Pytt i panna
Este Jansson debía ser relativamente fácil de tentar (en el sentido del
demonio, no en el otro) porque la receta (un clásico de la cocina sueca) es
bastante simple. Veamos :
INGREDIENTES
• 1 cebolla grandecita
• 2 zanahorias
• 400 grs. de nabos
• 1 chirivía (si no vivís en Levante, dejadlo : da casi igual)
• 5 patatas (Bintje, de preferencia) hermosas
• 1 latita de 125 grs. de anchoas en aceite de oliva
• 50 grs. de mantequilla
• 50 grs. de pan rallado
• 400 cc. de nata líquida
• 200 cc. de leche entera
MODO DE ELABORACION
Pelad la cebolla y troceadla. En una sartencita poned, a fuego muy bajo, la
mantequilla, y saltead la cebolla en ella. Pelad y trocead en daditos de 1 cm
x 1 cm x 1 cm las patatas. Reservad. Pelad y trocead (en daditos chicos) las
zanahorias, los nabos y la chirivía (si la habéis encontrado). Coced todo en
agua, cosa de 15 minutos. Escurrid luego. En una fuentecita de pyrex,
colocad los nabos, las zanahorias, la cebollita, las anchoas y las patatas (por
este orden). Verted sobre el conjunto la nata, la leche y el aceite de la lata de
anchoas (todo lo cual habréis previamente homogeneizado en un cacharrete
ad-hoc) Encima de todo, poned el pan rallado. Y sobre él, poned algunas
pellas (pequeñas) de mantequilla. Meted el conjunto en el horno (a 180 º)
cosa de 70 minutos. Los últimos diez, gratinad la parte superior.
Ingredientes (4 porciones)
PREPARACIÓN:
Limpiar y filetear las anchoas. En caso de emplear cebollas, pelarlas y
cortarlas en rodajas finas. de usarse puerro, eliminar pequeñas raíces y las
hojas verdes oscuras. Freír la cebolla o puerro en parte de la mantequilla, sin
que tome color. Pelar las patatas y rallar.
Enmantecar una fuente de horno. Colocar una camada de patata, encima la
cebolla, las anchoas y finalmente el resto de las patatas. Echar unos clicks
de mantequilla y el jugo de las anchoas.
Hornear a 200 - 225º C de 45 a 60 minutos. La nata se pone la mitad a los
10’ de horneado y el resto 10’ después.
Probar si las patatas están a punto y servir de inmediato.
Ingredientes (4 personas)
Preparación:
Pelar la cebolla y picarla finita. Saltad la cebolla en una plancha o sartén con
parte de la mantequilla, hasta que quede ligeramente torradita. Retirar la
cebolla y dorar las patatas, agregando luego los cubos de carne, que al estar
ya cocida sólo requiere calentar. Salpimentar y agregar las cebollas.
El acompañamiento clásico de esto es un par de huevos fritos por persona,
aunque leo con estupor que también puede acompañarse con remolachas en
conserva, ensalada verde o de tomate.
Algo que me extraña de todo esto es el hecho de que siendo la carne tan
costosa y deseada por los suecos, les sobre de un día para otro. Acá en el
Río de la Plata la cosa es distinta, recuerdo que cuando se hacían asados en
casa, mi padre solía ordenarlos en cantidades desmesuradas, justamente
para que se pudiera preparar este plato al día siguiente.
Mi esposa le ha introducido variantes, ya que le puede agregar chorizos,
arvejas o cualquier otra cosa que tenga a mano, además la hace al horno.
Ingredientes
Como no es plato único, no puedo indicar la cantidad de comensales, pero
esto da para unas 100 bolitas:
Para la preparación:
• 3 cucharadas de manteca
• caldo o 1 y ½ a 2 dl de nata y 2 ó 3 cucharadas de pulpa de
tomate
PREPARACIÓN:
En un bol se ponen el pan rallado con el agua. Pasar las carnes de novillo y
cerdo un par de veces por la picadora de
carne, lo más fino que se pueda. Moler la patata, con puretera o con la
misma de la carne. Amasar carnes y patatas con las yemas de huevo,
agregando de a poco el pan rallado con agua. Agregar la nata y dar sabor
con los condimentos y la cebolla.
Hay quienes le agregan un poco de azúcar o miel. Preparar una bolita para
probar, saltada en mantequilla. Si resultó demasiado seca, se le agrega un
poco de líquido (caldo, leche, crema, agua, etc.). De lo contrario, si te quedö
chirla, le agregas harina de patata o yema de huevo.- Las bolitas se forman
en - los suecos de Suecia te dicen un montón de pavadas, como ser
cucharas de madera humedecidas y no sé que mas - con las manitas bien
lavadas en forma de esferas de 1 y ½ a 2 cm de diámetro.
Luego se cuecen en mantequilla o en una mezcla de ésta y aceite, poquitas
a la vez, revolviendo la sartén o plancha para queden parejas..
Bien, ya están hechas las bolillas, en el fondo de la sartén, si no estuvimos
demasiado desprolijos, nos quedó una pasta no muy quemada. A ésta le
agregamos otro poco de mantequilla y harina y con un poco de leche, caldo
o nata, preparamos una deliciosa salsita que acompañará lo anterior.
Ensalada de Ahumados
2 35 minutos 15 minutos 6 euros
(Serves 4)
2 large onions
7 anchovy fillets (n.b Swedish anchovy)
7 large potatoes (Desirée or King Edward)
150ml/5fl oz double cream
100ml/ 3fl oz milk (3% fat)
50g/2oz butter
2 tbsp natural breadcrumbs
Method:
Peel the potatoes and slice thinly into matchstick shapes. Peel and slice the onions thinly and soften in butter in a frying pan, until golden
brown. Butter an oven-proof dish. Layer the sliced potatoes and anchovy fillets. Start and finish with the sliced potatoes. Pour over some
of the anchovy brine and cover with the cream/milk liquid. Bake in a 200°C/400°F for approx 30 min. Sprinkle with breadcrumbs and
shave some butter on top of the dish. Cook for another 20 min, until the potatoes are tender and the surface is nicely browned.
Midsummer Plate
Crisp bread
1. Cut the matjes fillets into smaller pieces (1/2 cm), put them on each plate, add a dollop of sour cream and garnish with chopped
chives. Arrange each mustard flavoured fillet into a roll and put onto each plate. Add the traditionally pickled herring with some of the
onions and carrots, which are also pickled (but not the marinade) onto each plate.
2. Add the sherry flavoured herring with some of the marinade onto the plates.
3. Serve with butter, crisp bread and the matured cheese and some boiled new potatoes.
(Serves 10)
Make sure that the salmon fillets have been frozen for at least 24 hours before marinating if you are buying fresh salmon fillets. Thaw the
salmon fillets in the fridge. Remove scales and dry the fillets, but do not rinse them. Remove any bones with pliers.
Rub in dill, sugar, salt and pepper on the fillets and leave fillets, meat side on meat side, on a large dish in room temperature, until the
sugar and salt have dissolved.
Put the plate with the fillets in the fridge and leave for 48 hours to marinate. Turn the fillets over from time to time.
1. Peel and slice potatoes and onion thinly. Melt the butter and add to the potato- and onion mix.
2. Spread the mix into four small rounds and flatten them. Fry on a high temperature until the edges are golden brown. Turn the rounds
over and fry until golden brown. Leave them to rest on a plate.
3. Drain the matjes herring and put the fillets on to the fried potato rounds, add a dollop of sour cream and sprinkle some finely chopped
chives on top.
Meatballs with Lingon chutney and vegetables
Serves 4

Shape into small meatballs and fry in frying pan. Allow to cool
1. Grate the peel of the orange and squeeze out the juice. Boil the orange juice together with half
the amount of lingon berries, all the honey and vinegar. Finely chop the chilli and grate the root
ginger. Add the cinnamon and bring to the boil. Allow the chutney to cool and add the rest of the
lingon berries.
Alternatively:
Mix the freshly stirred lingon berries with the red wine vinegar. Add ground ginger, cinnamon and
the finely chopped chilli and stir.
Method:
Preheat the oven to 275°C/525°F. Remove rind from the ham and place the
ham in a roasting tin. Mix all the ingredients together, apart from the butter,
and spread the crust mixture over the ham so it is completely covered. Add
dollops of butter and cook in the oven for 5-10 min. until golden brown.
Tip: Make the mustard mixture a couple of hours before spreading on the ham to allow the mixture to
thicken.
(Serves 4)
Peel and boil the potatoes, pour off the water and dry the potatoes thoroughly. Mash the potatoes and
add flour, egg and salt. Mix into a dough.
Chop half of a red onion and fry in a frying pan together with the finely cut bacon, add the crushed
allspice and the finely chopped parsley.
Clean and trim the reindeer fillet and brown the meat in an oven dish. Insert a meat thermometer with
its point in the centre of the meat and roast in a 80° C/180° F oven until the inner temperature reaches
58° C/136° F. Allow the meat to rest before carving.
Roll out the potato dough and shape into a sausage. Cut in 12 pieces and make a hollow in the middle
of each. Place the bacon mix equally into each piece of dough. Close up around the filling and shape
into balls.
Bring lightly salted water to the boil, and cook the potato dumplings for 5-8 minutes, and pick them up
when they rise to the surface.
Mix the lingonberry preserve with the soaked chilli pepper, lemon juice and clear honey.
Serve the carved meat with the potato dumplings and some melted butter and the sliced fried onions.
Roast Elk, apples filled with rowanjelly, chanterelle sauce and Hasselback
potatoes
(Serves 4)
Method:
Rub the meat with the crushed juniper berries, salt and black pepper. Insert a meat thermometer and
roast in a 175° C/350° F oven until the centre of the meat has reached 60°C/140°F. Take out the meat
and let it rest for a while.
Peel the potatoes. Slice thinly without cutting right through. They should stick together in the bottom.
(Tip! Put the potato in wooden spoon when slicing) Sprinkle with the breadcrumbs and dot the butter
over the potatoes. Cook in a 225°C/435°F for approx. 40 minutes.
Fry the chanterelles in some butter together with the chopped shallots. Sprinkle the flour over the
mixture, pour over the cream and the meat juice/bouillon. Boil and simmer for a couple of minutes.
Season with salt and pepper.
Quarter the apples and remove pips and stalks. Sautée the apples in some butter and put dots of
rowan jelly over them.
Serves 4
600 g Swedish Hash (8-10 medium sized potatoes, 1 onion, approx 150g cooked beef, finely diced)
90 g Sliced pickled beet root
4 Salted gherkins
20 g Butter
Grated horse radish
Method:
Fry the hash in a frying pan or in the oven with some butter. Divide onto four plates. Slice the gherkins
length wise and put on plates, add the sliced beet root. Sprinkle some grated horse radish on top.
