Buttermilk Pancakes ingredient 1 cup (130 grams) all-purpose 1 teaspoon baking powder 1/4 teaspoon baking soda 1/4

teaspoon salt 2 tablespoons granulated white sugar 1 large lightly beaten 1 cup (240 ml) buttermilk (or 1 cup of milk + 1tbs vinegar, let it stand for 5-10 minutes) 2 tablespoons (40 grams) unsalted butter, melted Plus extra melted butter for greasing the pan Method 1. Mix the dry ingredients, make a well in the center. Pour in the wet ingredients, mix with a whisk. 2. Heat a non stick pan, lightly butter it, using a scoop, pour the batter. Once bubbles appear, turn over, cook for 1-2 minutes. Served with condensed milk/honey/maple syrup or whatever toppings u like :)

Buttermilk pound cake

Ingredients

3 cups all-purpose flour 1/4 teaspoon baking soda 1/2 teaspoon salt 1 cup butter 3 cups white sugar 6 eggs 1/3 cup lemon juice 2 tbs lemon zest 1 teaspoon vanilla extract 1 cup buttermilk

Directions 1. Preheat oven to 325 degrees F (165 degrees C). Grease one 9 or 10 inch tube pan. Mix together the flour, baking soda, and salt. Set aside. 2. In a large bowl, beat butter with sugar. Mix in the eggs, one at time, beating well after each addition. Stir in the lemon and the vanilla extracts. Gently mix in flour mixture alternately with the buttermilk. Pour batter into the prepared pan. 3. Bake in preheated oven for 90 minutes. Do not open oven door until after one hour. When cake begins to pull away from the side of the pan it is done. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

One Bowl Chocolate Cake III Ingredients 2 cups white sugar 1 3/4 cups all-purpose flour 3/4 cup unsweetened cocoa powder 1 1/2 teaspoons baking powder 1 teaspoons baking soda 1 teaspoon salt 2 eggs 1 cup milk (I used 1 cup of buttermilk) 1/2 cup vegetable oil (I used 1/2 cup of softened butter) 2 teaspoons vanilla extract 1 cup boiling water Directions Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans. (I used 10 inches square pan) In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Cream butter and sugar until light and fluffy. Add eggs & vanilla, beat for 1 minute. Add flour and milk alternately and beat for another 2 minutes on medium. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely. (In my case, aku bakar for 1 hour, 160 degree celcius). Chocolate Buttercream Frosting Adapted from Makcik Martha

Ingredients

1 1/2 cups sugar 1 cup egg whites (about 6 large) 1 1/4 cups (2 1/2 sticks) unsalted butter, cut into small pieces 250gm dark chocolate, melted and cooled slightly

Directions
1. Place sugar and egg whites in the bowl of an electric mixer set over (but not touching) a pan of simmering water. Whisk constantly until mixture is heated and sugar is dissolved. Attach bowl to an electric mixer fitted with the whisk attachment and continue whisking until cooled and stiff peaks form, about 7 minutes.

2. With the mixer running, add butter, one piece at a time, until completely incorporated. Continue whisking until a light, fluffy cream has formed. Stir in chocolate until well combined.

MANGO PANNA COTTA by Gert

Ingredient:

7 grm gelatin (1 packet) + 3 tbsp of water 2 cups full cream milk 1/4 cup sugar 1 tsp vanilla 1 ripe mango cut into small cubes or puree

1. Mix the gelatin and water together and set it aside to bloom. 2. Put the milk and sugar in a saucepan, cook over low medium heat until bubbles form around the edges

of the saucepan. 3. Remove from heat and add in the vanilla and stir in the gelatin. Stir until the gelatin dissolved. 4. Pour the mixture into six ramekins or cups. At this stage you can add in some cut mango and refrigerate until set or you can serve it with some mango puree.

Puding roti cheese

8 keping roti 1 tin susu cair 3 sudu besar gula pasir 2 sudu besar mentega 3 sudu besar cream cheese- (leh ganti ngan keju parut atau slice) 1 sudu besar tepung jagung 3 sudu besar choc chip utk sos: 200 gm coklat masakan- potong kecil2 1/4 cawan susu cair 1 sudu mentega cara: koyak2 roti kecil2 masukkan dlm bekas masukkan 3/4 tin susu dalam roti biar mengembang 1/2 jam campurkan mentega, cheese dan gula... lenyek2kan dan adun rata campurkan baki 1/4 tin susu sebatikan (dia jd ketul2 skit) masukkan ke dalam adunan roti td campur tepung jagung + coklat chip gaul rata alas loyang ngan kertas minyak masukkan adunan bakar selama 30-40 minit 30 mnt pertama api bwh 10 mnt lg api atas bwh utk sos:

750 ml @ 3 kotak kecil susu strawberry 750 ml air 4 sb gula 3- 4 sb serbuk agar-agar 150-200ml plain yogurt (1 bekas kecil) 200ml susu rendah lemak jeruk strawberry (optional)

Cara Penyediaan 1. Larutkan gula dan serbuk agar dengan air.Didihkan dengan api yg kecil 2. Setelah mendidih, tutup api dan biarkan seketika.Tuangkan susu dan yogurt dan kacau rata. 3. Isikan dlm bekas2 kecil.Hirisan jeruk strawberry boleh diletakkan samada di dasar bekas atau di atas puding. 4. Sejukkan dlm peti ais.Hidangkan bersama susu rendah lemak. 5. Tips: jumlah air dan serbuk agar2 boleh di adjust utk mendapat hasil yg diingini.jika sedikit serbuk agar2 digunakan,ia menghasilkan dadih,tetpi jika terlebih menggunakannya,ia akan menghasilkan puding/agar2.

Udang Goreng Tepung

Bahan2 nyer: 20 ekor udang besar buang kulit n tinggal ekornyer 6. 1cawan tepung naik sendiri 7. 1 biji telur 8. garam secukup rasa 9. sedikit air 10. 11. Cara2 nyer 12. masukkan kesemua bahan kecuali udang dan air,kacau sebati mengunakan garfu...

13. selepas itu masukan air sedikit2 sehingga menjadi pekat seperti membuat cucur udang.... 14. panaskan minyak dan celup udang kedalam adungn tepung,dan goreng hingga garing... 15. angkat dan toskan....sedia menikmati..... 16.
Chocolate Fundee Ingredients 3 tablespoons flour 4 tablespoons brown sugar 2 tablespoons cocoa 1 egg 6 tablespoons milk 5 tablespoons oil A small splash of vanilla extract 1/2 tsp baking powder 1 large coffee mug (Microwave Safe) (I used small pyrex bowl) Method Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly before pouring in the milk and oil in. Keep mixing. Add the optional chocolate chips next (who makes that an option!) and vanilla extract, and mix again... Put your mug in the micro wave and cook for three minutes on high. The cake will rise over the top of the mug, but don't be alarmed! Allow it to cool a little, and tip out onto a plate if desired. Note : aku rasa kalau steam this cake, lagi sedap. Anyway, cake ni edible kalau makan dengan choc syrup or ice cream. selamat mencuba! :D

Red cup cakes

For the Cupcakes: 4tsbs unsalted butter, at room temperature (60gram) cup granulated sugar 1 egg 2 tablespoons unsweetened cocoa powder 3 tablespoons red food coloring teaspoon vanilla extract cup buttermilk (mix 1/2 cup of milk with 1/2 tsp of lemon or vinegar. Let stand for 5 minutes) 1 cup + 2 tablespoons all-purpose flour teaspoon salt teaspoon baking soda 1 teaspoons distilled white vinegar

For the Cream Cheese Frosting: 4 ounces butter, at room temperature 4 ounces cream cheese, at room temperature 4 ounces mascarpone cheese, at room temperature 1 cups powdered sugar 1 tablespoon vanilla extract 1. Preheat oven to 350 degrees F. Line a standard muffin/cupcake pan with liners. 2. On medium-high speed, cream the butter and sugar until light and fluffy, about 3 minutes. Turn the mixer to high and add the egg. Scrape down the bowl and beat until well incorporated. 3.Add cocoa powder, red colouring and vanilla to the batter and mix on medium speed until completely combined. You may need to stop the mixer to scrape the bottom of the bowl, making sure that all the batter gets color. 4. Reduce the mixer speed to low and slowly add half of the buttermilk. Add half of the flour and mix until combined. Scrape the bowl and repeat the process with the remaining milk and flour. Beat on high until smooth. 5. Again, reduce the mixer speed to low and add the salt, baking soda and vinegar. Turn to high and beat for another couple of minutes until completely combined and smooth. 6. Divide the batter evenly between the cupcake liners and bake for about 20 minutes, or until a thin knife or skewer inserted into the center of the largest cupcake comes out clean. 7. Cool for 10 minutes and then remove cupcakes from the pan and place them on a cooling rack to cool completely before frosting. 8. To make the frosting: Using the whisk attachment, whip the butter and cheese on high speed for about 5 minutes, scraping the bowl down as necessary. Reduce the speed to low and slowly add the powdered sugar until all is incorporated. Add the vanilla and mix to combine. Increase the speed to medium high and whip for a few minutes until the frosting is light and fluffy, scraping the bowl as necessary.
