CHAPTER I INTRODUCTION Rationale

As a student of the HRM 12 Meal Management II which tackles Asian cuisines, the actual restaurant dining is a great help for the students to learn, experience and be familiar with the different foods to which Asia has to offer.

The experience aims to teach the students on how to interact with the restaurant staffs regarding on ordering, learning the proper table etiquette and how to observe courtesy in the restaurant premises.

The dining experience nurtures the students learning outside the school parameters and from the theories, laboratory activities and lectures learned from the school. Gloria Maris restaurant is an ideal Chinese restaurant to which students can acquire a great dining experience and enjoyment at the same time.

Objectives of the Restaurant Dining

1. To be familiar with the different Chinese dishes in a Chinese restaurant. 2. To experience the actual dining by practicing and observing courtesy and proper table etiquette. 3. To further deepen the students knowledge on different Asian restaurants available in the country.

CHAPTER II COMPANY PROFILE The Establishment

The Gloria Maris restaurant located at the 2nd level of the SM The Block in Quezon City is one of the great restaurants SM City North EDSA has in store for the customers (Figure 1).

Figure 1. The Gloria Maris Restaurant at SM The Block The Gloria Maris restaurant at The Block is one of the restaurants under the Presidency of Mr. Andrew Q. Lim, the current President of the said restaurant. The name Gloria Maris is said to be named after the rarest species of mollusk, conus gloriamaris, and its shell is being a collectors item nowadays. Gloria Maris has its branches in Makati city, The Podium in Ortigas, Greenhills, SM City North EDSA The Block and beside the Coconut Palace in the Cultural Center of the Philippines Complex, the first branch of Gloria Maris and the pioneer store.

With the warm welcome of the restaurant staffs, Gloria Maris interior architecture (Figure 2) depicts of the Chinese theme with the glorious lighting effects, wall decors and restaurant faade which adds sophistication on its restaurant ambiance.

Figure 2. The Restaurants interior The restaurants dining area (Figure 3) has the shabu-shabu area on the side wherein guests have an electric pot of seasoned boiling water on their table. Tables in the restaurant are the round table with 10 chairs in it and the rectangular table which can be converted to accommodate a big number of guests at a time. A pantry is seen on dining area wherein different kinds of meat like roasted Peking duck and meat hanging from a glass window.

Gloria Maris restaurant offers a selection between a shabu-shabu or a la carte meals. Shabu-shabu consists of fresh seafoods and dumplings which ranges from Php. 1000Php.2000.00 a serving. A la carte meals consists of food selection on their menu ranging from dimsum, noodles and congee, soup, rice, vegetables, tofu and desserts. The restaurants bestselling Peking duck and Cantonese style cooking of chicken is one of the reasons why customers keep coming back at Gloria Maris. Located outside the restaurant are aquariums with fresh seafood (Figure 4) which guests can pick anything and the chef will cook it for them. The average dining costs around Php. 300.00, and offers Filipino dishes in addition to their Chinese menu.

Vision and Mission 1. To provide our customers with the best Chinese cuisine and dimsum products served in a friendly and courteous manner by our competent employees. 2. To provide Filipinos with great tasting food through expansion in the different parts of the Philippines. 3. Reinforce reputation of Gloria Maris by updating the operational systems procedures for efficiency and speed of service. 4. To create relaxing ambiance where families, yappies and friends can enjoy their meal.

Location Map of SM The Block Gloria Maris restaurant is located at the 2nd level, SM The Block in Bagong Pag-asa Quezon City. SM North EDSA is beside SM The Block, is located at the intersection of North and Epifanio Delos Santos avenues in Quezon City. The major malls and establishments near SM The Block are The SM Annex, SM SkyDome, TriNoMa and the Eurotel in front of the SM North EDSA. Bridgeways connects the malls and establishments and accessibility to other neighboring buildings are at ease.

CHAPTER III. HIGHLIGHTS OF THE DINING

The Dining Experience

In relation to the subject, the 3rd year section B had decided to have a restaurant dineout to experience the real restaurant dining scenario. The group 1 has been assigned to dine in a Chinese restaurant. The group had chosen Gloria Maris restaurant because it is a well known restaurant in terms of Chinese dishes in the metro and has been acclaimed as one of the restaurants that offers original Chinese cuisine. The group ordered soy chicken, sweet and sour pork, lechon macau, yang chao fried rice (Figure 6) butchi balls and asado (Figure 7).

The group preferred foods that are much alike to the Filipino palate, they did not ordered foods which are very foreign and is not common to their diet. Most of the foods that a Chinese dish has, is that it is very flavorful, consists of several ingredients and is very appetizing to the eyes. It took 30 minutes for the group to enjoy their meal because the foods that theyve ordered are cooked the time it is chosen. 8

At first, the small plates in the table are taken away because as a tradition in the Chinese restaurant, water is first served in the table. The group enjoyed the food (Figure 7 ) for it has different textures and tastes served in an eye appealing plating.

The last entry to the foods that the group had ordered is the butchi balls (Figure 8) rolled in sesame seeds with a sweet filling inside.

CHAPTER IV. REACTION PAPERS

Mark John Abo The restaurant dining experience is a great opportunity and aid in learning the Asian cuisine more deep and intesive for it widens the students knowledge on what the subject Meal management II is all about. Learning aside from the laboratory activities and lectures is not enough to build and nurture our knowledge on the different cuisines we had tackled on our previous lessons. The dining taught me of the real taste of the foods which are only seen by our eyes on the internet. The dining experience helped me a lot to recognize and enjoy the food served the Chinese way. I had tasted the flavorful spices China has to offer with the people regarding on their delectable cuisines. The appetizing looks of the food made our trip to that restaurant meaningful and very memorable. The experience is the best experience Ive had in my third year as a student of the Hospitality Management. We had a great time because me together with my classmates had a great time to travel and eat together as a group, at the same time, we had learned the true reason why need to have a dining experience like this one.

Christian Dela Cruz Last February 10 2011 my group will going to have a dine out one of the requirements for the finals I exciting to dine out because its a first time to dine out with my classmate project for meal management 2 in the Gloria Maris restaurant for me is a beautiful Chinese restaurant rather than modern china cuisine I observed the most popular known for Chinese restaurant is Pancit Canton significant long life.

Gloria Maris restaurant served with different Chinese dishes and ingredients that Im not familiar because I have never seen in some restaurant. The service of Gloria Maris is good for me the experience of dine out is the one way to familiarize the different Chinese dishes, table set up, and table manner its important to my study.

In serving the food I observed the S.O.P or standard operating procedure of the establishment to meet the customer satisfaction. Before served the food was assembled to the dispatching area to make attractive to the customer or guest. There for I conclude the actual dining aims to familiarize with different Chinese dishes and its ingredient. When I ordering the food I ask the waiter what is the other ingredients of dumpling, but chi rolls, pork as ado and other food.

The experience of actual dining is the one happiest moment in my life I enjoying it so much

February 10, 2011 together with some of my classmates our instructor Mrs. Michelle Gatdula assigned us for an out of the school trip. The objectives of the said trip is to gain more knowledge about Asian cuisine and as well as to experience the service of different fine dining restaurants. We prefer to taste the food at Chinese restaurant at Gloria Maris, SM North EDSA. It is a typical modern chinese restaurant as we enter the establishment, we are welcomed with their good customer service. The waiter took our order with smile, on the menu are different selection of Chinese dishes. The first dish that I ordered has its non familiar name to me "yang chao". It is an authentic cook Chinese fried rice mixed with vegetables. It is perfect alone but at the same time delicious when eaten with variety of side dishes. The second dish that I taste is a savory pork asado, it is very flavorful, the pork slices is really tender and very soft on the plate. The sauce is a typical sweet with salty taste and get the flavor is well balanced. For dessert, i've had buchi balls on the plate with sweet red mongo filling. The taste is balanced not too sweet, the inside is soft while the outside is chewy perfectly rolled in sesame seeds. The sesame seeds help to balance out the flavor of the buchi. By observing the different Chinese foods, they are best known for noodles and lauriat. I can say that this dishes are not new to us. We are already influenced by the Chinese cuisine but yet, it is more better to eat the authentic one. By the use of this trip, I learned a lot and for me, it made us familiarize with the othes Asian country's cooking. I really enjoyed the food and the experience.

Last February 10, 2011 our group decided to choose Gloria Maris Chinese restaurant. We choose it to experience their Chinese dishes to know their taste if it is good or not. Also to be familiarized their style on how their staffs communicate to their guest. All I can say to their staff is not entertained to their guest .Although the On-The-Job-Training (OJT) is the one who entertained to our grouped. Their establishment is organized & clean but for me it is small compare to the other establishment. I like their wall that full of mirror side even in the restroom is full of mirror that I really like even it is a common, boys & girls are similar restroom. It is the way for our group to experience in actual dinning or in actual in Chinese restaurant. On how to be familiarized the food that they serve to eat, to know the ingredients and the taste of the Chinese food. Gloria Maris is a fine dining restaurant whose food is delicious like the order.

Gloria Maris is one of the best Chinese restaurants that can provide high quality of foods. Gloria Maris means "glory of the sea". The place has a good ambiance, in their area, they have a la carte, shabu-shabu, bar and pantry area. In their menu, they have a dimsum, noodles and congee, soup, roasting, rice and rice toppings, vegetable and tofu, desserts and they have a chef special menu. My group tried to eat on one of its menu like the asado, yang chao fried rice, sweet and sour fish fillet, white chicken, birthday noodles, sharks fin siomai and their seafoof roll and its good to our taste. And also, in weekdays, Gloria Maris has a promo and it cost only 118 pesos per each. They can provide good service to the guests.

My experience when I arrive in Gloria Maris restaurant with my group the customer service or the receptionist was greet us and encourage us to dine in to their restaurant and then he/she assists us to our respective tables And then the receptionist presenting the menu book. After a while the receptionists take the order and repeating our order to avoid the misunderstanding of our order and if the order was all ready ok you will wait for a short time because their preparation of food is faster than the other restaurant. And now it is time to eat my order is white chicken with ginger sauce and with birthday noodles with rice. This food was very smooth and very delicious especially the white chicken because the white chicken is very juicy and I like the taste of chicken and the ginger sauce is sweet. I like also the noodles because the taste was good the serving of noodle was very ok. I think almost of the food in Gloria Maris restaurant was very good and the price is not too high it was very affordable to the customer. And when I still inside in Gloria Maris restaurant I feel I am comfortable because I saw the facility of the restaurant it was very clean and very presentable to the customer all the table arrangement was very synchronize and complete dining tools like plate, spoon, fork , tissue paper and some soy sauce. I am satisfied to their preparation of food and to their service and to the restaurant. When the time that we leave the restaurant the receptionists greet us again and he/she said thank you maam, thank you sir come again.
