Domaine Bouchie-Chatellier, La Renardire 2007

Appellation Variety Viticulture Vineyards Pouilly-Fum Sauvignon blanc lutte raisone reactive viticulture La Renardire references the foxes that used to live in the woods bordering the vineyards. Grapes are harvested by hand from parcels surrounding the Saint-Andelain hill, which has the highest elevation in the AOC and is known for its silex (limestone) soils. The average age of the vines are 30 years with some vines up to 65 years old. Organic fertilizers are used. There are natural management of insects and limited Bordeaux mixture treatments when necessary. Each plot is harvested separately according to the maturity of the grapes. 50 hl/ha

Yields

Winemaking Slow pneumatic pressing of grapes, grape must gravity fed into vats not by pumps, fermentation in stainless steel thermo- regulated vats for up to 3 weeks, aging on fine lees for added depth and complexity, fining, light filtration. Winemaker Arnaud Bouchie-Chatellier is a graduate of the Lyce Viticole de Beaune. He is the fourth generation of family to guide the estate. A long hot summer in 2009 produced ripe sauvignon aromas with none of the cat pee that sometimes associated with this grape, a vintage of purity and concentration with ample acidity to hold up to the higher alcohols and some residual sweetness Domaine Bouchie Chatellier is a regular Decanter World Wine Awards medal winner, and listed in the Guide Hachette, Bettane & Desseauve.
