RETURNS MADE EASY By Tresa Erickson No one sets out to buy a Christmas gift that must be returned, but it's inevitable. Something you purchase could very well turn out to be the wrong size or color or be defective in some other way and need to be returned. It is important you prepare for the possibility when shopping and follow these tips. Check out the return policy before you buy. Merchants are not legally obligated to return or exchange an item unless it is defective or was misrepresented. Most, however, will. Make sure that sales are not final and get the dates returns are allowed. While you're at it, find out whether a store credit or refund will be issued and how much it will be. Return policies often vary among regularpriced, sale and clearance items. Keep all receipts. Some stores will not accept returns without a receipt, while others will, but for the latest markdown price rather than the actual price paid for it. Worried that the recipient will see what you paid for the gift? Ask for a gift receipt-the price won't be listed-and tuck it inside the gift. That way, the recipient will have the receipt if needed. Leave items be. Do not clip price tags, open boxes or throw away packaging materials. This could make the items difficult, if not impossible, to return. Wrap up the gifts as packaged, and again, tuck the receipts inside. These are just three tips for making returns as hassle free as possible on recipients. If shopping online, you will have a whole new set of terms to deal with. Make sure you follow the tips above and find out if items can be returned to an actual store nearby or will have to shipped back and for what fee. Not every online retailer offers free shipping on returns.

In 1818, "Silent Night" was written by Austrian priest Joseph Mohr. Legend has it that his church's organ broke on the day before Christmas. Mohr could not imagine Christmas without music, so he sat down to write a carol that could be sung by a choir to guitar music. Later that night, the people in the little Austrian church sang "Stille Nacht" for the first time. In 1834, Queen Victoria's husband, Prince Albert, brought the first Christmas tree to Windsor Castle for the Royal family. In 1836, Alabama became the first state to declare Christmas a legal holiday. The first commercial Christmas card, produced in 1846, featured a drawing of family members happily toasting each other with glasses of wine -- a shockingly decadent portrait that was immediately condemned by temperance advocates. In 1856, President Franklin Pierce decorates the first White House Christmas tree. In 1907, Oklahoma became the last state to declare Christmas a legal holiday. In 1937, the first postage stamp to commemorate Christmas was issued in Austria. In 1945, a phonograph album containing Bing Crosby's signature song, "White Christmas," is released. The recording would go on to become the best-selling single ever, with sales of more than 50 million copies worldwide.

GOOD HOUSEKEEPING ONE Seafood Salad Cucumber Cups Nestle sweet shrimp and crabmeat salad in a refreshing cucumber shell and top with tart, jewel-like pomegranate seeds for an elegant holiday appetizer. 6 sprigs fresh dill 2 lemons 2 teaspoons Dijon mustard 1 pinch cayenne (ground red) pepper Salt 3 tablespoons extra-virgin olive oil 8 ounces 16- to 20-count shrimp, shelled and deveined 2 large (1 pound each) seedless (English) cucumbers 8 ounces refrigerated lump crabmeat, picked over 2 tablespoons snipped chives 1/4 cup pomegranate seeds 1. Separate dill leaves from stems; reserve separately. From lemons, finely grate 1/2 teaspoon peel and squeeze 1/4 cup juice into large bowl. Reserve rinds. 2. To peel and juice, whisk in mustard, cayenne and 1/2 teaspoon salt. Whisk in oil in slow, steady stream, until blended. Dressing can be refrigerated up to 3 days. 3. In 4-quart saucepan, combine dill stems, lemon rinds and 8 cups water. Heat to boiling. Reduce heat to maintain gentle simmer. Add shrimp; cook 3 minutes or until just opaque, stirring. Drain. Rinse under cold water until cold; drain. Discard dill and lemon. Coarsely chop shrimp. Shrimp can be refrigerated overnight. 4. Trim cucumbers; cut into 1/2inch-thick slices. With melon baller, scoop out centers of slices without cutting through bottoms. 5. Finely chop 1 tablespoon dill leaves. Gently fold into dressing along with shrimp, crabmeat and chives. 6. Fill each cucumber cup with 1 tablespoon salad mixture. Garnish with pomegranate and dill. Makes about 36 pieces; serves 12. Each serving: About 75 calories, 4g total fat (1g saturated), 42mg cholesterol, 300mg sodium, 3g carbohydrate, 1g dietary fiber, 7g protein.

In 320 AD, Pope Julius I and other religious leaders specified Dec. 25 as the official date of the birth of Jesus Christ. In the 13th century, St. Francis of Assisi introduced Christmas carols to formal church services. In 1531, in Germany, the first printed reference to Christmas trees appeared. The Christmas tree was first decorated with lights in the 16th century. It is believed that Martin Luther, the Protestant reformer, was so taken with the Christmas night sky that he added lighted candles to the tree to bring "the lights of the stars" into the home of his family. A goose was customary Christmas fare until the early 1600s, when King Henry VIII of England took it upon himself to tuck into a turkey. In 1643, the British Parliament officially abolished the celebration of Christmas. The first American Christmas carol was written in 1649 by a minister named John de Brebeur. It is called "Jesus Is Born." Between 1649 and 1660, Oliver Cromwell banned Christmas carols in England. Cromwell thought Christmas should be a very solemn day, so the only celebration allowed was a sermon and prayer service. Making the Most of That Champagne Toast A long-standing disagreement about the best way to pour a glass of champagne for that New Year's toast finally has been settled. Scientists in France are reporting that pouring bubbly in an angled, down-the-side way is best for preserving champagne's taste and fizz. The study, which appears in the American Chemical Society's Journal of Agricultural and Food Chemistry, also reports the first scientific evidence confirming the importance of chilling champagne before serving to enhance its taste. Gerard Liger-Belair and colleagues note that tiny bubbles are the essence of fine champagnes and sparkling wines. Past studies indicate that the bubbles -- formed during the release of large amounts of dissolved carbon dioxide gas -- help transfer the taste, aroma and mouth-feel of champagne. Scientists long have suspected that the act of pouring a glass of bubbly could have a big impact on gas levels in champagne and its quality. Until now, however, no scientific study had been done. The scientists studied carbon dioxide loss in champagne using two different pouring methods. One involved pouring champagne straight down the middle of a glass. The other involved pouring champagne down the side of an angled glass. They found that pouring champagne down the side preserved up to twice as much carbon dioxide in champagne than pouring down the middle -probably because the angled method was gentler. They also showed that cooler champagne temperatures (ideally, 39 degrees Fahrenheit) help reduce carbon dioxide loss.

HEARTY CONFETTI BEAN SOUP MIX 1 pound dry black beans 1 pound dry Great Northern beans 1 pound dry red kidney beans 1 pound dry pinto beans 1 pound dry green split peas 4 (1 quart) jars with lids or re-sealable plastic bags 1. In large bowl, mix beans. Spoon this mix into four 4-cup containers (1-quart jars or plastic zipper bags), placing about 3 rounded cups into each container. 2. Prepare seasoning bags. 4 (6-inch) squares plastic wrap or 4 re-sealable sandwich bags 12 beef bouillon cubes 3/4 cup dried chopped chives 4 teaspoons dried savory 2 teaspoons ground cumin 2 teaspoons freshly ground black pepper 8 bay leaves 1. On each square of plastic wrap or in each sandwich bag, place 3 beefflavor bouillon cubes, 3 tablespoons dried chopped chives, 1 teaspoon dried savory, 1/2 teaspoon ground cumin, 1/2 ground black pepper and 1 bay leaf. Gather plastic wrap up to form a pouch, and tie with string or ribbon or seal plastic bag. 2. Place one seasoning bag in each container of bean mix. Provide the following recipe to gift recipients. Prepare the Hearty Confetti Bean Soup at least three hours before serving to allow the flavors to combine: 1. Rinse beans from one container of Hearty Confetti Bean Soup mix with cold water and discard any stones, debris or shriveled beans. In 5quart Dutch oven over high heat, heat beans and 9 cups water to boiling and for cook 3 minutes. Remove from heat. Cover and let stand 1 hour. Drain and rinse beans. 2. Return beans to Dutch oven. Add contents of seasoning bag from mix and 5 cups water. Over high heat, heat to boiling. Reduce heat to low. 3. Cover and simmer 90 minutes or until beans are tender, stirring occasionally. Add 16 ounces stewed tomatoes with its liquid. Over high heat, heat to boiling. Reduce heat to low. Cook uncovered 15 minutes longer, stirring to break up tomatoes. 4. Alternately to use a slow cooker, follow steps 1 and 2. Then, place beans and 16 ounces of stewed tomatoes in a slow cooker. Cook on high for 4 to 6 hours, or until beans are tender. Stir the beans and discard bay leaf before serving. Makes 8 to 12 servings. Holiday meals always seem to ramp up peoples focus on dining etiquette and table manners, said Pat Pesci, director of the hotel and restaurant management program at Kansas State University. Typically, Americans dont sit down and dine together, Pesci said. People just dont break bread anymore; they multitask. Then at this time of the year, you have all these holidays and the large family meals that go with them. The holiday meal can bring a lot of stressors into one event: family members who dont see each other that often; different age groups; different opinions; uncommon and varied cuisine; and fancier tableware. Pesci said it is important to ask your host if you can assist in any way, and also to ask, rather than assume, where you will be sitting.

Holiday meals often last an hour or more, Pesci said. And while you should eat slowly, it doesnt take that long to consume food. Because so often we eat in front of the television, many people arent used to carrying on lengthy conversations while eating. Remembering not to talk with your mouth full is one thing. Knowing what to talk about is quite another. Pesci said it is best to avoid topics that might make people uncomfortable, such as politics, religion, sex and controversy. Great conversation starters are more neutral, like sports, weather, professions, travel, movies and where people are from. It is important to get everyone involved, said Pesci. We often miss out on talking and listening to people and finding out about them. Holiday meals are a great time for that. When the meal is finished, its polite to place your napkin to the left of your plate and push your chair in when leaving the table. Finally, one of the most important tips is to never correct someones etiquette at the table. Correcting someone elses manners in a public setting is rude. Thats one of the No. 1 rules, Pesci said.

DONNA'S DAY: CREATIVE FAMILY FUN By Donna Erickson "Cool" Candles Add Warm Glow Let's make fire with ice! Impossible, you say? Well, it just depends on how you look at it. Follow my easy process for creating these super "cool" candles that add a warm glow to any evening. To make several medium-size candles, you'll need: --1-pound box of paraffin wax (available in the canning section at most markets) --1 saucepan and a tin can, such as a coffee can --Candle coloring (optional) --Ice cubes crushed into medium-size chunks. Your kids may fill a gallon plastic bag about three-quarters full with ice. Secure the top. Let them use a hammer to break the ice into small chunks. --Empty and clean pint- or quart-size cardboard milk cartons with the tops cut off --A white or colored taper candle for each ice candle, 1 inch shorter than the cut carton. Trim the candle from the bottom, if necessary. An adult should fill the bottom of the saucepan with a few inches of water and place the tin can in the center. Put a chunk of paraffin inside the can along with extra candle stubs you might have around the house. Add coloring if you wish. Stir occasionally as the wax melts, keeping a constant eye on it since it is flammable. For a wick, your school-age child can place a taper candle in the middle of a milk carton and pack the ice around it. When the wax is melted, an adult should use a potholder to lift the can out of the saucepan and pour the melted wax directly into the milk carton over the ice and around the taper candle. As the wax melts the ice, you'll hear cracking and popping! Once the wax is hard, drain off the water a time or two. Peel the carton away from the candle and enjoy the surprise of your work of art! The ice will have formed interesting pockets, like a chunk of Swiss cheese. To use, set it on a plate and surround it with marbles. When you light the candle, give your preschooler the job of saying "Ta-da!" as you stand around proudly watching the creation flicker on a winter's night. Gluten-Free Almond Sacher Torte Yield: 1 single or split double layer 10-inch frosted cake 6 large eggs, separated 1/2 cup white sugar 1 stick (1/2 cup) butter, sweet unsalted 1 tablespoon almond extract 1 cup confectionary sugar 6 ounces bittersweet chocolate, melted 3 tablespoons cocoa powder 1 teaspoon baking powder 1 teaspoon xantham gum 1/2 cup potato starch 1/2 cup almond flour /4 teaspoon sea salt 2 cups sliced toasted almonds Ganache Frosting: 1 cup heavy cream 12 ounces 60 percent chocolate 2 tablespoons agave nectar Whip egg whites to soft peaks, add in white sugar and continue to whip into a firm meringue then set aside. Cream butter, almond extract and confectionery sugar until the mixture is light in color and smooth. Add melted chocolate to butter mixture until fully incorporated and then add egg yolks one at a time. Fold butter-chocolate mixture into the meringue. Once mixed, sift together dry ingredients and slowly add to wet ingredients until mixture is completely blended. Bake for 30 to 35 minutes at 350 F in a 10-inch spring form pan that has been lightly coated with butter and dusted with almond flour. Ganache Frosting: Bring heavy cream to a boil on the stove, then pour over the chocolate and agave nectar in a large mixing bowl and mix with a whisk until smooth. Allow ganache to set up overnight before use. When ready, spread ganache over top and then sides of cake in a thick layer. Garnish sides of cake with toasted almonds. Chef Tip: Lightly brush cake with your favorite liquor before icing. This allows the cake to stay moist longer, and adds a little extra flavor. #10937_AR Source: Almond Board of California

By Tresa Erickson When it comes to the wedding cake, couples have many options. Some may skip the cake entirely and go with a dessert bar instead. Some may order one small wedding cake and several sheet cakes to serve to their guests. Some may forgo the main cake and serve smaller cakes in various flavors at the reception tables. Whatever your personal preferences, make certain you discuss the matter in great detail with your fianc, and should you decide to go with a wedding cake, keep the following trends in mind. The wedding cakes of today hardly resemble those of yesterday. Gone for the most part are the rich, three-tiered, heavily decorated cakes and in their place is a wide range of cakes customized specifically for the bride and groom. When selecting a wedding cake, couples often look to the location, theme and season of their celebration as a guide. A simple affair on the beach in the middle of summer might not call for the same type of cake as a formal evening affair in the winter. The actual design of the cake is up for grabs.

How Sweet It Is

Some couples may opt for the traditional three layers, while others may go for fewer or additional layers. Tiers can be of the same or different heights with the same or alternating designs. Some couples may request the design of their wedding cake incorporate the traditional flowers, either made of silk or frosting, while others may choose dots or scrollwork. Although once popular, basket weaves and swags appear to be on their way out, as do plastic columns and foil boards. Common cake flavors include carrot, chocolate, lemon, spice and vanilla, with many couples requesting each layer of their cake to be a different flavor. Some couples go an alternative route and choose unusual flavors like espresso, hazelnut and gingerbread. Frosting may be buttercream or fondant, though many couples today seem to favor the former. As for the top of the cake, couples no longer have to stick to the traditional bride-andgroom cake toppers. They can go with flowers, sculptures or monograms. Monogrammed letters in silver or tin make for stylish cake toppers. For those that prefer bride-

and-groom toppers, theyll be glad to know that the traditional toppers have made a comeback and can be customized. Many companies now make toppers that match the actual bride and groom in hair color, skin color, age and more. These are just some of the hottest trends in wedding cake design. Whatever type of cake you choose, make sure it is flavorful and presented well. It should serve as a focal point at your reception, so place it in a prominent position and decorate the area around it.

Remind the couple to register for gifts in the low-to-middle price range. An engagement party is not the occasion to ask for large, expensive gifts. Wrap up your party planning by designating some helpers. If you are having the party at your home, make sure you have someone to greet guests at the door. Assign a couple of volunteers to help with the food and another to serve as photographer for the day. If parking is going to be an issue, find a couple of buddies who are willing to be valets. He won five of the final 10 races, the most ever since the Chase was implemented in 2004, and yet still won only by tie-breaker over Carl Edwards, who had the same number (2,403) of points. Edwards has finished second or third three times now and has the best average finish, 4.9, of any driver in Chase history. So who is the favorite for 2012? It's obvious, even though it's neither Stewart nor Edwards. The favorite is the driver who won championships in 2006, 2007, 2008, 2009 and 2010: Jimmie Johnson. Johnson finished sixth, 99 points behind Stewart and Edwards. It wasn't a championship season, but it wasn't bad, at least not by any standards other than those established by Johnson and his Hendrick Motorsports crew chief, Chad Knaus.

"Highly motivated" was the way Johnson referred to himself at the Sprint Cup Awards Ceremonies in Las Vegas. "Motivation comes easy for all of us," he said. "I know that question is asked a lot, but we just want to race, and if we're going to spend all the time to do all this, we want to be racing for the championship." Johnson won five straight championships. Only Richard Petty and Dale Earnhardt have ever won more than five total. Can Johnson win eight and break the record? "I want to believe in it," he said. "How long I can race into my career? I think there is a chance, I don't know how realistic that chance is, but I want to believe in it and think that I can." Johnson paid tribute to Stewart, who became the first driver-owner to win a championship since Alan Kulwicki in 1992. "I didn't think it was possible," Johnson said. "I don't think any of us felt that we would see it take place again or even get close to it. ... A LITTLE PEACE OF MIND GOES A LONG WAY FOR CAREGIVERS ADULT SOCIAL RESPITE PROGRAM SEARCHING FOR COMMUNITY VOLUNTEERS Please join the upcoming A Little Peace of Mind Volunteer Training, scheduled for Saturday, January 14, 2012, from 9:00a.m.-3:00p.m. in Belmont, New York. This free course is offered through the Alzheimers Association of Western New York and the Allegany County Caregiver Coalition. Participants will gain the knowledge and skills necessary for assisting at either the monthly adult social respite program and/or providing in-home respite care for Allegany County families. Workshop topics include Memory Loss, Dementia and Alzheimers disease Basics, Communication Techniques, and Managing Challenging Behaviors. Attendees will also learn about A Little Peace of Mind and their roles and responsibilities as a volunteer. According to the Alzheimers Association of Western New York, if you dont know what respite is, youre not alone. By definition, respite is a period of rest or relief. But respite care is a lot more than just rest or relief when it comes to Alzheimers disease and other dementias. It provides a break from the typical care routine allowing caregivers some down time while the person with dementia continues to receive care from qualified individuals while having the opportunity to have special experiences. With support from the Allegany County United Way, the Allegany County Caregiver Coalition, Allegany County Office for the Aging and the Allegany/Western Steuben Rural Health Network, have teamed up to help bring this much needed service to Allegany County. Many caregivers work or have other responsibilities in addition to providing care. Respite care can give a caregiver the time and assistance required to meet these personal needs. Respite care can provide the caregiver with a chance to spend time with other friends and family, conduct errands or to just relax. The Allegany County Caregiver Coalition understands the need for volunteer respite services for families caring for a loved-one with Alzheimers disease or other dementias, explains Helen Evans, Associate Director with the Allegany/ Western Steuben Rural Health Network, Inc. Caring for someone with Alzheimers disease or other chronic health conditions can be stressful. Yet, leaving a lovedone in the care of another can also cause someone to worry about their family members safety and well-being, continued Evans. A Little Peace of Mind provides a safe, low-cost strategy for respite care. We are reaching out to potential volunteers who are passionate about improving the quality of life for residents living with Alzheimers disease or a chronic illness that may cause dementia-related symptoms, states Evans. Currently, six community members dedicate four hours a month to help make A Little Peace of Mind a reality for families in need. Additional volunteers are needed due to the increased demand of in-home and social respite care services. Respecting Choices Advance Care Planning Facilitators are better equipped to help clients, patients, families, and co-workers openly discuss end-of-life health care decisions. Those interested in attending may include attorneys, medical providers, long-term care facility personnel, faith leaders and/or others who frequently assist families with end-of-life health care decisions. Respecting Choices focuses on the process of advance care planning resulting in informed healthcare decisions. Because of this comprehensive approach, Respecting Choices promotes patients rights and eliminates confusion for families, including: Providing comfort and dignity during end-of-life care; Ensures the patients participation in decisions regarding care, treatment, or services before and at the end of life; A complete patient record reflecting the patients care, treatment, or service. The training consists of six on-line training modules, plus a one-day classroom session taught by Ms. Sally Dougherty, Certified Respecting Choices Train-the-Trainer through Gunderson Lutheran Medical Foundation. The on-line modules include skills at initiating conversations, engaging people in the ACP process, clarifying information, exploring individual goals and values, selecting a health care agent and making referrals. It teaches skills that assist individuals in creating written plans that represent their preferences and can be communicated to others. The one-day classroom training prepares participants by enhancing their advance care planning facilitation skills when assisting patients with progressive illnesses and developing strategies to implement an effective advance care planning program. Participants who complete both the on-line modules and the one-day in class session will be certified by Gundersen Lutheran Medical Foundation as Respecting Choices Advance Care Planning Facilitators. f

DONNA'S DAY: CREATIVE FAMILY FUN By Donna Erickson Home-Cleaning Tips for the Holidays "It's dirty work, but someone has to do it!" That has been my catchy refrain the past few months while partnering with Scrubbing Bubbles to reveal its fascinating Dirty Work Index data on women's attitudes and feelings on cleaning their homes. Did you know that 51 percent of women actually avoid going into someone else's bathroom? I also was surprised to learn that three out of four women say that the cleanliness of their homes speaks volumes about them personally, and 83 percent are prompted to clean if they're hosting a party or guests in their home. That can put a lot of pressure on one person, especially this time of year! Now that we're in the hustle and bustle of the holiday season, with guests coming and going in our homes, here are some practical and easy cleaning strategies for busy families: 1. Start with the front door. To keep dirt and grime out of the house before it gets tracked in, remind kids to leave their boots, shoes, and wet and muddy winter gear at the entryway. When guests pop by, I like to add a bit of humor and suggest that they do the "Cha, Cha, Cha" on the entry mat when they arrive. After a few steps, wiggles and laughs, their shoes are clean before they step inside. 2. Think of cleaning as exercise. It can be hard to get everything you want done during these busy days, so make cleaning do double duty when you can't squeeze in time at the gym. An active 30 minutes of cleaning can get the blood pumping and heart racing. Add music to the mix, and it will be done before you know it. 3. Get kids to help. You don't have to do all the tasks alone, especially kid-friendly jobs like shaking rugs, taking out the trash and cleaning the bathroom mirrors. 4. Clear the clutter. Just before guests arrive at a dinner party, wash and put away mixing bowls and utensils, and be sure the counters are sparkling clean. A clutter-free kitchen makes you feel organized and relaxed. 5. Save the night with candlelight. Perfection isn't everything. If you throw a last-minute get-together, don't worry about dusting every corner. Simply dim lamps and light candles. There is something about candlelight that makes everything glow. 6. Holiday helpers ring in the new year. When packing holiday decorations in boxes until next year, make it a family affair.
