CHILLIES Chillies or Chilly Pepper or Red Pepper are ripened dried fruits of a bushy plant of genus Capsicum belonging to the Solanaceae family. The ripened dried pods are characterized by their bright red to deep crimson color and mild to very hot taste. They are typically used for making food preparations hot and spicy as well as adding the distinct red tinge to the final product. Chillies are traded in the international market in various forms with heat (measured in SHU) and color (measured in ASTA units) as primary defining parameters. a. PEPPER Pepper, by virtue of its versatile use in the world of spices, has deservedly earned the title of King of Spices. Pepper refers to the near spherical, dried berries of the woody creeper Piper nigrum belonging to the family Piperaceae. The dried berries are about 3 5 mm in diameter. The color may vary from dark green to pink to black to dull white depending on the time of harvest and post harvest processing. plant and has wrinkles on its surface while the White Pepper is grayish white in color and has a smooth surface. ITC Spices offers the following variants of pepper: a. WHOLE PEPPER i. Black Pepper The unripe mature berries are harvested and dried to moisture levels of 10% 12%. The dried berries are dark grey to black in color and have a wrinkled exterior. The quality of the final product is adjudged primarily on the basis of its Bulk Density (Grammage) and the Piperine content. Indian black pepper is available in the bulk density range of 450 650 grams per liter and Piperine content of 2.5% 4.5%. White Pepper The fully ripe mature berries are harvested and dried to moisture levels of 10% 12% and subsequently washed under running water to remove the external, wrinkled black skin. The final product is smooth surfaced, spherical and nearly grayish white in color. The quality is adjudged similarly as it is for black pepper. Green Pepper The unripe berries are harvested, graded, washed and then stored in 17% 2% salt (brine) allowed to mature for 45 days. During the intervening time, the berries are washed in fresh water thrice and brine replaced after every wash. The final product is packed in food grade HDPE drums. A 20 FCL has the capacity to hold 500 drums (Food grade HDPE) of green pepper in brine, with each drum having a drained weight of 25 kg. The total capacity being 12.5 MT. iv. Dehydrated Green Pepper The unripe berries are harvested, graded and washed. They are then rapidly dried using hot air with suction to remove the moisture laden air. The final product is greenish grey wrinkled berries with moisture content of 4% 5%. The final dried product is packed in food grade 5 ply corrugated paper cartons with an inner LDP liner. Each carton contains 10 kg net of the product with a 20 FCL accommodating 600 such cartons. The total capacity being 6 MT. b. GROUND/CRACKED PEPPER ITC Spices offers a wide choice of ground/cracked pepper products manufactured from whole black/white pepper. The final product can be customized to meet the granulation requirement of the customer and the intended end use. TURMERIC Turmeric is the rhizome or underground stem of a small herbaceous plant Curcuma longa. The whole rhizome is a rough tuberous finger like mass with creamy to dark brown outer scaly skin and dull orange internal flesh. The plant is identical to Ginger and belongs to the same family, Zingiberaceae. The rhizomes are cleaned, boiled, dried, polished and powdered for culinary uses. www.itcspices.com

The powder is primarily used to color food preparations besides being used to preserve and mask the odor of meat and fish. The active ingredient, Curcumin, finds extensive use in Pharmaceutical and Personal Care industry. a. CORIANDER Coriander refers to the dried, near spherical, seeds of the plant Coriandrum sativum, belonging to the family Umbelliferae. The seeds are about 3 5 mm long with color varying from Bright Green to Dark Brown. The fresh leaves of the plant find culinary as well as medicinal uses and are referred to as Cilantro. Besides others, the volatile oil extract of the seeds is known to have carminative, appetizing and digestive properties. The seeds are mostly used in the ground form in various curry powders. The leaves are commonly used as dressing/topping for culinary preparations. India is the largest producer and exporter of coriander in the world. a. WHOLE CORIANDER The quality of whole coriander is adjudged primarily on the basis of visual color of the seeds besides overall physical cleanliness of the product. The color across various grades ranges from bright green to dark brown with perceptual quality being highest for the greener grades. A 20 FCL has the capacity to hold 11 MT while a 40 FCL can hold 22 MT of whole coriander bulk packed in HDPE bags. b. 5. CUMIN Cumin refers to the boat shaped and ridged, dried seeds of the plant Cuminum cyminum. It is about 3 6 mm long with ridges along its length and varies from bright grey to dark ash in color. Like coriander, the plant also belongs to the Umbelliferae family and is bushy in nature. As with most other spices, Cumin as well is attributed with medicinal properties besides its characteristics as a seed spice. Cumin is known to have stomachic, diuretic, carminative, antispasmodic properties besides being a stimulant and an astringent. Cumin, across the globe, is most commonly used is the powdered form, straight or blended with other spices in curry powders. India is the largest producer and exporter of Cumin in the world. a. WHOLE CUMIN The quality of whole cumin is primarily adjudged on the basis of physical cleanliness of the final product, besides the volatile oil percentage in the seeds. MUSTARD Mustard refers to the dried seeds of various species of Brassica sp. of Brassicaceae family. The seeds are nearly spherical to ovoid shaped with diameter of 0.5 2.0 mm. The color of the seeds may vary from various shades of yellow to shades of reddish brown to dark grayish black. Mustard seeds are known for their characteristic pungency which is due to the glucosinolate Sinigrin. This Sinigrin is hydrolyzed to release Allyl Isothiocyanate (AITC) when the seeds are crushed or damaged which results in the pungency. a. WHOLE MUSTARD The quality of the species of Brassica which are used as spices is primarily adjudged on the AITC content besides the physical cleanliness of the product. The color of the final dried seed varies from grayish brown to light green. It is commonly used as a condiment in the seasoning of meat, curries and pickled for its ability to provide the rich sweet aroma and flavor. It is also attributed a number of medicinal properties which include its carminative, diuretic and stimulating properties. FENUGREEK Fenugreek is the small stony seed from the pod of a bean like plant Trigonella foenum-graecum belonging to the family Leguminosae. The seeds are hard, yellowish brown and angular, with a side length of 3 5 mm. Its seeds have always been attributed with numerous medicinal properties. Primary among them includes its ability to lower sugar levels in the blood of diabetics. Others include its digestive properties, its usage as an emollient, etc. The seeds are also used as an ingredient in the manufacture of curry powders. a. NUTMEG The nutmegs Myristica are a genus of evergreen trees indigenous to tropical South-East Asia and Australasia. They are important for two spices derived from the fruit, Nutmeg and Mace. The most important species commercially is the Common or Fragrant Nutmeg Myristica fragrans. Indian nutmeg belongs to the species Myristica malabarica. Nutmeg is the actual seed of the tree, roughly egg-shaped and about 20 mm to 30 mm (1 inch) long and 15 mm to 18 mm ( inch) wide, and weighing between 5g and 10g dried, while mace is the dried "lacy" reddish covering or arillus of the seed. This is the only tropical fruit that is the source of two different spices. Nutmeg and mace have similar taste qualities, nutmeg having a slightly sweeter and mace a more delicate flavor. In Indian cuisine, nutmeg powder is used almost exclusively in sweet dishes. Nutmeg is also an important ingredient of Garam Masala. GINGER Ginger is the Rhizome or underground stem of a small herbaceous Turmeric like plant Zingiber officinale native to India and China. Traditionally, both the Indian and Chinese ethnic medicine systems have been using Ginger since ages exploiting its wide variety of medicinal properties. Fresh ginger rhizome has traditionally been used in the Indian and South Asian ethnic cuisine in the preparation of various curries and pickles, added primarily for its ability to provide a rich sweet aroma and a strong pungent taste. Over the years, dried ginger has found extensive acceptance in the west and is widely used in the West Asia, Europe and America in the preparation of bakery items and pickles. a. WHOLE GINGER Internationally, ginger is mostly traded in the dried form with fiber content, oil and gingerol levels determining the quality. SMALL CARDAMOM Cardamom refers to the tiny black seeds contained in the small pods of a ginger like plant Elettaria cardamomum of the family Zingiberaceae. The small, brown-black sticky seeds are contained in the pod in three double rows with about six seeds in each row. The pods are between 5 20 mm long and are brownish green to dark green in color. The pods are roughly triangular in cross section and oval or oblate. Their dried surface is rough and furrowed and has a tough papery texture. Small cardamom seeds find extensive use as a masticatory and also have culinary uses. They are used extensively in bakery, sweets and other snacks to impart a distinct sweet aroma to the final product.

The programme is designed to promote the cultivation of chillies with the use of a combination of mechanical, cultural and chemical methods of pest control to control the potential damage to below economic threshold limits. The resulting final products comply with the pesticide residue norms of European Union (EU). STERILIZED SPICE POWDERS The processing facility in Guntur is equipped with a batch processing Steam Sterilizer of SteamLab, Germany make.
