Crockpot Vegetable Beef Soup White Bread
Brown the meat in butter and add to crock-pot. Add all other ingredients. Cook on low for 8 hours. Alternatively, you may cook the soup in a large pot on the stove over low heat for 2 to 3 hours.
White Bread
2 pkg. yeast 2 C lukewarm water C dry milk powder 2 Tbsp sugar 1 Tbsp salt 1/3 C oil 7-7 C sifted flour Nonstick cooking spray
Sprinkle yeast on water in a mixing bowl and stir to dissolve. Add dry milk, sugar, salt, oil and 3 cups of flour. Beat with an electric mixer on medium speed about 3 minutes until batter is smooth. Gradually add enough remaining flour to make a soft dough that leaves the sides of the bowl. Cover and let rest for 15 minutes. Knead on a floured surface until smooth and satiny, about 5 minutes. Divide dough in half. Shape each half into a loaf and place in 2 greased 9 inch loaf pans. Let rise until doubled, about 1-1 hours. Bake at 400 degrees for 30 minutes or until loaves are brown on top and sound hollow when tapped, Remove from pans and cool on a rack.

In a large skillet cook ground beef, pepper, onion and garlic until cooked through. Add chili seasoning and mix well. Add filling to tortilla, garnish with cheese and roll up to serve.

Wednesday:
Crunchy Baked Fish Homemade Potato Wedges Coleslaw
Combine flour, seasoning salt and cheese on a plate. Beat eggs and water in a shallow bowl. Place corn flakes on a plate. Line all the dishes up on the counter for an easy dipping assembly line. Dip fish in the flour mix then dip in the egg mix and finally coat with corn flakes. Place fish on a baking tray that has been sprayed with nonstick cooking spray. Bake at 400 degrees for 20-30 minutes or until it flakes easily.
Heat oven to 450 degrees. Place oil in a 9 x 13 inch baking dish and swirl around to coat the bottom. Cut potatoes into wedges. Place in a resealable plastic bag with the spices and shake to coat. Arrange potatoes skin side down in dish. Bake for 45 minutes or until cooked through.
Coleslaw
1 bag prepared coleslaw mix 1/2 C mayonnaise 1 Tbsp. red wine vinegar 1 Tbsp sugar Celery seeds to taste if desired
Combine last 3 or 4 ingredients and refrigerate covered until ready to use. Mix with shredded slaw just before serving.
