it came to making coffee. Due to this, late in 2010, Michael decided that he should put forward Dan for The Coffee Clubs Barista of the Year Competition. For this event, which is held over six months, baristas battle it out to earn a spot in the nals where they are given 30 minutes in which to serve four perfect coffees and four identical signature drinks. Competitors are judged on everything from extraction times, use of the grinder, milk texturing and presentation. Dan eased through the 6 month battle and was rewarded with a place in the nal, in which The Coffee Clubs six best baristas compete in Brisbane in a fast-paced brewing competition to pour the perfect coffee. Nine judges critique each coffee on its sensory experience and the Baristas technical skills. Amazingly Dan took the title in a close contest. However, not only did he win The Barista of the Year title but also won the Signature Drink challenge. The Signature Drink Award encourages baristas to come up with a new style of drink that could be served at The Coffee Club. In fact, the winning drink does go on the menu for everyone across The Coffee Club chain to try! Dan won with his with his original, Thai-inspired Chilli Kiss coffee containing hints of lemongrass, lime and spice. Dan, who as the winner collected a prize of $3,000 cash, said I was very excited and honoured to receive the award. I will keep learning and improving my skills and setting new goals. I am so happy I had the opportunity to travel and compete in Australia with such talented Baristas. The inspiration for his signature drink was his homeland and its culture, particularly the herbs and spices used in everyday
cooking, I used some of our favourite ingredients, chilli and lemongrass, and blended them with espresso to create a memorable and unique drink, he said. His secrets to making coffee include using your hands, mind and heart, believing it is the way you make very special coffee. I truly love making coffee for people. Its great to see customers smiling and enjoying the experience. Asked what he will do now that hes the winner, and whether he felt he was an inspiration to others Dan replied I really enjoy working at The Coffee Club. I think its important to keep learning and improving myself. My dream is to one day go back to Australia and study English and do a management training program. Dan who is now based in Bangkoks Suvarnabhumi Airport outlet is very happy with the opportunities that working for The Coffee Club has brought. He is now the Barista Trainer for the brand in Thailand and also has opportunities to travel to new store openings to train new entrants, the most recent being to Guangzhou, China for The Coffee Clubs rst store in China. *A Barista is a coffee-making specialist who is specially trained in espresso coffee and espresso-based coffees such as Cappuccino.

This so-called happiness is only a faint reflection, a little spark of the brilliant sun of bliss which is hidden within. This is only a shadow of that eternal bliss that is waiting to be exposed. Our so called happiness and misery now, are nothing but different states of mind. Real happiness, called nanda in Sanskrit, is the goal of all beings. All are seeking that goal only some ignorantly, some with knowledge.

After its launch Paiboon Upatising - the president of PPAO said I realised the public transportation available in Phuket cannot meet the residence demand, and people have waited for a solution for a long time. Therefore, I brought up the idea of the local bus called Poh Thong which is Fujianese (Chinese) and means a vehicle with a wooden frame with eye-catching colour paint. We can say that this kind of vehicle is a part of Phukets heritage. The pink buses are already proving to be a big hit with local residents and gaining recognition nationally, after winning an award for Local Innovation from the Prime Ministers Office last year

Dr.Kongkiet Kittiwattanawong, Marine Technical Specialist of Phuket Marine Biological Center, said that turtles will usually lay their eggs between November and March every year. Sea turtles are nesting at several beaches in Phuket. Thus, all sectors will need to avoid disturbance to the beach because the turtles will come to spawn less. In addition, garbage must not be left in the sea, the reefs must not be destroyed and sea grass must be conserved as this is the turtles food.

Original Sino-Portuguese houses would have to have been protected from both sunlight and thunderstorms whilst still allowing ventilation. To solve this problem wooden shutters were installed on the outside of windows. Wood shutters not only provided shading to the interior, but also allow ventilation. Each of these beautiful Sine-Portuguese shophouses would have been complemented with an intricately carved Chinese door and individual decor. By the 1930s the architecture had developed into a more EuropeanSino-Thai style. However, the decorative forms of the earlier period were still incorporated. Some of the mansions and shophouses in Phuket have been beautifully restored, with many still inhabited by local families.
huket Island is best known as a beach resort, and the old architectural within the busy city area often goes unnoticed. The main architecture to be found in old Phuket Town is Sino-Portuguese buildings i.e. the shophouses and mansions. One of the main features of these shophouses is the verandas at the front which join to form a shaded walkway, this is known as a five-footway. The five-footway also functions as a pedestrian walkway and are attractively ornamented by a succession of arcades. Complex early 19th century European and 16th century Renaissance-style rendered designs grace the fronts of the shophouses. The interiors are a combine Chinese and European decor, and most boast a large central living room with ceramic tiles used as the flooring, most of which would have been imported from Italy, designed with old elaborate European designs. Most of the furniture is intricately carved wood, typical of Chinese furniture of the time, while wall hangings and other decor similarly recalls old China.

Inside the building you will come across a lot of original equipment used at post offices around the country. However, the highlight of the museum is its outstanding collection of Thai and Siamese stamps. For those of you who dont know, Thailand used to be known as Siam before 1939. There are plenty of other things to view including a collection of old telephones, old staff uniforms, various tools used by postmasters and a collection of writing desks where clients use to sit and write letters, telegraphs or simply the addresses on envelopes.

The Thai Hua School at Krabi Road, Phuket, is the oldest Chinese school in Thailand, founded in 1911. Built in 1934, it is a splendid example of European-Sino-Thai architecture of the 1930s, when Phuket architecture began to depart from the Straits Settlements style. When the school moved out to new, larger premises in the late 1990s, the Alumni Association initiated a project to conserve the old school building. In mid-2005, The Office of Contemporary Art and Culture, of Thailands Cultural Ministry, decided to refurbish the Thai Hua School into an art gallery. The purpose was to promote Phukets artists as a contribution to post-tsunami recovery. The repairs and renovation were completed in one or two months. This building has gained a second lease of life as an exhibition and performance space.
The Thalang National Museum is the National Museum of the Phuket Province. At the beginning of the 1790s, Phuket was an important factor in the protection of Thailands independency from the invading Burmese; two Thai heroines repulsed the Burmese Army from Thai territory. The place where the Thai Army withheld the Burmese was at the city of Thalang on the Island of Phuket. It is from this historic event that the museum takes its name of Thalang National Museum. In 1985, on the 200th anniversary of the Thalang War, Phuket Province, with the cooperation of the Fine Arts Department, established the Thalnag National Museum and was inaugurated on March 14, 1989 by H.R.H. Princess Sirinthorn. The museum is a repository of history, archaeology and culture of the Phuket Province and its surrounding area along the Andaman Sea. In addition, the museum continues to preserve the cultural heritage and serves as a source of information to those who visit Phuket.
