GLOBAL FOOD HABITS Substantial change in food habit has been noted world wide. Between 2002 and 2008, the consumption of bread and cereals have fallen while countered by a rise in fruit and vegetable consumption. Some of the prime reasons of the shift are:
Rapid urbanisation in developing economies and increasing health consciousness. Growth of processing industry and availability of value added products. Improved technology and higher shelf life of perishable products such as fruits & vegetables. Improved out reach and accessibility to raw as well as processed products triggered by organised retailing.

Higher per capita availability due to higher productivity and yield of crops.

Indian Exports
Current Horticulture exports from India amounts to over US$

1.5 Bn
Indias processed food exports constituted 1.5 per cent of the global food trade in 200809. Estimated surplus to the tune of approx 3-4 million tons of fruits and 7-8 million tons of vegetables at the end of 2012. This shows there is an ample scope of accelerating the exports of fruits and vegetables.
Cereals; 3,122 Animal products; 1,565

Processed fruits & vegetables; Floriculture; 96 Fresh fruits & 678 vegetables; 982

Other processed food; 1,128

With technology improvement programmes, there is also a high potential of increasing Indias market share in global exports due to the existing price competitiveness. Value Added Products will play a vital role in enhancing the exports of perishable commodities in the world market.

Middle East and Asia are the biggest markets of Indian Agri-exports.
North America; 450 Oceania; 60

Others; 85

Africa; 350

EU and the American market is relatively less penetrated. Organic Products are of high demand in these markets and may be leveraged on for higher exports.
European Union; 594 Asia; 961

Middle East; 3,592

Controlled Atmosphere and Modified Atmosphere storage technologies may be adopted for sea shipment of variety of items. Countries like Brazil, Mexico, Venezuela, Peru, South Africa have leveraged over this technology heavily for increasing shelf life, thereby making .sea shipment efficient with reduced wastage. Viability and profitability is more on supply of exotic and off-season products. There are opportunities for cost effective, innovative and unique items. Germany, Spain, and Italy are saturated markets. Only certain market niches and product groups provide opportunity for growth. UK and France have relatively large scope of importing the most exotic items. Organic and fair-trade markets provide quickly growing niches although certification procedures might be complicated and costly.
